Steps:
- Season chicken wings lightly with seasoned salt.
- Mix flour, salt, black pepper, cayenne pepper, and paprika together in a wide, shallow bowl. Press wings into flour mixture to coat and arrange onto a large plate so they do not touch. Refrigerate coated wings for 15 to 30 minutes.
- Dredge wings again in flour mixture and return to the plate. Refrigerate wings again 15 to 30 minutes.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Fry chicken wings in hot oil until crisp and no longer pink at the bone and the juices run clear, 9 to 12 minutes. An instant-read thermometer inserted into the thickest part of the meat, near the bone should read 165 degrees F (74 degrees C).
- Transfer fried wings to a large stainless steel bowl. Drizzle sauce over the wings and toss to coat.

- Trim the wing tips off the chicken wings and split the wing into the wingette and drumette.
- Place the wingettes and drumettes into a bowl and marinate in the garlic powder, paprika, salt, pepper and oil. Leave to marinate in the fridge for at least 30 minutes.
- Preheat your deep fryer to 180C/355F.
- Deep fry the wingettes and drumettes (in batches if your fryer is small) for around 6-8 minutes. To check if they are done, cut the meat on a diagonal down to the bone - if the bone is red the chicken requires more cooking.
- Mix the hot sauce and melted butter and toss the wings through it. We recommend serving it with our Feta Cheese Dressing.

- Combine onion, garlic, hot sauce, salt, and 2 teaspoons black pepper in a large bowl. Add the cold buttermilk and stir to dissolve. Snip the wing tips with kitchen shears if desired. Add the chicken wings and be sure they are all coated well in buttermilk. Cover the bowl and chill for at least 2 hours, or up to 4 hours.
- Prepare the seasoned flour by whisking together flour, kosher salt, paprika, garlic powder, onion powder, lemon zest, black pepper, oregano, cayenne, baking powder, sage, and dry mustard. Drain off excess buttermilk and dredge the wings in the flour. Place each batch of dredged wings on a wire rack as you go.
- Let wings sit for 10 to 15 minutes.
- Meanwhile, heat peanut oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Carefully drop the chicken wings into the hot oil, 4 or 5 at a time. Fry until golden, crisp, and no longer pink in the centers, about 5 minutes. Drain excess oil from wings on paper towels and lightly season with a pinch of salt while still hot. Continue with remaining wings.

- Smash together the paprika, pepper, garlic, salt, hot pepper, hot sauce, and vinegar, sweetener, and lemon juice with a mortar.
- Marinate the chicken wings with mixed spices. Chill in the fridge for an hour while flipping the wings occasionally.
- Transfer the wings to a plate and coat with coconut flour all over to cover the entire sides. This is an optional step. If you don't want to 'bread' your wings, simply just fry the marinated wings.
- If you use a deep fryer, pour the oil in a deep fryer and set at 375°F. Deep fry the chicken until it's cooked and golden. If you're using a regular frying pan, add oil in and cook over medium heat. Brown the wings in the oil for around 10-15 minutes until golden.
- Remove from the heat once the wings turn brown on the sides. Serve on a platter.
- Note: To accompany the chicken wings, you can serve with finely chopped white cabbage, purple cabbage, and onion and mix with mayonnaise, mustard, salt, and vinegar to taste.
