2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup butter
1 cup brown sugar
2 large eggs
3 medium bananas
1 tablespoon rum extract
1 cup shredded coconut
½ cup chopped dried pineapple

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare 12 muffin cups with paper liners.
  • Sift the flour, baking soda, baking powder, and salt into a bowl; set aside. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition, then beat in the bananas and rum extract. Stir in the flour mixture. Fold in the shredded coconut and pineapple; mixing just enough to evenly distribute. Evenly divide the batter among the prepared muffin cups.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

4 - 6 bananas (ripe but firm, peeled and halved crosswise)

Steps:

  • Combine the butter, rum, brown sugar, lime juice and zest, and allspice in a saucepan and bring to a simmer over moderate heat.
  • Toss the bananas in the butter mixture to coat well and grill directly over hot coals for 4 to 5 minutes, turning 2 or 3 times. Return the bananas to the butter mixture and serve immediately.

1 tablespoon unsalted butter
2 bananas, cut in half crosswise then lengthwise
¼ cup dark rum
⅛ teaspoon ground nutmeg
⅛ teaspoon ground cinnamon
2 tablespoons lime juice
1 quart vanilla ice cream
¼ cup chocolate syrup
½ cup whipped cream

Steps:

  • Melt butter in a large nonstick skillet over medium-high heat. Cook bananas in butter until they are browned and begin to soften, about 1 minute. Remove pan from heat; stir in rum, nutmeg and cinnamon. Use a long match or lighter to carefully ignite the liquid in the pan. Allow to burn for 15 to 30 seconds; if necessary, extinguish by placing lid on pan.
  • Continue to cook until sauce has reduced by half, 2 to 3 minutes. Stir in lime juice; cook for 1 additional minute.
  • Divide ice cream between 4 serving bowls. Top each with the warm bananas and rum sauce mixture. Drizzle each sundae with chocolate sauce, and top with whipped cream.

4 medium bananas
1/4 cup packed brown sugar
1/2 cup fresh-squeezed orange juice
1/4 teaspoon nutmeg, freshly grated
1/2 teaspoon cinnamon
1/2 cup sherry wine
1 tablespoon butter
2 tablespoons light rum (coconut rum would probably be good here, too)

Steps:

  • Preheat oven to 450 degrees F.
  • Peel the bananas, split them in half lengthwise, then place them in a buttered baking dish (10"x6"x2").
  • Combine the sugar, orange juice, nutmeg, cinnamon and sherry in a saucepan. Heat until sugar is dissolved, then pour over the bananas. Dot with butter.
  • Bake bananas for 10 to 15 minutes, or until the bananas are tender. Baste them once or twice during baking.
  • Remove from oven. Sprinkle with the rum before serving.
  • Serve as-is, or with a scoop of vanilla or coconut ice cream.

1 Onion
2 Garlic Cloves
30 g of Fresh Ginger Root
1 tbsp of Curry Powder
1 pinch of Allspice
2 Thyme Sprigs
1 Scotch Bonnet Chillies
400 g of Tomatoes
400 mL of Coconut Milk
2 Bananas
400 g of King Prawns
0.5 Lime

Steps:

  • Sizzle the oil with chopped onion, sliced ginger, crushed garlic, curry powder, allspice, and thyme for a few minutes until fragrant.
  • Next, add sliced chillies, chopped tomatoes, coconut milk, and a bit of water. Simmer the curry for 10 minutes.
  • Add the bananas sliced into chips to the curry and cook for 5 minutes.
  • Tip in the prawns and lime juice, then cook the curry for a further 5 minutes. Serve with steamed rice and garnish with thyme.

3 ripe bananas
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon nutmeg
3 Tablespoon brown sugar
Pinch of salt
1 cup all purpose flour
Oil for frying.

Steps:

  • Mash bananas with fork in bowl.
  • Add brown sugar, vanilla, extract, cinnamon, nutmeg and a pinch of salt. Sift in flour and stir with spoon until fully combined.
  • Add oil to a 10 inch skillet over medium-high heat. Once oil is hot, drop banana fritter batter in oil by the spoonful. Once one side is golden and bubbles appear on the top, flip fritter and cook until the other side is browned as well.
  • Remove fritters and drain on paper towels. Enjoy :)
