- Combine onion, cheese, mayonnaise, and sriracha in a bowl.
- Stir to combine.
- Pour into a 1 and 1/2 quart casserole dish.
- Bake, uncovered at 350 degrees F for 25 to 30 minutes or until hot and bubbly.
- Serve with tortilla chips, corn chips, or a sturdy cracker

- Combine the sour cream, mayonnaise, garlic powder, Cajun seasoning and Worcestershire sauce. Mix well and refrigerate.
- Cook the bacon until crisp; set aside to drain on a paper towel.
- Add the olive oil to the bacon drippings and heat over medium heat.
- Add the onion and salt and cook until golden brown and caramelized, for about 20 minutes, stirring often.
- Stir the butter into the onions, transfer to a plate and set aside to cool.
- Once cooled, stir the onions into the sour cream and mayo mixture.
- Crumble or chop bacon and mix in.
- Taste and adjust salt and other seasonings as needed.
- Seal and refrigerate for several hours or overnight.
- Stir before serving; serve with ridged potato chips.

- For the Dip:
- First caramelize the onion. Slice it into long, thin strips. Heat 1 tbsp Colavita Olive Oil in a large skillet over medium heat. Add the onion to the pan and sauté, stirring only occasionally until the onion starts to wilt and turn brown, about 20 minutes.
- Add the Colavita Balsamic Vinegar to the onion and sauté another 5 minutes. Remove from the heat.
- In a food processor or blender, purée the caramalized onion together with the remaining ingredients until smooth.
- Add more Colavita Olive Oil if the mixture seems dry.
- Garnish with parsley, and a dollop of sour cream.
- Serve with corn chips or special bat-shaped tortilla chips.* See instructions below.
- For the Bat Chips:
- Cut bat shapes out of each flour tortilla. Each flour tortilla should give you 6 to 8 shapes.
- Mix together the smoked paprika, salt and pepper in a small bowl.
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- Brush the tortilla pieces with Colavita Olive Oil, and place them on the prepared baking sheet.
- Sprinkle them with the spice mixture.
- Place the pieces in the oven and bake for 10 minutes or until they are crisp. Remove from the oven and allow to cool for 2 minutes.

CARAMELIZED VIDALIA ONION AND BOURSIN CHEESE DIP
I created this dip for my daughter who loves both onion dip and boursin cheese. I use light ingredients but there is nothing very light about it. I figure cut the fat where you can. Also if Boursin cheese is not available or you would prefer a more economical choice, use the herb and garlic cream cheese for equally good results.

- Saute onion, salt and pepper in the butter on medium low heat until caramelized to a light brown. Do not scorch the onions. Stir often for about 30-40 minutes. Let cool.
- Meanwhile, mix the remaining ingredients in a medium bowl. Boursin cheese can be crumbly so often I will mix these ingredients in a small food processor then add to bowl.
- When onions are room temperature stir them into sour cream mixture and refrigerate for at least 4 hours for flavors to meld.

This is a quick and easy dip to make that everyone seems to love. I used panko bread crumbs because that is what I had in my pantry. I also found that you needed to cut the onion pieces into smaller strips (I took the onion and cut it in half and then half again). I also used Clemson Blue Cheese.

- Preheat oven to 350 degrees. Spray a 8 x 8 inch baking dish with cooking spray. In a large skillet, heat oil and butter. Add garlic and onions. Cook, stirring occasionally, until onions are caramel colored, about 20 minutes.
