Use pantry and spice shelf staples to make these Jerk Chicken Skewers. If you have brown sugar, cinnamon, soy sauce and thyme you probably have most of what you need to make these delicious Caribbean-inspired Jerk Chicken Skewers.

1 env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix
2 Tbsp. brown sugar
2 Tbsp. oil
2 Tbsp. soy sauce
1 tsp. ground cinnamon
1 tsp. ground thyme
1/2 tsp. ground red pepper (cayenne)
1-1/2 lb. boneless skinless chicken breasts, cut into 1-1/2 inch pieces
3 red bell peppers, cut into 1-1/2 inch pieces
1 fresh pineapple, cut into 1-1/2-inch chunks

Steps:

  • Mix first 7 ingredients until well blended; pour over chicken in large bowl. Stir to evenly coat chicken. Refrigerate 30 min. to marinate.
  • Heat grill to medium-high heat. Remove chicken from marinade; discard marinade. Thread chicken onto 12 skewers alternately with bell peppers and pineapple.
  • Grill 15 min. or until chicken is done, turning frequently.

1 3/4 pounds boneless skinless chicken breast halves, cut into 1 1/2-inch pieces
1/4 cup vegetable oil
3 tablespoons Caribbean jerk seasoning (dry)
1 small pineapple, rind removed and pineapple cut into 1-inch cubes
1 medium red bell pepper, cut into 1-inch pieces
1 small red onion, cut into 1-inch pieces

Steps:

  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
  • Brush chicken with 2 tablespoons of the oil. Place chicken and jerk seasoning in resealable plastic food-storage bag. Shake bag to coat chicken with seasoning. Thread chicken, pineapple, bell pepper and onion alternately on each of eight 12-inch metal skewers, leaving 1/4-inch space between each piece. Brush kabobs with remaining 2 tablespoons oil.
  • Cover and grill kabobs over medium heat 15 to 20 minutes, turning once, until chicken is no longer pink in center.

1 cup cream of coconut
1 cup lemon juice
1 tablespoon chicken bouillon granules
2 teaspoons dried marjoram
1 teaspoon garlic powder
1 teaspoon red pepper flakes
1 pound skinless, boneless chicken breast halves, cut into chunks
1 red bell pepper, cut into chunks, or to taste
1 sweet onion, cut into chunks, or to taste
1 cup fresh pineapple chunks, or to taste
skewers

Steps:

  • Whisk cream of coconut, lemon juice, bouillon, marjoram, garlic powder, and red pepper flakes together in a bowl until marinade is smooth.
  • Combine chicken, red bell pepper, onion, and pineapple in a shallow dish and cover with 1/2 of the marinade. Cover bowl with plastic wrap and refrigerate, 4 to 6 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken, vegetables, and pineapple from the marinade, and shake off excess. Discard remaining marinade. Thread chicken, vegetables, and pineapple onto skewers.
  • Grill kabobs on the preheated grill, basting with the remaining marinade occasionally, until chicken is no longer pink in the center and the vegetables are tender, 5 to 10 minutes per side.

1 (16 ounce) can pineapple chunks
1/2 cup soy sauce
1/4 cup honey
1 garlic clove, minced
1/2 teaspoon ground ginger
1 green peppers, cut into 1-inch pieces or 12 cherry tomatoes

Steps:

  • Cut chicken in 1" cubes.
  • Drain pineapple, reserving 1/3 cup juice. Set pineapple aside.
  • Combine pineapple juice and next 4 ingredients for marinade. Marinate chicken for at l east 1 hour.
  • Arrange chicken, pineapple chunks and vegetable on skewers. Reserve marinade.
  • Place kabobs on broiler grid. Brush kabobs with marinade broil under flame 10 to 12 minutes, turning and basting several times while broiling. Serve over rice, if desired.

This is traditionally served with cucumber sauce and yucca fries(you can sub french fries). I have given the recipe for the sauce. Prep time includes marinating overnight. This is also popular in Florida.

1 onion, finely chopped
1/2 cup finely chopped scallion
2 teaspoons fresh thyme leaves
1 teaspoon salt
2 teaspoons sugar
1 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 hot pepper, finely ground (or 2 Scotch bonnet peppers)
1 teaspoon ground black pepper
3 tablespoons soy sauce
1 tablespoon cooking oil
1 tablespoon apple cider vinegar
2 lbs chicken breasts, dice 1/2-inch thick
12 wooden skewers, soaked in water for 2 hours
1 1/2 lbs cucumbers
3/4-1 cup sour cream
3/4-1 cup mayonnaise
1/8 cup cider vinegar
1 tablespoon salt (or less to taste)
1 pinch cayenne pepper
1 tablespoon Dijon mustard
1 tablespoon chopped garlic

Steps:

  • Marinade:.
  • Mix together onion, scallion, thyme, salt, sugar, allspice, nutmeg, cinnamon, hot pepper, black pepper, soy sauce, oil and vinegar. These ingredients can also be combined in a food processor.
  • Skewer 2 1/2 ounces of chicken onto each skewer(about 4 pieces). Place the skewers in a shallow baking dish and cover with the marinade. Marinate in the refrigerator overnight.
  • Place the skewers onto a hot grill and grill until done, about 2 to 3 minutes per side.
  • For the dipping sauce:.
  • Peel and seed cucumbers and roughly chop. Add sour cream and mayonnaise. Add rest of ingredients and puree in a blender. Yield: about 1 1/2 quarts.

0.5 c. of Hy-Vee Hickory House Caribbean kick marinade
1 mango
0.5 small red onion
1 c. of papaya wedges
1 lime
0 Fresh cilantro leaves

Steps:

  • 1. Place chicken strips and marinade in a resealable plastic bag. Seal bag and refrigerate for at least 30 minutes. Drain chicken; discard marinade.
  • 2. Preheat charcoal or gas grill for direct cooking over medium-high heat. Alternately thread chicken, mango, red onion, papaya, and lime slices onto 4 10-inch skewers.
  • 3. Grill kabobs for 12 to 15 minutes or until chicken is done (165 degrees), turning once halfway through. Garnish with cilantro, if desired.
