CARDAMOM GRANOLA BARS



Cardamom Granola Bars image

Cardamom and honey give these bars an exotic flavor. Pecans can easily be substituted for the walnuts if you prefer.

Number Of Ingredients 7

2 cups rolled oats
½ cup raisins
½ cup chopped walnuts, toasted
1 ½ teaspoons ground cardamom
6 tablespoons butter
⅓ cup packed brown sugar
3 tablespoons honey

Steps:

  • Preheat oven to 350 degrees F.
  • Line a 9-inch square pan with foil, extending the foil over the sides.
  • Grease the foil with shortening or butter.
  • Mix the first 4 ingredients in a bowl.
  • Heat the butter, brown sugar and honey in a saucepan until the butter melts and begins to boil.
  • Pour this mixture over the dry ingredients and mix until well coated. Transfer to the prepared pan and press evenly with a spatula.
  • Bake about 30 minutes or until the top is golden brown.
  • Cool on rack. Using the foil, lift out of the pan and place on cutting board. Cut into 18 bars.

3/4 cup graham cracker crumbs
2 tablespoons butter, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
2 teaspoons ground cardamom, divided
1 teaspoon vanilla extract
2 large eggs, room temperature, lightly beaten
1/3 cup all-purpose flour
1/3 cup quick-cooking oats
1/3 cup packed brown sugar
1/4 cup cold butter
1/3 cup sliced almonds

Steps:

  • In a small bowl, combine graham cracker crumbs and melted butter. Press onto the bottom of a greased 9-in. square baking pan. In a large bowl, beat the cream cheese, sugar, 1 teaspoon cardamom and vanilla until smooth. Add eggs; beat on low speed just until combined. Pour over crust. , In a small bowl, combine the flour, oats, brown sugar and remaining cardamom. Cut in cold butter until crumbly. Stir in almonds. Sprinkle over top., Bake at 350° for 35-40 minutes or until center is almost set and topping is golden brown. Cool on a wire rack for 1 hour. Cover and refrigerate for at least 2 hours before serving. Cut into 16 bars.

1/2 cup fat-free cholesterol-free egg product or 2 eggs
3 tablespoons Gold Medal™ all-purpose flour
2 teaspoons vanilla
1/2 teaspoon ground cardamom or cinnamon
1/4 teaspoon salt
1 1/2 cups cashews, pieces and halves
1/2 package (8 oz size) reduced-fat cream cheese (Neufchâtel)
1/2 cup powdered sugar
1/4 cup packed brown sugar
2 teaspoons vanilla
1 egg yolk
1 1/2 cups Gold Medal™ all-purpose flour
3/4 cup powdered sugar
1 tablespoon orange juice

Steps:

  • Heat oven to 350°F. Grease rectangular pan, 13x9x2 inches. Prepare Crust; press dough evenly in pan. Bake 15 to 20 minutes or until very light brown.
  • Beat remaining ingredients except cashews and Orange Drizzle in medium bowl with electric mixer on medium speed about 2 minutes or until thick and colored. Stir in cashews. Spread over baked crust.
  • Bake 19 to 22 minutes or until top is golden brown and bras are set around edges. Cool completely. Spread wth Orange Drizzle. Cut into 8 rows by 6 rows.
  • Method Note for Crust: Beat cream cheese and sugars in medium bowl with electric mixer on medium speed until fluffy. Beat in vanilla and egg yolk. Gradually stir in flour to make a soft dough.
  • Method Note for Orange Drizzle: Mix ingredients until smooth and spreadable.

  • melt butter in saucepan, stir in the brown sugar, vanilla, coffee and cardamom, add salt and flour and mix just until incorporated. bake 20 - 25 min. scatter choc over bars. return to oven for 1-2 min--spread choc evenly over the toffee bars. sprinkle the chopped almonds over the choc.

Steps:

  • Cream butter and granulated sugar; beat in egg. In a seperate bowl combine flour, baking soda, cardamom, soda, and salt. Combine 1/4 cup coffee and milk. Add flour mixture and coffee mixture alternately to creamed mixture. Stri in nuts. Spread in greased 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 18 to 20 minutes. Mix powdered sugar and additional coffee to make spreading consistency. Spread over warm cookies. Cool; cut into bars.
