SALTED CARAMEL NUTS

Salted Caramel Nuts image

Provided by Ina Garten

Categories     dessert

Time 35m

Yield 8 cups

Number Of Ingredients 5

1 cup each whole roasted salted cashews, whole large pecan halves, whole unsalted almonds, and whole walnut halves (4 cups total)
1 1/2 cups sugar
2 teaspoons pure vanilla extract
2 teaspoons kosher salt
1 teaspoon fleur de sel

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the nuts on a sheet pan, spread them out, and roast them for 7 minutes, until they become fragrant. Set aside to cool.
  • After the nuts are cooled, place the sugar and 1/4 cup of water in a medium (10-inch) saute pan and mix with a fork until all of the sugar is moistened. Cook over medium-high heat until the sugar melts -- from this point on, don't stir the caramel, swirl the pan! Don't worry -- the mixture may look as though it's crystallizing. Continue to cook for 5 to 10 minutes, until the mixture becomes a clear golden brown, swirling the pan constantly at the end. (Careful -- the caramel is very hot!) Off the heat, quickly add the vanilla (it will bubble up!) and swirl the pan to combine. Working quickly (the caramel will continue to cook in the pan), add the nuts and the kosher salt and toss with 2 large spoons until the nuts are completely coated.
  • Pour the nuts and any extra caramel in the pan onto a sheet pan lined with parchment paper. Spread the nuts out in one layer, pulling them apart with two forks. Sprinkle with the fleur de sel and set aside to cool. When they're completely cooled, carefully break the nuts into large clusters with your hands, trying not to break the nuts too much.

CARAMELIZED PEANUTS

Caramelized Peanuts image

Adapted from The Perfect Scoop You can easily cut the recipe in half, although I don't think you'll have any trouble finishing off a whole batch. I've made this many times using raw almonds, but if you want to experiment with other nuts, I'd be interested in hearing how they turn out. I think round nuts work best so the sugar can tumble around and coat them, rather than get stuck in any pecan-like nooks and crannies.

Provided by David

Number Of Ingredients 5

2 cups (275g) raw or roasted (unsalted) peanuts
1 cup (200g) sugar
1/3 cup (75ml) water
a sprinkle of coarse sea salt
optional: ground cinnamon or chili powder

Steps:

  • In a wide, heavy-duty skillet, mix the peanuts with the sugar and water. Cook the ingredients over moderate heat, stirring almost non-stop, until the sugary liquid begins to crystallize. (You'll think you made a mistake, but you didn't.) It will take a few minutes.
  • Keep stirring until the sugar gets sandy and dry around the peanuts.
  • Lower the heat and keep going, scraping up any syrup collecting in the bottom of the pan and stir the peanuts in it, coating them as much as possible. As you go, tilt the pan, removing it from the heat from time-to-time to regulate and control the heat and the syrup, so you can coat the nuts with the liquid as it darkens without burning the peanuts or the syrup. This is the only tricky part-I like to get the peanuts as deeply-bronzed as possible. If the mixture starts to smoke, simply remove it from the heat and stir further, coating the nuts.
  • Right before they peanuts are done, sprinkle them with a flurry of flaky salt (and pinch of cinnamon or chili powder, if you want), stir them a couple of times, then tilt the peanuts out onto a baking sheet or a marble countertop.
  • Let the peanuts cool completely, breaking up any clumps as they cool. Store in an airtight container. The peanuts will keep for up to a week.

5 MINUTE PERFECT CARAMELIZED NUTS

5 Minute Perfect Caramelized Nuts image

Provided by Jen

Time 5m

Number Of Ingredients 3

1 cup whole nuts (despite the pics)
1/4 cup sugar
1 tablespoon butter

Steps:

  • Add nuts, sugar, and butter to a large nonstick skillet and heat over medium heat. Stir constantly with a rubber heat-proof spatula until the sugar melts into the butter and completely coats the nuts, turning the heat down as needed, approximately 5-7 minutes.
  • Immediately transfer nuts to parchment paper and immediately separate using 2 forks OR let the nuts harden together and break them apart with your fingers once cooled. The nuts and coating will harden in 5-7 minutes. Chop the nuts if desired.

CANDIED PEANUTS (CARAMELIZED PEANUTS)

Candied Peanuts (Caramelized Peanuts) image

A recipe I found About.com under the Moroccan food section for snacks. Here is what was stated about the recipe: "Candied peanuts - or caramelized peanuts - are a popular Moroccan snack sold by street vendors and small shops which also offer roasted hummus, nuts, sunflower seeds, and other treats. Caramelized peanuts are fairly easy to make at home, but you'll need to be patient and work over a low heat to avoid burning the sugar as it caramelizes." I definitely recommend the addition of the salt if you want a sweet and salty peanut.

Provided by diner524

Categories     Nuts

Time 25m

Yield 16 serving(s)

Number Of Ingredients 4

2 cups raw peanuts, with skin
1 cup sugar
1/3 cup water
1 pinch salt (optional, but I will add more then a pinch for that sweet or salty combo)

Steps:

  • Combine the sugar and water in a skillet. Cook over medium heat, stirring constantly, until the mixture thickens into a syrup.
  • Add the peanuts and continue stirring for about 10 minutes, or until the liquids evaporate and a sandy-textured sugar mixture coats the peanuts.
  • Lower the heat and continue stirring as the excess sugar in the pan begins to melt. This will take another several minutes. Once the syrup begins to form, it will turn from clear to golden to amber. Stir constantly, and be careful that the heat is not so high as to burn or darken the syrup too much.
  • When the syrup is a medium amber color and the sugary coating on the peanuts has glazed, add the salt if using and turn the peanuts out into your prepared pan. Spread the candied peanuts into a single layer to cool.
  • Be sure the caramelized peanuts are completely cool before storing in an airtight container.

STOVETOP CARAMELIZED PECANS

Stovetop Caramelized Pecans image

It's easy to make caramelized pecans, right on your stove! You can customize these pecans to have sweet, salty, and spicy flavors, to your personal preferences.

Provided by Amanda Biddle

Categories     Snack

Time 1h5m

Number Of Ingredients 3

1/2 cup light brown sugar
2 tablespoons water
2 cups halved pecans

Steps:

  • In a nonstick skillet over medium high heat, melt together brown sugar and water until rapidly bubbling. Add pecans, stirring thoroughly to coat. Cook, stirring, for 3-4 minutes, until fragrant and most of the liquid has evaporated. (But not so long at the sugars burn.)
  • Spread pecans into a single layer onto a parchment-lined baking sheet, and use a fork to separate them. Let stand at room temperature for about an hour, until fully cooled, set, and dry. (Pecans will be only very slightly tacky to the touch.)
  • Break apart any pecan clusters and store in an airtight container at room temperature for up to a week, in the refrigerator for a couple of weeks, or in the freezer for up to 2 months.

  • Place a heavy sauce pot (a cast iron one works well) over high heat with the water and sugar. Add food coloring if you wish to use it. I used 5 drops. Mix well.
  • When the mixture begins to boil add the peanuts. It is important to stir the mixture all the time, especially when the bubbles that are forming begin to be larger and take longer to break. This step will take about 8 to 9 minutes until the liquid reduces.

  • Butter a large baking sheet; set the baking sheet aside. In a small saucepan melt 1 Tbsp. butter over low heat. Stir in the chopped peanuts, pepitas, and crushed red pepper; keep warm over low heat.
  • To caramelize the sugar, in a heavy 10-inch skillet heat sugar over medium heat until sugar begins to melt, shaking skillet occasionally to heat sugar evenly. Do not stir until sugar starts to melt. Once sugar starts to melt, reduce heat to low. Stir occasionally with a wooden spoon, gradually incorporating the unmelted sugar into the melted sugar until all is melted and golden brown. Reduce heat if syrup browns too rapidly before all the sugar melts, about 12 to 15 minutes.
  • Remove the skillet from the heat; quickly stir in the warm nut mixture. Immediately pour the mixture onto the prepared baking sheet.
  • If desired, working quickly, stretch the candy by using two forks to lift and pull the candy as it cools. Pull gently to avoid tearing the candy (candy will set up quickly). Cool completely. Break the candy into pieces. Store tightly covered.

  • Add the banana slices to the pan. Make sure you leave enough space in between them, so that they do not stick to each other.
  • Cook the banana about about 3-5 minutes on each side. You can gently lift the bananas with a fork to check how far they have cooked, and flip them when they have caramelized to your liking.
