CARAMELIZED GRILLED PINEAPPLE WITH BROWN SUGAR CHILI GLAZE

- Peel pineapple and cut lengthwise into eight wedges; remove core. Line pineapple in a rimmed baking sheet or 9x13 pan. Set aside. *See Notes on detailed instructions on how to peel pineapple.
- Melt butter in a small saucepan over medium heat. Add brown sugar and stir to dissolve. Carefully stir in orange juice (as it will bubble up), followed by chili powder, salt, pepper and cloves. Increase heat and bring to a simmer until the mixture reduces to about 1/2 cup and thickens into a thin syrupy consistency (it will continue to thicken upon standing so don't thicken too much). Remove from heat and stir in lime juice.
- Let cool a few minutes then pour approximately 2/3 of Glaze over pineapple. Turn to coat. Reserve the remaining Glaze for basting. If your reserved Glaze becomes to thick, stir in a little water and return to heat.
- Grill pineapple over direct medium heat, basting with reserved glaze, turning occasionally, until pieces have golden brown grill marks in places, about 7-10 minutes. Serve with remaining Glaze and additional lime and chili powder if desired.

- Core and peel pineapple. Slice it lengthwise into eighths.
- Heat butter in a large nonstick skillet over high heat. Coat pineapple wedges with sugar; place in hot pan. Cook, turning once and shaking pan often, until golden brown, 8 to 10 minutes. Remove pineapple.
- Stir 3 tablespoons water into pan, and heat briefly; drizzle over pineapple. Serve with frozen yogurt, if desired.

- Melt the butter in a medium to large saute pan over medium heat.
- Place the pineapple slices (no more than 1/2 inch thick) over the melted butter in the pan. Sprinkle with the brown sugar.
- Baste the pineapple by tilting the pan a bit to scoop some of the butter/sugar mixture and pouring it over the pineapple slices. Cook for about 3-4 mins per side.
- Continue to baste every so often to incorporate the flavor of the butter and brown sugar.
- When cooked, place slices on plates and drizzle some of the sauce it cooked in over top. Serve with vanilla ice cream to make EXTRA delicious! Pour some of the sauce over that as well. VERY hot, let cool a little before serving.

- Combine rum and juice in a glass measuring cup. Heat 2 tablespoons butter in large skillet over medium-high heat until foaming. Add half of the pineapple slices, and cook until well browned on both sides, 5 to 8 minutes. Transfer to baking pan.
- Sprinkle pan with 1/4 cup sugar, and cook until sugar caramelizes to a golden brown, 1 to 2 minutes.
- Turn heat off or hold skillet away from heat, and carefully add 1/2 cup rum mixture.
- Turn heat on or return pan to heat and stir with a wooden spoon, scraping loose any caramelized bits on bottom of skillet. Simmer sauce until reduced and slightly thickened, about 3 minutes. Pour through fine sieve into a bowl, and set aside. Wash skillet, and repeat. Cut pineapple slices, and serve over ice cream drizzled with warm sauce.
RUM GLAZED PINEAPPLE
Rum Glazed Pineapple - pineapple slices soaked in rum glaze and then grilled with beautiful grill marks. Top it with ice cream for a wonderful dessert!

- In a small bowl, combine, brown sugar, rum , nutmeg and cinnamon.
- Place the pineapple in a glass pan in a single layer. Then pour all the mixture over the pineapple. Coat pineapples with the sauce the let it sit for about 15-20 minutes
- When ready to grill remove pineapple and let it drain then pour the sauce in small sauce -pan and bring to a simmer.
- Let it simmer until reduced by half - about 6-8 minutes. Set aside
- While the sauce is simmering away -place a grill pan or skillet on medium high heat.
- Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear. Watch out for this step- they do grill pretty fast. Set it on a plate. Repeat with the remaining pineapple slices.
- Transfer on a serving plate, top with ice cream and drizzle with sauce.

- Preheat broiler and line a shallow baking pan with foil.
- Trim pineapple leaves to about 2 inches. Quarter pineapple lengthwise, reserving 2 quarters for another use. Cut and discard cores from remaining quarters. With a sharp knife cut fruit from rinds, keeping rinds intact and reserving them. Cut pineapple crosswise into 1/4-inch-thick slices.
- In a small saucepan cook butter, 2 tablespoons brown sugar, and rum over moderate heat, stirring, 1 minute. Add pineapple, stirring to coat, and cook mixture 1 minute.
- Put reserved rinds in baking pan and with a fork and spoon return pineapple pieces to rinds, arranging in original shape. Spoon remaining butter mixture over pineapple and sprinkle tops with remaining tablespoon brown sugar. Broil pineapple about 3 inches from heat until slightly charred and heated through, about 8 minutes.
- Serve caramelized pineapple with ice cream.
SEARED PORK CHOPS WITH COCONUT RUM AND CARAMELIZED PINEAPPLE SAUCE

- Heat skillet to medium high heat. Season pork chops liberally with salt and pepper. Add peanut oil to skillet and sear pork chops until golden brown on both sides. Remove pork chops from pan and put into a preheated 450 degree oven for 6 to 8 minutes, or until done to your likeness. In same skillet, add 2 tablespoons butter and when it starts to brown add pineapple and cook until edges start to caramelize. Now add brown sugar, mix thoroughly, then add shallots and garlic and bring to a simmer. Next add rum and flambe ingredients. When the flame dies down, add chicken stock and bring to another simmer and reduce liquid by 1/2. Add lime juice, tomato, hot sauce, salt and pepper. Add remaining butter to thicken sauce. Garnish with chopped cilantro.
GINGERBREAD CAKE WITH CARAMELIZED PINEAPPLE AND RUM CREAM

- Prepare Gingerbread Cake: Preheat oven to 350 degrees F.
- Grease 10-cup fluted baking pan (such as a bundt); dust with flour.
- In medium bowl, combine flour, ginger, baking soda, cinnamon, allspice, nutmeg, salt, cloves, and pepper; set aside.
- In large bowl, with mixer at high speed, beat butter, granulated sugar, and vanilla 3 minutes or until creamy, occasionally scraping bowl with rubber spatula.
- Reduce speed to medium.
- Add eggs, 1 at a time, beating well after each addition.
- In 4-cup glass measuring cup or bowl, stir molasses with 1 cup very hot water.
- Reduce mixer speed to low; add flour mixture alternately with molasses mixture, occasionally scraping bowl with rubber spatula.
- Pour batter into prepared pan.
- Bake 50 to 55 minutes or until toothpick inserted in center comes out clean.
- Cool cake in pan on wire tack 20 minutes.
- Loosen cake from pan.
- Invert cake onto rack; cool completely.
- Prepare Caramelized Pineapple: Cut crown and stem ends from pineapple; cut off rind.
- Slice pineapple lengthwise into quarters.
- Remove core from each quarter.
- Cut each quarter crosswise into 1-inch slices.
- In nonstick 12-inch skillet, heat brown sugar with butter over medium heat until melted, stirring to combine.
- Add pineapple to skillet; arrange in single layer.
- Cook pineapple 15 minutes, turning pieces over once.
- Prepare Rum Cream: In medium bowl, with mixer at high speed, beat cream until soft peaks form.
- Add confectioners' sugar and rum and beat just until stiff peaks form.
- Sprinkle cake with confectioners' sugar.
- Serve cake with Caramelized Pineapple and Rum Cream.
