CARAWAY CABBAGE STIR-FRY WITH CHEESE & POTATO PIEROGIES
Canadian Living Magazine Test Kitchen is where this "yummy" recipe was found in April, 2004. ;) We served it here with the potato cheese perogies cut in thirds and did our residents love it! They enjoy cooked cabbage and it was made to their liking.So, we steamed the frozen perogies over a bed of cabbage & that way there was possibility of not over cooking! :) By ommiting the bacon, it can become vegetarian.

Steps:
- In large skillet or wok, heat oil over medium heat; stir-fry shredded cabbage, onion, carrot, bacon, vinegar, caraway seeds, salt and pepper for 3 minutes.
- Cover and cook just until cabbage is wilted, about 10 minutes.
- Arrange pierogies on cabbage mixture; cover and steam, turning pierogies once, until cabbage is tender, about 10 minutes.
- Serve with sour cream and chives.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving drippings, and set aside.
- Heat bacon drippings over medium heat and stir in cabbage and onion; cover and cook for 10 minutes.
- Stir in tomatoes, vegetable oil, vinegar, sugar, salt and bacon; cook uncovered for 5 minutes.
- Meanwhile, prepare pierogies according to package directions; drain. Combine pierogies with cabbage mixture and serve.

CARAWAY CABBAGE WITH SAUSAGE AND POTATOES
This is so much better when made with cabbage and potatoes straight from the ground. Most people I know use just a couple of tablespoons of spicy or hot sweet mustard, but I just use regular yellow mustard (and more of it) due to personal preference. I also use a lower fat pork & alligator sausage from Winn-Dixie that might not be available everywhere. I'm sure it would work with any kind.

Steps:
- In a large skillet, heat the butter and bacon.
- Add the onion, potato and cabbage and cook until cabbage is wilted.
- Add the caraway, vinegar and stock.
- Bring to a boil; cover, reduce heat, and simmer for 12 minutes.
- While simmering, lightly brown the sausage in another small skillet.
- Add the sausage to the cabbage mixture and cook all, uncovered, for another 6 minutes.
- Stir in the mustard and season with salt and pepper.

PIEROGI STIR FRY
A simple yet humble recipe courtesy of my mother in law. Heck, I didn't know what to call this recipe! ;) We use store bought Cheemo brand frozen perogie from Canada for this dish, but you can certainly use your own homemade perogie. (I hope one day to learn how to make them and spell the word correctly.) Sometimes I add a potato to the mix to "stretch" the meal even though perogies already contain potatoes. The Cheemo brand has a cheddar cheese/potato variety we really like and an herb/roasted garlic one, too. I noticed the Cheemo site has a similar recipe to this one. Check it out! Serve with a tossed green salad that contains beets, in keeping with the Ukrainian/Russian/Eastern European theme. A Recipezaar member is going to have to set me straight on the correct spelling of pierogies/perogie/-both singular and plural forms.

Steps:
- In a large frying pan, cook the bacon until crisp. Set aside to drain and cool.
- Remove the bacon fat (or not) and add 2 tablespoons oil.
- Add the frozen perogies (no need to thaw), carrots, and potato (if using) and cook on medium-high heat for about 10 minutes.
- Add the onion and bell pepper; cook another 5-7 minutes, until the onion and bell pepper start to char at the edges.
- Stir in the cabbage and garlic. Cook another 2-3 minutes. Reduce heat if necessary.
- Crumble the bacon and stir it into the pan.
- Season with salt and pepper to taste.
- Serve with sour cream.
- Servings are estimated.
