LOW CARB ASIAN TURKEY LETTUCE WRAPS



Low Carb Asian Turkey Lettuce Wraps image

Preparing all the ingredients in advance makes this a super fast weeknight dinner!

Number Of Ingredients 16

1 lb Ground Turkey
1 Tablespoon Oil
1/2 Cup Onion, finely diced
2 Cloves Garlic, minced
1 (8 oz) Water Chestnuts, drained and finely chopped (you can substitute peanuts also)
1 bunch Scallions, very thinly sliced
1/4 Cup Hoisin Sauce
2 Tablespoons Soy Sauce
2 Tablespoon Rice Vinegar
1 Tablespoon Sriracha Sauce
1 teaspoon Ginger Paste
1 tsp Sesame Oil
16 Bibb Lettuce Leaves
1 Cup Shredded Carrots
Vermicelli Noodles
Oil

Steps:

  • Separate and rinse whole Bibb lettuce leaves and set aside to dry.
  • Combine the hoisin sauce, soy sauce, rice vinegar, Sriracha, ginger paste and sesame oil in a small bowl. Whisk until combined. Set aside.
  • Heat a large skillet over medium heat with about a Tablespoon of oil. Add the turkey and break apart, let the turkey cook until almost completely through. This will give it a nice caramelization on the outside. Break the turkey up into small pieces and remove from the pan onto a nearby plate or bowl.
  • Add the diced onion (and more oil if necessary) over low/medium heat until softened - approximately 4-5 minutes. Add the minced garlic until fragrant (30 seconds). Add the scallions and water chestnuts. Cook another minute more.
  • Add the sauce ingredients to the pan and return the turkey to the pan. Stir to combine. Lastly add the shredded carrots and stir to combine.
  • Place the turkey mixture in a serving bowl. Arrange the lettuce leaves on the edge of a serving platter with the turkey in the center for serving.
  • Serve by scooping about 1/4 cup filling into the middle of each lettuce leaf and topping with crispy rice noodles, if using.

1¼ lb. fat-free lean ground turkey
1 Tbsp olive oil
1 clove garlic, minced
1/8 tsp. ground ginger
4 green onions, thinly sliced
1 (8 oz) can sliced water chestnuts, drained and coarsely chopped
3 Tbsp hoisin sauce
2 Tbsp lower-sodium soy sauce (green top)
1 Tbsp rice vinegar
2 tsp. roasted red chili paste
Pinch of salt
12 Boston lettuce leaves

Steps:

  • Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add turkey, garlic and ginger to the pan and cook for about 6 minutes or until turkey is browned. Stir to crumble.
  • Combine turkey mixture, onions and chopped water chestnuts in a large bowl, stirring well, and set aside.
  • Meanwhile in a small bowl, whisk together hoisin, soy sauce, rice vinegar and roasted red chili paste and drizzle over the turkey mixture. Toss to coat completely.
  • Add about ¼ cup turkey mixture to each lettuce leaf, serve and enjoy!

I'm not a huge participant in the low-no carb dieting. However, I am always concerned with my calorie intake. I find the easiest way to cut calories, is to cut out unneccessary carbs. One day, I decided to throw out the tortilla and try wrapping my meal in a lettuce leaf. You get the great taste and nutrition of a regular turkey sandwich or wrap, without the extra 200+ calories or added carbs. It's fast, easy, health and tasty!

1 leaf green lettuce (approximately 6in by 4 in)
2 slices of oven roasted turkey breast
2 slices tomatoes
1/2 teaspoon diced red onion
1/4 teaspoon mustard
1/4 teaspoon mayonnaise
salt and pepper

Steps:

  • Lay the lettuce leaf flat.
  • place turkey slices on first.
  • add red onions.
  • evenly distrbute mayo and mustard.
  • lay tomatoes on top.
  • season with salt and pepper, to taste.
  • tightly roll up the lettuce leaf.
