BRILLIANT POTATOES WITH PAPRIKA AND CARAMELIZED ONIONS

Brilliant Potatoes With Paprika and Caramelized Onions image

I love potatoes in all forms, but this is my all time favorite. I have been making it since I was a teenager, and everyone in the family always requests it when I make dinner. I have shortened the prep time using canned, whole, white potatoes, instead of boiling my own. The results are just as delicious. If you are opposed to canned potatoes, use fresh, boiled potatoes. These potatoes make fantastic leftovers too! This is the first time I have ever given out the recipe. I hope you all enjoy it as much as we do!

Time 1h10m

Yield 10

Number Of Ingredients 10

3 tablespoons canola oil
2 large Vidalia or other sweet onions, roughly chopped
4 (15 ounce) cans whole new potatoes, drained
3 tablespoons extra-virgin olive oil
¾ teaspoon garlic salt
¼ teaspoon garlic powder
¼ teaspoon dried minced garlic
2 tablespoons paprika
¼ teaspoon black pepper
½ cup butter, at room temperature

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
  • Heat the canola oil in a large skillet over medium heat, then stir in the Vidalia onion. Cook and stir until the onion has softened and turned deep brown, 10 to 15 minutes. While the onions are caramelizing, toss the drained potatoes with the olive oil in a large bowl. Season with garlic salt, garlic powder, dried minced garlic, and black pepper; toss until well coated, then pour into the prepared baking dish, and spread into a single layer.
  • Sprinkle the caramelized onions on top of the potatoes, then dot the top of the dish with the room temperature butter, and sprinkle with paprika. Bake uncovered in the preheated oven until the outsides of the potatoes are crisp, 45 to 55 minutes.

CARAMELIZED ONION AND POTATO SOUP

Categories     Potato

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 4

3 tablespoons oil
6 onions, sliced thin
4 cups vegetable broth
4 cups potatoes, cut into bite sized chunks

Steps:

  • Heat the oil in a pressure cooker (without lid) over medium heat. Add the onions and cook for quite a long time to caramelize. The exact timing will depend on how sweet your onions are. Mine weren't sweet at all so the process took about 40 minutes. The way to caramelize is to cook the onions slowly over medium heat - perhaps adding a bit of veggie broth if they start to stick to the pan. You're looking for a nice deep brown color both on the onions and on the pan- that's the sugar coming out of the onion.
  • After the onions are nice and brown and the bottom of the pan is looking very brown add the potatoes. Stir and cook for about 5 minutes - to give the potatoes a bit of that nice roasted flavor.
  • Cover with the veggie broth. Raise the heat to high and lock on the pressure cooker lid. Bring to high pressure, then immediately turn off the heat. Allow the pressure to reduce naturally. Remove lid.
  • Using an immersion blender, blend the soup thoroughly. Serve immediately - maybe with some nice crusty bread.

  • First, you’ll want to caramelize your onions. Melt butter in a sauté pan over medium-low heat. Add sliced onions and cook, low and slow and stirring occasionally, until onions take on that beautiful caramel color. This may take up to 30 minutes. Be patient! You don’t want to cook the onions too fast and give them a burnt flavor.
  • Once onions are sufficiently caramelized, add them to a large stockpot along with potatoes, chicken stock and peeled, whole garlic cloves. Bring to a boil, then reduce to medium heat and simmer until potatoes are tender when you poke them with a fork. Reduce heat to low.
  • Use either an immersion blender or transfer the soup to a regular blender and purée until there are no longer any chunks. Transfer back to the stockpot on low heat (if using a regular blender), stir in heavy cream (if using) and season with salt and pepper to taste. Keep soup simmering on low while you make some crispy prosciutto to top it off!
  • Heat a small nonstick sauté pan over medium-high heat. Once pan is hot, add slices of prosciutto and cook until crisp, flipping when necessary. Transfer to a cutting board and chop prosciutto into little pieces.

  • Trim the ends of the onion, remove the peel, and slice in half. Lay the onion cut side down on your cutting board and thinly slice into ¼” slices using a sharp knife or madonline. Set aside.
  • Heat a dutch oven over medium heat; add the ghee or butter and allow it to melt. Add the onions to the pot plus a pinch of salt, then stir to coat the onions in the fat.
  • Saute the onions over medium heat, stirring every 5 minutes or so, until the onions soften, then brown, then caramelize. If the pot gets too dry and the onions start to burn and/or stick, add a bit of water or broth to deglaze the pan and keep the onions moist. I typically add up to ¼ cup of liquid during the caramelization process. Caramelization takes time, anywhere from 30-40 minutes. The onions are done when they are uniformly deep, golden brown.
  • While the onions are caramelized, dice the potatoes and set aside. I leave the skins on, but you can peel if desired. Chop the garlic and herbs, and set aside separately.
