1 medium onion, sliced
1 tablespoon butter
1 to 2 teaspoons sugar
1 teaspoon Worcestershire sauce
1-1/3 cups beef broth
1 tablespoon white wine or water
Coarsely ground pepper to taste
2 slices French bread (1 inch thick)
1/3 cup shredded Swiss cheese
3 tablespoons grated Parmesan cheese

Steps:

  • In a saucepan, saute onion in butter until tender. Sprinkle with sugar and Worcestershire sauce; cook and stir for 13-15 minutes or until onion is caramelized. , Add the broth, wine or water and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Place bread on an ungreased baking sheet. Broil 4 in. from the heat until toasted. Turn; sprinkle with cheeses. Broil until cheese is melted and bubbly. Ladle soup into bowls; top with toast.

About as good as it gets! This is the version of French Onion Soup that people seek when they go to restaurants. I have been making it for 30 years and it never fails to please. It makes an exquisite presentation, too!

4 tablespoons butter
1 teaspoon salt
2 large red onions, thinly sliced
2 large sweet onions, thinly sliced
1 (48 fluid ounce) can chicken broth
1 (14 ounce) can beef broth
½ cup red wine
1 tablespoon Worcestershire sauce
2 sprigs fresh parsley
1 sprig fresh thyme leaves
1 bay leaf
1 tablespoon balsamic vinegar
salt and freshly ground black pepper to taste
4 thick slices French or Italian bread
8 slices Gruyere or Swiss cheese slices, room temperature
½ cup shredded Asiago or mozzarella cheese, room temperature
4 pinches paprika

Steps:

  • Melt butter in a large pot over medium-high heat. Stir in salt, red onions and sweet onions. Cook 35 minutes, stirring frequently, until onions are caramelized and almost syrupy.
  • Mix chicken broth, beef broth, red wine and Worcestershire sauce into pot. Bundle the parsley, thyme, and bay leaf with twine and place in pot. Simmer over medium heat for 20 minutes, stirring occasionally. Remove and discard the herbs. Reduce the heat to low, mix in vinegar and season with salt and pepper. Cover and keep over low heat to stay hot while you prepare the bread.
  • Preheat oven broiler. Arrange bread slices on a baking sheet and broil 3 minutes, turning once, until well toasted on both sides. Remove from heat; do not turn off broiler.
  • Arrange 4 large oven safe bowls or crocks on a rimmed baking sheet. Fill each bowl 2/3 full with hot soup. Top each bowl with 1 slice toasted bread, 2 slice Gruyere cheese and 1/4 of the Asiago or mozzarella cheese. Sprinkle a little bit of paprika over the top of each one.
  • Broil 5 minutes, or until bubbly and golden brown. As it softens, the cheese will cascade over the sides of the crock and form a beautifully melted crusty seal. Serve immediately!

Old is new again with this new twist on classic French onion soup. Mushrooms and blue cheese add a decadent and unforgettable twist to classic French onion soup. Creamy caramelized onions and a medley of mushrooms sautéed in butter are finished in a rich beef broth. Top it all with broiled blue cheese and Gruère croutons and you'll have guests begging for more. This recipe is perfect for a large crowd because it is easy to double or triple.

2 tablespoons butter
1 cup chopped mixed wild mushroom (cremini, shiitake, and oyster)
1 cup thinly sliced onion
1 1/2 teaspoons fresh thyme, chopped (optional)
1 tablespoon all-purpose flour
2 tablespoons 35% cream
2 cups beef stock, reduced sodium
4 1/2 inches thick slices baguette
1/2 cup gruyere cheese
2 tablespoons blue cheese, crumbled
1 tablespoon chives, finely chopped

Steps:

  • I a medium sauscepan, melt butter over medium-low heat; sauté mushrooms, onion and thyme, if using for 10-12 minutes or until lightly csaramelized.
  • Stir in flour to absorb butter; slowly stir in cream, Increase heat to high, sitr in stock and bring to a boil. Reduce heat and simmer, stirring occasionally, for 20 minutes or until flavours are blended. (to make ahead, prepare the soup up to this point, let cool and refrigerate in an airtight container for up to 1 day. Reheat gently until hot and proceed as follows).
  • Lightly toast baguette slices in a toaster; set aside. Preheat broiler. Place ovenproof soup bowls on baking sheet and ladle soup into bowls. Top each bowl with two baguette slices and sprinkle with Gruyère and blue cheeses. Broil for about 2 minutes or until cheese is lightly browned and bubbly. Place bowls on serving plates with chopped chives. Be sure to warn your guests the bowl is ultra hot.

8 red potatoes, cubed
5 ounces fresh spinach leaves
¼ cup butter
1 onion, sliced
1 teaspoon minced garlic
3 tablespoons all-purpose flour
½ teaspoon salt
1 cup milk
1 cup heavy cream
2 cups shredded Muenster cheese

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Combine the potatoes and spinach in a 9x13-inch baking dish; set aside.
  • Melt 3 tablespoons of butter in a saucepan over medium-low heat. Stir in the onion, and cook until dark brown, about 15 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Add butter and when melted, add flour. Cook and stir until golden, 2 to 3 minutes. Season with salt, and stir in the milk and cream. Bring to a simmer over medium heat; cook and stir until the sauce has thickened, about 10 minutes. Stir in 3/4 of the Muenster cheese until melted, and pour over the potatoes.
  • Cover the potatoes with aluminum foil, and bake in the preheated oven 30 minutes. Uncover, and cook 20 minutes more, then sprinkle with the remaining Muenster cheese, return to the oven, and bake until the potatoes are tender and the cheese is bubbly, about 10 minutes more.

Also known as "carabaccia", this is a local specialty in Florence, and is hard to find even in cookbooks specializing in Italian soups! The effect should be rich and somewhat sweet (but not too much). Adding roasted garlic would be a good variation.

¼ cup extra virgin olive oil
4 pounds onions
2 teaspoons white sugar
salt to taste
1 (750 milliliter) bottle dry white wine
1 quart chicken broth
1 small cinnamon stick
4 cups cubed, stale French or Italian bread

Steps:

  • In a large heavy pot, heat oil over medium heat. Cut onions in half lengthwise, then slice thinly. Place sliced onions in pot and toss to coat with oil. Cover, reduce heat to medium-low, and cook, stirring occasionally, until onions are softened and beginning to color, 30 minutes.
  • Increase heat to medium and cook, stirring occasionally, uncovered, until onions are amber in color, 45 minutes.
  • Sprinkle onions with sugar and a little bit of salt; cook, stirring, until sugar melts and onions are caramel colored, 5 minutes. Pour in wine and broth, and place cinnamon stick in pot. Bring to a boil, then reduce heat, cover and simmer 1 hour.
  • Stir the bread into the soup and cook, uncovered, stirring occasionally until the bread disintegrates, 30 to 45 minutes.
  • Remove the cinnamon stick. Whisk the soup to incorporate the bread. Adjust seasoning. Serve hot.

  • In a 3- to 4-quart pan, combine onion, shallots, butter, and Splenda over medium heat.
  • Cook, stirring often, until onion is slightly caramelized and tastes very sweet, about 35 minutes.
  • (If onion begins to brown too quickly, reduce heat to medium-low.) To pan, add broth and sherry.
