CARAMELIZED TOMATO SALAD WITH SAN SIMóN CHEESE

Steps:
- Preheat oven to 275°F. Place oil, 3/4 pound tomatoes, sugar, and thyme in 8 x 8 x 2-inch metal baking dish. Roast until tomatoes are very tender, about 2 1/2 hours. Cool caramelized tomatoes in oil. DO AHEAD: Can be made 2 days ahead; cover and chill. Bring to room temperature before continuing.
- Using slotted spoon, transfer tomatoes to large bowl. Transfer 1 cup oil from tomatoes to medium bowl (reserve any remaining oil for another use). Add vinegar to oil in medium bowl; whisk to blend. Season dressing with salt and pepper.
- Add 1 pound fresh tomatoes, cheese, and dressing to bowl with caramelized tomatoes; toss gently. Top with green onions and chervil. Serve with toasts.
- San Simón_cheese, a smoked cheese shaped like a bell, is sold at natural foods stores, specialty foods stores, and latienda. com. Smoked Gouda can be substituted._
COTTAGE CHEESE PASTA WITH TOMATOES, SCALLIONS AND CURRANTS
Satisfying the same creamy urge as mac and cheese, noodles with cottage cheese is a comforting Eastern European staple that's sometimes topped with golden fried onions and a dusting of black pepper and cinnamon. This version trades caramelized onions for slivers of sharp raw scallion to contrast with the richness of the cottage cheese, which melts into a sauce upon contact with the hot pasta. The currants lean into the cinnamon's sweetness, while halved cherry tomatoes and mint make the dish juicy and fresh. It's an unusual take on the original dish that's easy to riff on - feel free to add or leave out ingredients to make it your own.

- Bring a large pot of water to a boil. Put currants in a small bowl and ladle a little of the boiling water over them to cover. Let soak for 10 minutes, then drain.
- Meanwhile, salt the remaining water in the pot. When it returns to a boil, add pasta. Cook according to package instructions until al dente, usually 1 minute less than the package directs. Drain pasta, reserving 1/2 cup pasta cooking water.
- In a large serving bowl, combine scallions, tomatoes, lemon juice and 1/4 teaspoon salt.
- When the currants are soaked, add them to the bowl with the tomatoes and toss to combine. Stir in 2 tablespoons olive oil.
- Add pasta to the serving bowl, along with cottage cheese, pepper and a few splashes of reserved pasta water (about 1/4 cup), and toss until evenly coated. If pasta looks dry, add a little more pasta cooking water, a tablespoon at a time. Stir in herbs. Taste, and add more salt and lemon, if needed.
- To serve, top with a dusting of ground cinnamon (if you like), flaky salt, a lot of black pepper, and more olive oil and herbs. Serve hot, warm or at room temperature.
CARAMELIZED TOMATOES
Adapted from 5 Star Tastes of the South cookbook. I have not tried this yet. Not exactly a dieter's dish, but this sounds good for a holiday table. (Tip: to easily skin tomatoes, drop them into boiling water for 30 seconds until the skins just start to blister, remove and peel, then core.)

- Arrange tomatoes in a baking dish.
- Season with salt and pepper, then dot with butter.
- Bake at 375 F for 20 minutes.
- Mix diced veggies with brown sugar and cook over low heat in a medium pan, stirring, for about 10 minutes.
- Make a paste of flour, 1 tsp salt, lemon juice, and a small amount of water (enough to make a paste).
- Stir into the veggie mixture and cook until thick and smooth.
- Pour over baked tomatoes.

- Preheat oven to 425 degrees. Brush an 18-by-12 1/2-inch rimmed baking sheet with oil. Place dough on sheet; press into a rounded rectangle, about 14 by 12 inches.
- Heat 2 tablespoons oil in a mediumskillet over medium-high heat. Add onions and salt. Cook, stirring occasionally,until golden, about 12 minutes; transferto a bowl. Add tomatoes and remaining2tablespoons oil to the skillet. Cover;cook, stirring occasionally, until tomatoes collapse, about 10 minutes.
- Scatter olives, onions, tomatoes, andcheese over dough. Bake until crust isgolden, 25 to 30 minutes. Let cool 10 minutes. Serve, garnished with rosemary.

- Pour a Xarel-lo, made from a white-wine grape most commonly grown in Spain's Catalonia region. José suggests the fresh, elegant Albet i Noya 2008 Xarel-lo Clàssic ($14). Can't track down Xarel-lo? The grape is one of the main varietals used to make cava, the Spanish sparkler. We like the Raventós i Blanc 2005 Gran Reserva de la Finca ($38), a citrusy cava.

- Heat the butter in a large skillet over medium-low heat. Stir in the onions with a big pinch of salt and pepper. Cook, stirring often, for 25 to 35 minutes, until the onions are golden and caramely.
- Towards the end of the onions caramelizing, bring a pot of salted water to a boil and cook the pasta according to the package directions.
- Add the garlic and cherry tomatoes into the skillet with the onions. Cook, stirring often, until the tomatoes begin to burst, about 10 minutes.
- Stir the pasta into the skillet. Stir in the basil ribbons and the parmesan cheese. Taste and season with a pinch of salt and pepper if you feel it needs it.
