During the week I don't have time to boil beans from scratch, so these beans come in very handy. I serve it with baked chicken, grilled chicken as I mentioned before or fried pork. We all need a quick stewed beans recipe and I promise this one will exceed your expectation from a can of beans!

2 CANS black beans (rinsed and drained)
2 tbs extra virgin olive oil
2 tbs brown sugar (divided)
2 plum tomatoes (finely diced)
1 small onion (diced)
1 tbs minced garlic (3 cloves)
1 carrot (diced)
4 scallions (cilantro or parsley are good substitutes)
Hot pepper (diced, optional)
1 tbs green seasoning
4 tbs ketchup
1 tsp salt (to taste)
3 sprigs thyme

Steps:

  • Wash cans and wipe dry. Drain beans in a colander and rinse.
  • Heat oil in a dutch oven or deep heavy bottomed pot over medium heat. Add brown sugar and allow it to froth, bubble, expand and darken.
  • Add chopped tomatoes, onion, garlic, carrot, hot pepper, green seasoning, scallion, ketchup, salt and pepper. Cook for 5 minutes or until the oil starts to separate.
  • Add drained beans, 2 cans of water and stir well to combine. Bring to a boil, cover, reduce heat to a simmer (low) and cook for 20 minutes, stirring every 5 mins to ensure that it is not sticking.
  • After 20 mins, if the beans are still firm, cook an additional 5-10 mins until the beans are tender and the sauce has thickened slightly. Add more liquid if the liquid evaporates too quickly. Taste and add more salt and black pepper, if required.
  • Optional: Add chopped cilantro and a pimento pepper to finish off.

A creamy soup with a touch of Caribbean flavor. Uncle Bill's Tips: If using canned beans, reduce cooking time to 40 minutes after adding the beans. You may also use 2 (7.5 ounce) cans flaked ham if you desire a different flavor. Add ham to cooking pot after adding broth.

2 ½ cups dry black beans
6 cups water
3 tablespoons olive oil
2 onions, chopped
3 cloves garlic, chopped
6 stalks celery, chopped, with leaves
2 cups water
8 cups chicken broth
½ teaspoon ground cayenne pepper
1 ½ teaspoons ground cumin
2 tablespoons balsamic vinegar
¼ cup sherry
1 tablespoon soy sauce
½ teaspoon ground black pepper
¼ cup sour cream
¼ cup chopped green onions

Steps:

  • In a medium-size stock pot, add dried black beans and 6 cups of water, cover and let soak overnight.
  • In another large stock pot, heat olive oil and add onion, minced garlic and chopped celery. Saute until vegetables are softened.
  • Drain and rinse soaked black beans. Add pre-soaked beans or drained and rinsed canned beans to vegetable mixture along with 2 cups water and broth. Bring to boil; reduce heat and simmer.
  • Add cayenne pepper and ground cumin. Partially cover the pot and simmer over low heat for 2 to 2 1/2 hours, or until beans are soft.
  • Puree soup in batches in food processor or blender. Return pureed soup to stock pot and simmer.
  • Add vinegar, sherry, soy sauce and pepper. Serve hot with a dollop of sour cream or yogurt and chopped green onions.

Serve your vegetable curry Caribbean style, flavoured with thyme, jerk seasoning and red peppers - great with rice and peas

2 onions, 1 diced, 1 roughly chopped
2 tbsp sunflower oil
50g ginger, roughly chopped
small bunch coriander, leaves and stalks separated
3 tbsp jerk seasoning
2 thyme sprigs
400g can chopped tomato
4 tbsp red wine vinegar
3 tbsp demerara sugar
2 vegetable stock cubes, crumbled
1kg sweet potato, peeled and cut into chunks
2 x 400g cans black beans, rinsed and drained
450g jar roasted red pepper, cut into thick slices

Steps:

  • Gently soften the diced onion in the sunflower oil in a big pan or casserole.
  • Meanwhile, whizz together the roughly chopped onion, ginger, coriander stalks and jerk seasoning with a hand-held blender. Add to the softened onion and fry until fragrant. Stir in the thyme, chopped tomatoes, vinegar, sugar and stock cubes with 600ml water and bring to a simmer. Simmer for 10 mins, then drop in the sweet potatoes and simmer for 10 mins more. Stir in the beans, peppers and some seasoning, and simmer for another 5 mins until the potatoes are almost tender. Cool and chill for up to 2 days.
  • To serve, gently heat through on the hob. Roughly chop most of the coriander leaves and stir in, then serve scattered with the remaining leaves.

1 1/2 medium sweet onions, chopped
3 garlic cloves, chopped fine
2 tablespoons olive oil
1 tablespoon fresh grated gingerroot
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
4 1/2 cups drained cooked black beans or 3 (16 ounce) cans black beans
3/4 cup orange juice
salt & freshly ground black pepper

Steps:

  • Sauté the onions and garlic in olive oil until barely soft.
  • Add the spices and sauté until very soft.
  • Stir in the beans and orange juice and sauté for about 15 minutes, stirring occasionally to prevent burning.
  • Mash a few of the beans with a fork or the back of a spoon. Add salt and pepper to taste.
  • Adjust the consistency to your liking by adding orange juice or mashing more beans. You can also blend the beans with additional orange juice to make an excellent bean dip!

2 tablespoons vegetable oil
2 onions, finely chopped
4 garlic cloves, finely chopped
4 chopped fresh jalapeno chilies, chopped (more or less to taste)
2 (15 ounce) cans black beans, rinsed and drained
1 (15 ounce) can chopped tomatoes (with their liquid)
2 cups water
3/4 cup orange juice
1/4 cup lime juice (or lemon)
2 tablespoons chili powder
2 tablespoons ground cumin
2 teaspoons grated orange zest
1 teaspoon grated lime zest (or lemon)
salt & freshly ground black pepper
sour cream, chopped cilantro, chopped scallions, lime wedges

Steps:

  • Heat the oil in a large heavy pot over moderate heat and saute the onions until lightly browned, about 10 minutes. Add the garlic and jalapenos and cook, stirring frequently, for 2 minutes.
  • Add the remaining ingredients and bring to a boil. Reduce the heat and simmer covered for 30-45 minutes. If you want a thicker stew, mash some of the beans against the side of the pot with the back of a spoon and stir them into the mixture.
  • Serve with any or all of the optional garnishes if desired.

1 tablespoon Jerk seasoning paste
2 lb of sweet potatoes cut into small 1 inch cubes
1 can 14 oz of black beans
1.25 cups of frozen string beans cut and defrosted (or frozen)
1.5 cups of frozen red peppers, green peppers, and onion slice mix
1 cup of vegetable broth
1/2 teaspoon of thyme
1/4 teaspoon of cinnamon
1/4 teaspoon of salt

Steps:

  • Cut the sweet potatoes into small 3/4-to-1-inch cubes and place in the slow cooker.
  • Measure out the rest of the ingredients. Rinse the can of black beans and set aside. Measure out the string beans and the peppers and onion mix. Measure out the vegetable broth, jerk seasoning paste, thyme, cinnamon, and herbs.
  • Combine the sweet potatoes, black beans, red pepper and onion mix, green beans, jerk seasoning, thyme, cinnamon, and salt in the slow cooker. Mix well.
  • Cook on low for 4-5 hours or until the vegetable are tender.
  • Turn on warm and adjust the salt if it needs it.
