PEAR CARDAMOM MUFFIN

1 cup (250 g) plain Greek yogurt
1/3 cup (70 g) coconut oil, melted
2 large (100 g) eggs
1 teaspoon pure vanilla extract
2 teaspoons orange zest
1 1/2 cups (210 g) whole wheat flour
3/4 cup (130 g) coconut sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cardamom
1/4 teaspoon salt
1 cup (150 g) diced pear, plus extra for topping
Turbinado sugar, for topping (optional)

Steps:

  • Preheat oven to 350°F/177°C. Grease a standard muffin tin and set aside.
  • In a medium bowl, whisk together yogurt, coconut oil, eggs, vanilla, and orange zest. Set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, cardamom, and salt. Fold the wet ingredients into the dry ingredients just until completely combined. Fold in diced pear.
  • Fill the tins 2/3 full. Place small slices of extra pear on each muffin and sprinkle turbinado sugar on top.
  • Bake for 14-16 minutes. Remove and cool completely.

These Cardamom Pear Streusel Muffins feature a great blend of flavours, a lovely texture, a great moisture level, and a streusel topping to finish it off!

1/4 cup All-Purpose Flour
1/4 cup Granulated Sugar
1/2 tsp Ground Cardamom
2 Tbsp Butter (chopped)
2-1/4 cups All-Purpose Flour
1 cup Brown Sugar
2 tsp. Baking Powder
1 1/2 tsp. Ground Cardamom
2 Large Eggs (lightly beaten)
3/4 cup Milk
1/2 cup Butter (melted and cooled)
1 tsp. Vanilla Extract
1.5 cups Grated Pear (~2 large)

Steps:

  • In small bowl, mix together flour, sugar, and cardamom.
  • Use a pastry cutter or two forks to cut in 2 tablespoons butter until the mixture resembles coarse crumbs.
  • Preheat oven to 375 F. Line 12 muffin cups with liners, or spray with baking spray.
  • In a large bowl, combine flour, sugar, baking powder and cardamom. Make a well in center of flour mixture; set aside.
  • In another bowl, combine eggs, milk, melted butter, vanilla pears. Add egg mixture all at once to the flour mixture.
  • Stir just until moistened (batter should be lumpy.)
  • Divide batter between 12 prepared muffin cups, filling each to almost full. Sprinkle streusel topping over muffin batter in cups.
  • Bake in a 375 degree F oven for 18 to 20 minutes or until golden and a wooden toothpick inserted in centers comes out clean.
  • Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm.

1 cup skim milk
4 tablespoons margarine, melted
1 egg
2 cups all-purpose flour
1/3 cup sugar
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped dried pears
1 teaspoon orange zest
1/2 teaspoon ground cardamom or 1/2 teaspoon nutmeg

Steps:

  • Mix milk, margarine and egg in a medium bowl.
  • Add flour, 1/3 cup sugar, baking powder and salt, mixing just until moistened.
  • Gently mix in pears and orange zest.
  • Spoon batter into 12 greased muffin cups; sprinkle with remaining sugar and cardamom.
  • Bake at 400 until muffins are browned, about 20-25 minutes.
  • Remove from pans and cool on wire racks.

  • Make a well in the middle of the flour mixture and add milk, oil, vanilla, yogurt and the egg. Gently beat the egg, then fold wet ingredients into dry until almost completely combined. A few powdery pockets are okay. Add pears, and gently fold in to combine.
  • Spoon batter into muffin cups and bake at 350 for about 18 minutes. Muffins will be lightly browned on top and pass the toothpick test. Remove muffins from the muffin tin and place on a cooling rack.
