Caribbean Crabmeat Salad With Creamy Gingered Dressing image

This is so delicious and easy to make. Makes a lovely presentation with avocado slices, purple onion rings & mango slices and some nciely fresh baked bread or biscuits. Have served this for a nice luncheon-party & it was received with ooohs & aaahs. It was originally posted in Southern Living, November 1997.

1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon garlic granules
1 tablespoon dry white wine
1 teaspoon ground ginger
1/4 teaspoon salt
1 pinch sugar
1 lb fresh lump crabmeat
4 plum tomatoes, diced
1 cup seedless cucumber, diced
1/2 teaspoon Old Bay Seasoning
1/4 teaspoon white pepper
gourmet mixed greens
avocado, thinly sliced
purple onion rings, thinly sliced
mangoes or kiwi, sliced

Steps:

  • Whisk together all dressing ingredients, and chill.
  • Combine crabmeat and next 4 ingredients in a large bowl.
  • Toss with mayonnaise dressing mixture.
  • Serve with greens on serving platter.
  • Garnish, if desired.

1 pound jumbo lump crabmeat, picked over to remove any shell or cartilage
1 stalk celery, peeled, and cut into 1/8-inch dice
4 teaspoons finely sliced fresh chives
1 teaspoon minced fresh tarragon leaves
1/3 cup prepared mayonnaise
3 tablespoons sour cream
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground pepper
Serving suggestions: Toasted hot dog rolls or Boston or Bibb lettuce leaves

Steps:

  • In a medium bowl, lightly toss the crabmeat, celery, chives, and tarragon together.
  • In a small bowl, stir together the mayonnaise, sour cream, lemon juice, and mustard. Add the dressing to the crabmeat mixture and stir until just coated. Season with salt and pepper to taste. If not using right away refrigerate until ready to serve.
  • Serve on toasted rolls or on a bed of lettuce.

I tried for years to duplicate the crab salad that was made in the seafood market i used to work for, but never could. However, I came up with this one and prefer it a whole lot more. My daughter will hide with the batch I make and eat it all. She doesn't like to share. Serve with club-style crackers.

1 pound imitation crabmeat, flaked
½ cup finely chopped celery, or more to taste
½ cup reduced-fat ranch dressing (such as Hidden Valley Ranch® LIght)
⅓ cup mayonnaise (such as Hellmann's®/Best Foods®)
1 tablespoon white sugar
1 teaspoon minced fresh parsley

Steps:

  • Gently mix flaked imitation crab, celery, ranch dressing, mayonnaise, sugar, and parsley in a salad bowl until thoroughly combined. Refrigerate overnight, stirring occasionally. Stir again just before serving.

When we were in Jamaica several years ago we had this wonderful salad. The lady who prepared it for us was gracious enough to share the recipe. She said just don't substitute any of the ingredients or the results would not be the same. I make it just like she shared and have never been disappointed.

1 lb fresh lump crabmeat
1 medium onion, finely chopped
2 celery stalks, finely chopped
1/2 green bell pepper, finely chopped
4 oz canola oil
3 oz apple cider vinegar
4 oz ice water
kosher salt to taste
freshly ground white pepper to taste

Steps:

  • 1. Combine onion, celery and bell pepper. Spread 1/2 of this mixture over the bottom of a large mixing bowl.
  • 2. Separate crabmeat lumps and place on top of the vegetable mixture in bowl and then spread the rest of vegetable mixture on top of crabmeat.
  • 3. Salt and pepper to taste. Pour oil over top, then the vinegar and lastly the ice water.
  • 4. Cover and place in refrigerator to marinate from 2-4 hours.
  • 5. When ready to serve toss lightly; but do not STIR. Serve on a lettuce leaf for a great salad or on crackers for an appetizer.

Steps:

3 cups uncooked rotelle pasta (8 ounces)
1 teaspoon grated lime peel
3 tablespoons lime juice
2 tablespoons canola or soybean oil
1 tablespoon honey
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 package (8 ounces) refrigerated flake-style imitation crabmeat
1 medium red bell pepper, cut into thin bite-size strips
1 medium mango, peeled, seeded and cubed (about 1 cup)
1/2 to 1 jalapeño chili, seeded and finely chopped
2 tablespoons chopped fresh cilantro

Steps:

  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • Meanwhile, in small bowl, mix together lime peel, lime juice, oil, honey, cumin, ginger and salt. Set aside.
  • Gently toss pasta and remaining ingredients in large bowl. Pour dressing over salad; toss gently to coat. Cover and refrigerate at least 1 hour to blend flavors.
  • Mix all ingredients in small bowl until well blended.

1 medium red bell pepper, sliced into thin strips
1 mango, peeled,seeded,and cubed
1 jalapeno pepper, seeded,and finely chopped
2 tablespoons chopped fresh cilantro
1 teaspoon lime zest
3 tablespoons fresh lime juice
2 tablespoons olive oil
1 tablespoon honey
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
salt

Steps:

  • To make honey lime dressing: add all dressing ingredients to a small bowl; stir to mix well; set aside.
  • Cook pasta according to the package directions; rinse and drain.
  • In a mixing bowl, add cooked pasta, crabmeat, bell pepper, mango, jalapeno pepper, and cilantro; stir to mix.
  • Pour dressing over pasta salad and gently toss to coat.
  • Season with salt and pepper to taste if needed; cover and chill 2 hours before serving.
