CARAMELIZED PEACHES OR NECTARINES

Caramelized Peaches or Nectarines image

My neighbors peach tree is overflowing in my backyard and dripping with large peaches. I'm on a hunt to get recipes to use them before my dogs eat them all! This can be served over ice-cream over pancakes or crepes and is from Epicurious. (If using Peaches, you must skin them first)

Provided by cookiedog

Categories     Low Protein

Time 21m

Yield 4 serving(s)

Number Of Ingredients 4

1 tablespoon unsalted butter
1 1/2 lbs nectarines or 1 1/2 lbs peaches
1 tablespoon fresh lemon juice
2 tablespoons muscovado sugar or 2 tablespoons dark brown sugar

Steps:

  • Set a strainer over a bowl and cut the nectarines into the strainer, so their juice collects in the bowl.
  • Heat the butter in a non-stick skillet over medium heat.
  • When it is hot but not smoking, add the nectarines and sauté them until they sizzle and their juices reduce and begin to thicken, 2 to 3 minutes.
  • Sprinkle the sugar over them and sauté until the juices further thicken and the sugar caramelizes slightly, about 1 minute. You may want to increase the heat under the pan to medium-high.
  • Add the lemon juice and sauté until the juices thicken, then add any nectarine juice that collected in the bowl, and shake the pan so that all is well blended.
  • Let the nectarines cook, shaking the pan occasionally, until the juices are very thick, which will take a minute or so. The total cooking time will be about 6 minutes.
  • Transfer the nectarines to 4 warmed dessert plates, or to a warmed serving dish, let sit for about 4 minutes so they are not blistering hot when served.

CARAMELIZED PEACHES

Caramelized Peaches image

Provided by William Grimes

Categories     easy, dessert

Time 20m

Yield 4 servings

Number Of Ingredients 6

1 29-ounce can peaches in heavy syrup (about 8 peach halves and 1 cup of syrup)
1/2 cup heavy cream
1 tablespoon Cognac
1 tablespoon fresh lemon juice
4 slices ( 1/2 inch thick) brioche or pound cake
2 tablespoons coarsely chopped pistachio nuts

Steps:

  • Drain peaches, pouring syrup into a skillet. Place skillet over high heat. Cook until syrup is caramelized (thick and light golden brown), about 10 minutes, stirring gently toward end of cooking so caramel does not burn around edges.
  • Add peaches to caramel. Stir in cream. Bring to a boil, stirring occasionally. Boil 1 to 2 minutes. Transfer to bowl, and allow to cool.
  • Stir in Cognac and lemon juice. If mixture is too thick, add 1 to 2 tablespoons water. Cover, and refrigerate until serving.
  • To serve, toast brioche slices, and place one on each of four dessert plates. Arrange 2 peach halves on top of each slice, and top with a spoonful or two of sauce. Sprinkle with pistachios, and serve.

  • Prepare the grits: In a medium pot (about 2 quarts), combine the milk, water, and sugar. Heat over medium-high heat until almost boiling (you'll see steam coming off the surface). Gradually add the grits while whisking constantly. Lower the heat to medium-low and continue to cook for about 3-5 minutes until the grits have thickened a little, stirring frequently. Remove from heat and allow to stand for 5 minutes, stirring frequently, until thickened to your liking. Allow to stand for 5 more minutes before serving to cool down.
  • Prepare the caramelized peaches (start on these while the grits are cooking): In a small saucepan, melt the butter and add the diced peaches, cinnamon, and vanilla bean powder. Cook over medium heat for about 3 minutes, stirring frequently. Add the brown sugar and water, stir, and continue to cook for about 2 minutes, or longer if you prefer softer peaches. Remove from heat.
  • Serve the grits: Pour the grits into 2 bowls (or 4 bowls if serving kids) and top each bowl with the caramelized peaches, making sure to get the brown sugar syrup into each bowl.

43 PEACH RECIPES THAT MAKE THE MOST OF SUMMER'S JUICIEST ...

From epicurious.com
  • Peaches and Tomatoes With Burrata and Hot Sauce. Two of the best summer fruits combine in one of our favorite peach recipes, and creamy burrata helps soak up some of the sweet and spicy juices.
  • 3-Ingredient Pesto-Grilled Chicken with Peaches. This 3-ingredient wonder comes together quickly with the use of store-bought pesto—which acts as both a marinade and a sauce.
  • 3-Ingredient Peach Crisp with Granola Topping. One simple hack makes this summer favorite as easy as pie: Just use store-bought granola for the topping.
  • Peaches and Shaved Fennel Salad with Red Pepper. Combining juicy sweetness and cool crunch, this peach recipe has summer written all over it. It's best made at the peak of the season, too, when peaches are at their sweetest.
  • Peach Parfait With Salted Graham Cracker Crumble. A little butter and a sprinkle of salt takes graham crackers to another level entirely in this deeply satisfying dessert, which combines that cracker crunch with warm peaches, tart berries, and whipped cream.
  • Savory Peach and Cucumber Salad. The intriguing combination of fruits in this summery salad—juicy peaches, crunchy cukes, and buttery avocado—is brought together with a dressing that combines the warm flavors of cardamom and clove with the heat of a serrano chile.
  • 3-Ingredient Ginger-Peach Ice Cream Floats. Poaching peaches in ginger beer infuses them with sweet, spicy flavor. Layer the poached fruit with ice cream and top with more ginger beer for a fun new take on a classic float.
  • Cucumber and Peach Salad with Herbs. This cooling salad would be a terrific venue for any heirloom varieties of cucumbers you pick up at the market—but it works just as well with a mix of mini and English hothouse cukes.
  • Peach-Plum Galette. Use any stone fruit that looks good to you, or combine two or three types as long as the total weight is two pounds. We love it with peaches paired with nectarines, but it's also great with a mix of plums or apricots and cherries.
  • Pork Tenderloin with Peach-Mustard Sauce. In this recipe from Georgia chef Bryan Furman, puréed peaches—the riper, the better—bring a little sweetness to mustard-based barbecue sauce.
