Steps:
- Preheat the oven to 350 degrees F.
- Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.
- Heat the oil in a large skillet set over medium heat. Add the onions and cook, stirring occasionally and lowering the heat if the onions begin to burn, until golden, about 30 minutes.
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Add the onions. Mash the potatoes and onions with the milk and butter using a fork or potato masher. Stir in the roasted garlic and 2 teaspoons salt; season with pepper.

CARAMELIZED ONION AND COARSE-GRAIN MUSTARD MASHED POTATOES
From the Trenton Times: Caramelized onions practically melt into the warm potatoes, and coarse-grain mustard adds a pretty golden-flecked hue and subtle flavor. Cook time does not include time to make caramelized onions. I have made this using a combination of red potatoes and red gold potatoes and I don't bother to peel them. I also prefer to caramelize the onions in the crockpot on high for 3-4 hours.

Lower heat and sprinkle with 1/4 tsp salt and a pinch of granulated sugar. Cook 20 minutes or until deep golden brown, stirring frequently. Lower heat if necessary to keep onions from burning. These freeze beautifully, so you can make extra to freeze for later use.

- Peel the potatoes and chop them up into small pieces. Fill a high pan with water and add a good dash of salt to it. Then place the pan over high heat and add the chopped potatoes to the water.
- Cook the potatoes for about 20 minutes or until tender. In the meantime peel and slice the yellow onion and garlic cloves. Add them to a non-stick pan together with a tablespoon of the butter. Season with a little pepper and salt.
- Place the pan over medium-high heat and cook the onion for 15 to 20 minutes until soft and golden brown. Then turn the heat a little lower if necessary. Keep an eye on it so the onion doesn't burn. Add a drop of water if necessary. Stir regularly. Pour in the balsamic vinegar in the end. Add extra pepper or salt to taste if necessary.
- Cook for another 2 minutes and then take the onions off the heat. Drain the cooked potatoes well and add them back to the pan. Then season with a generous pinch of pepper and salt.
HOW TO CARAMELIZE ONIONS | ALLRECIPES
From allrecipes.com

- Choose Your Onions. I usually use yellow onions, but white or purple will also work. The amount of onions to caramelize is up to you. I find that two to three work well for a large skillet.
- Slice Your Onion. Cut the stem and root ends off the onion. Then halve the onion and cut it into thin slices. The onion should then naturally separate into half-rings.
- Melt Butter in a Skillet. Add three to four tablespoons of fat to a large skillet over medium heat. Butter and olive oil both work well. I like to use a combination of the two, as the butter adds rich flavor and the oil can tolerate higher temperatures without burning.
- Add the Onions and a Pinch of Salt. The salt will season the onions, but it will also help pull out some of the moisture and move the process right along.
- Deglaze. If the onions stick to the bottom of the pan, deglaze with a tablespoon of red wine vinegar, balsamic vinegar, or wine. I usually stick with balsamic vinegar because the flavor complements the onions perfectly.
