Steps:
- In a saucepan of boiling salted water boil the noodles until they are al dente and drain them well. In a bowl toss the noodles with the egg and the caraway seeds until they are coated well. In a small non-stick skillet heat the oil and the butter until the foam subsides, add 1/2 cup of the noodle mixture, and form it into a pancake 4 inches in diameter, tidying the edges with a spatula. Cook the pancake over moderately high heat for 2 minutes, or until the underside is golden, turn it, and cook it for 2 minutes more. Slide the pancake onto a plate and keep it warm. Make pancakes with the remaining noodle mixture in the same manner.
GHASTLY GHOULASH
This rich Hungarian beef stew is a labor of love and well worth the effort. Stew beef, such as chuck, becomes super tender when cooked with plenty of red wine, diced tomatoes, vegetables, and herbs for about two hours. Serve alongside buttery noodles tossed with caraway seeds.

Steps:
- Toss beef with salt, pepper, and flour in a medium bowl. Heat 2 tablespoons oil in a large stockpot or Dutch oven over medium-high heat until hot. Brown half of beef on all sides, 4 to 6 minutes total. Transfer beef to a plate with a slotted spoon. Repeat with remaining beef and 2 tablespoons oil.
- Add onion to fat in pot; cook, stirring occasionally, until just tender, about 3 minutes. Stir in garlic; cook 1 minute. Add wine; cook, stirring up brown bits, until most liquid has evaporated, about 2 minutes.
- Return beef to pot. Stir in paprika, tomatoes, stock, tomato paste, and oregano. Season with salt and pepper. Cover; reduce heat. Gently simmer until meat is just tender, about 1 1/2 hours.
- Stir in carrots and potatoes; continue to simmer until vegetables and meat are very tender, 20 to 30 minutes.
- Meanwhile, cook bacon in a dry large skillet over medium heat until crisp, about 5 minutes. Transfer to paper towels to drain. Add mushrooms, pearl onions, and bell pepper to fat in skillet; cook until vegetables are tender and golden brown, and liquid has mostly evaporated. Add to goulash.
- Season goulash with salt and pepper, if necessary. Garnish with bacon pieces and oregano. Serve with caraway egg noodles.

HALUSKI (PAN-FRIED CABBAGE AND NOODLES)
Haluski is a pan fried dish that both of my grandmothers used to make of butter, onion, cabbage and noodles. It makes a delicious main or side dish, whatever you're in the mood for. I personally like to let my cabbage get a little brown, but adjust your cooktime as necessary to your preference. The serving sizes will depend on how you are serving it.

- Bring a large pot of water to a boil. Add a heaping palmful of salt. Drop the egg noodles and stir well so they don’t stick. Cook according to the package’s time.
- Meanwhile, heat a large 12” skillet over medium heat. Add a tablespoon of butter and let melt. Add the caraway seeds and allow to toast for a few seconds. Add the cabbage and a good pinch of salt. Saute the cabbage until tender and caramelized, stirring often. Transfer the cabbage to a plate and set aside.

- Drain the egg noodles and pour them into the skillet. Toss well with the brown butter. Add the cabbage back to the skillet and heat through. Taste the noodles and season with more salt if needed.
