1 tablespoon canola oil
2 cups cheddar cheese (shredded)
1 cup mayonnaise
1 teaspoon sriracha sauce

Steps:

  • Saute onion in oil until onion is dark caramel color about 20 to 30 minutes.
  • Combine onion, cheese, mayonnaise, and sriracha in a bowl.
  • Stir to combine.
  • Pour into a 1 and 1/2 quart casserole dish.
  • Bake, uncovered at 350 degrees F for 25 to 30 minutes or until hot and bubbly.
  • Serve with tortilla chips, corn chips, or a sturdy cracker

3 tablespoons butter or ghee
3/4 cup Mountain High™ lowfat plain yoghurt
3/4 cup sour cream
1 teaspoon salt
Freshly ground pepper, to taste
1/2 teaspoon fresh chopped parsley, if desired
2-3 cups pita chips, pretzel crackers or butter crackers, for serving

Steps:

  • In a large skillet over medium heat, cook onion and butter, stirring every few minutes, until onion becomes golden brown and caramelize, about 15-20 minutes.
  • Transfer caramelized onion to a large bowl. Stir in yogurt, sour cream and salt.
  • Garnish with freshly ground pepper and chopped parsley. Serve with crackers or chips for dipping.

Caramelizing the onions in this classic sour cream and onion dip really takes it up a notch.

1 heaping cup sour cream
1/2 heaping cup mayonnaise
1/4 teaspoon garlic powder
1/4 to 1/2 teaspoon Creole or Cajun seasoning or black pepper
Dash Worcestershire sauce
1 slice bacon
1 tablespoon olive oil
2 Vidalia or other sweet onions, diced (about 3 cups)
1/2 teaspoon kosher salt
1/2 tablespoon butter

Steps:

  • Combine the sour cream, mayonnaise, garlic powder, Cajun seasoning and Worcestershire sauce. Mix well and refrigerate.
  • Cook the bacon until crisp; set aside to drain on a paper towel.
  • Add the olive oil to the bacon drippings and heat over medium heat.
  • Add the onion and salt and cook until golden brown and caramelized, for about 20 minutes, stirring often.
  • Stir the butter into the onions, transfer to a plate and set aside to cool.
  • Once cooled, stir the onions into the sour cream and mayo mixture.
  • Crumble or chop bacon and mix in.
  • Taste and adjust salt and other seasonings as needed.
  • Seal and refrigerate for several hours or overnight.
  • Stir before serving; serve with ridged potato chips.

2 cans black beans, drained
1 vidalia onion
3 tbsp Colavita Olive Oil
1 tbsp Colavita Balsamic Vinegar
½ cup sour cream
1 tsp cumin
1 tsp salt
¼ tsp black pepper
Freshly chopped parsley and a dollop of sour cream for topping
Bat Chips:
2 flour tortillas
1 tsp smoked paprika
0.50 tsp salt
0.50 tsp black pepper
1 tbsp Colavita Extra Virgin Olive Oil
Bat-shaped (or other) cookie cutter

Steps:

  • For the Dip:
  • First caramelize the onion. Slice it into long, thin strips. Heat 1 tbsp Colavita Olive Oil in a large skillet over medium heat. Add the onion to the pan and sauté, stirring only occasionally until the onion starts to wilt and turn brown, about 20 minutes.
  • Add the Colavita Balsamic Vinegar to the onion and sauté another 5 minutes. Remove from the heat.
  • In a food processor or blender, purée the caramalized onion together with the remaining ingredients until smooth.
  • Add more Colavita Olive Oil if the mixture seems dry.
  • Garnish with parsley, and a dollop of sour cream.
  • Serve with corn chips or special bat-shaped tortilla chips.* See instructions below.
  • For the Bat Chips:
  • Cut bat shapes out of each flour tortilla. Each flour tortilla should give you 6 to 8 shapes.
  • Mix together the smoked paprika, salt and pepper in a small bowl.
  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • Brush the tortilla pieces with Colavita Olive Oil, and place them on the prepared baking sheet.
  • Sprinkle them with the spice mixture.
  • Place the pieces in the oven and bake for 10 minutes or until they are crisp. Remove from the oven and allow to cool for 2 minutes.

I created this dip for my daughter who loves both onion dip and boursin cheese. I use light ingredients but there is nothing very light about it. I figure cut the fat where you can. Also if Boursin cheese is not available or you would prefer a more economical choice, use the herb and garlic cream cheese for equally good results.

2 -3 vidalia onions, chopped
2 tablespoons butter
salt and pepper
1 cup light sour cream
1 cup light mayonnaise
1 (5 1/4 ounce) package light boursin cheese

Steps:

  • Saute onion, salt and pepper in the butter on medium low heat until caramelized to a light brown. Do not scorch the onions. Stir often for about 30-40 minutes. Let cool.
  • Meanwhile, mix the remaining ingredients in a medium bowl. Boursin cheese can be crumbly so often I will mix these ingredients in a small food processor then add to bowl.
  • When onions are room temperature stir them into sour cream mixture and refrigerate for at least 4 hours for flavors to meld.

1 large Vidalia onion, very thinly sliced
8 ounces cream cheese, at room temperature
1/2 cup mayonnaise
1/4 cup sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
Freshly ground pepper
1 scallion (green part only), thinly sliced, plus more for topping
Vegetables (roasted and raw), for serving

Steps:

  • Heat the olive oil in a medium skillet over medium-high heat. Add the onion and saute until beginning to brown, 5 to 7 minutes. Stir in 1/4 cup water and scrape up any browned bits from the bottom of the pan. Turn the heat to low and cook until the onion is golden brown, 30 to 35 minutes, stirring occasionally. If the pan ever looks too dry, add a tablespoon of water. Let cool completely.
  • Combine the cream cheese, mayonnaise, sour cream, Worcestershire sauce, garlic salt, onion powder and 1/2 teaspoon pepper in a medium bowl and beat with a mixer until smooth. This is a quick and easy dip to make that everyone seems to love. I used panko bread crumbs because that is what I had in my pantry. I also found that you needed to cut the onion pieces into smaller strips (I took the onion and cut it in half and then half again). I also used Clemson Blue Cheese.

Steps:

  • Preheat oven to 350 degrees. Spray a 8 x 8 inch baking dish with cooking spray. In a large skillet, heat oil and butter. Add garlic and onions. Cook, stirring occasionally, until onions are caramel colored, about 20 minutes.
  • In a food processor, pulse together the blue cheese, cream cheese, mayonnaise and sour cream. Place in bowl and add caramelized onions. Season with salt and pepper. Pour mixture into prepared baking dish. Sprinkle with bread crumbs.
