INSTANT POT ARKANSAS PIG SOOIE DIP
A savory hot ham dip with caramelized onions, hot sauce, cream cheese and white cheddar. Serve with tortilla chips, crackers or baguette slices for a perfect game day or party snack.

- Turn Instant Pot to sauté setting. When display says HOT add in the butter and let melt. Add in the onions and baking soda and toss. Cook until the onions start releasing moisture and turning yellow (only takes 2-3 minutes). Pour in the water (if using 3 quart pot add in ¼ cup water, if using 6 quart add in ½ cup water). Scrape bottom of pot so that nothing is sticking.
- Turn off the sauté setting. Dump the cream cheese on top of the onions. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting to release pressure. Remove the lid.
- Stir in the ham, white cheddar, monterey jack, paprika, hot sauce and green onions until melted and smooth.
- Serve with tortilla chips, crackers, baguette slices or raw vegetables. Keep warm in the Instant Pot on the keep warm setting.

- Stir onion, mayonnaise, and mozzarella cheese together in a casserole dish; season with salt and pepper.

CARAMELIZED ONION AND BACON DIP
Steps:
- Preheat the oven to 400°F.
- In an oven-safe skillet (8-10 inches), cook bacon over medium-high heat.
- Remove bacon from the skillet and place on a plate lined with a paper towel to let cool. Do not clean out the skillet.
- To the skillet with bacon grease, add the onions and sugar. Cook 20 minutes over medium heat, stirring often. (When onions start to stick to the pan, scrape them up.)
- Add the wine. Cook down to half (2-3 minutes).
- Add the sour cream, cream cheese, Worcestershire sauce, 1 cup shredded cheese, salt, and pepper.
- (If you want a thicker dip, move the ingredients to a smaller over-safe dish, such as a 6 inch skillet. If you don't mind a thinner dip, continue on with the skillet you cooked everything in thus far.)
- Crumble the cooked bacon and add most of it to the cream cheese mixture, reserving a little for the topping.
- Top with the remaining cup of cheese and reserved bacon.
- Bake for 20 minutes, or until the cheese is hot and bubbly. Garnish with parsley before serving.
- Serve warm with baguettes, pretzels, chips, crackers, or bagel crisps.

- Heat a heavy bottomed medium pot or deep skillet over medium heat. Melt butter in pot and add onions, raising heat slightly. Add bay, thyme, salt and pepper to onions and cook, stirring occasionally, until onions are soft and caramel in color, 20 minutes.
- While onions cook, slice apples and douse with a little lemon juice to slow browning. Arrange the apples and bread on a board or platter.
- When onions are soft and sweet, add flour and cook a minute. Whisk in wine, cook a minute then whisk in half-and-half. When the liquid comes up to a bubble, season with nutmeg and cloves and adjust salt and pepper, to taste. Stir in Cheddar and melt then remove from heat and serve in fondue pot or transfer to a small, warmed sauce pot which you can return to the stove top to reheat sauce as necessary. Dip apples and bread in warm cheesy sauce and enjoy.
