Time 1h

Number Of Ingredients 17

2 large onions (cut in half, then thinly sliced)
2 tablespoons unsalted butter
1 tablespoon olive oil
1/2 teaspoon chopped fresh thyme
1 tablespoon sugar
1/2 teaspoon kosher salt (divided)
2 teaspoons balsamic vinegar
4 ounces softened cream cheese
1/2 cup parmesan cheese
6 ounces gruyere cheese (shredded)
1/3 cup sour cream
1/3 cup mayonnaise
3/4 cup half-and-half
2-3 cloves garlic (minced)
1/4 teaspoon black pepper
1/2 teaspoon kosher salt
1-2 baguette(s) (sliced and toasted for serving)

Steps:

  • In a large non-stick skillet (or cast iron pan) melt the butter and olive oil over medium heat. Add the sliced onions and cook for about five minutes stirring as necessary. Then add in the thyme, sugar, and half of the salt.
  • Stir to combine and cook until the onions are soft and golden brown. This will take about 20 minutes. Remove the onions from the heat; add in the balsamic vinegar. Stir to combine. Set aside to cool slightly.
  • Preheat your oven to 400 degrees F.
  • In a large bowl, stir together the cream cheese, parmesan cheese, gruyere cheese, sour cream, mayonnaise, half-and-half, garlic, black pepper, and remaining salt. After the onions have cooled slightly, stir them into the cheese mixture to combine.
  • Spray a medium cooking dish with cooking spray and then fill it with your cheese and onion mixture.
  • Bake for about 25-30 minutes or until golden and bubbly.
  • Serve hot with sliced, toasted baguettes.

CARAMELIZED ONION AND BACON DIP

Caramelized Onion and Bacon Dip image

Caramelized Onion and Bacon Dip is a warm, cheesy, addicting dip that is loaded with caramelized onions and bacon.

Provided by Amanda Rettke--iamhomesteader.com

Categories     Appetizer     Snack

Time 1h

Number Of Ingredients 11

8 strips bacon
2 large yellow onions, (thinly sliced)
1 teaspoon granulated sugar
3 tablespoons white wine
½ cup sour cream
3 ounces cream cheese, (room temperature)
½ teaspoon Worcestershire sauce
2 cups Gruyere cheese, (shredded and divided)
½ teaspoon kosher salt
¼ teaspoon black pepper
parsley, (for garnish)

Steps:

  • Preheat the oven to 400°F.
  • In an oven-safe skillet (8-10 inches), cook bacon over medium-high heat.
  • Remove bacon from the skillet and place on a plate lined with a paper towel to let cool. Do not clean out the skillet.
  • To the skillet with bacon grease, add the onions and sugar. Cook 20 minutes over medium heat, stirring often. (When onions start to stick to the pan, scrape them up.)
  • Add the wine. Cook down to half (2-3 minutes).
  • Add the sour cream, cream cheese, Worcestershire sauce, 1 cup shredded cheese, salt, and pepper.
  • (If you want a thicker dip, move the ingredients to a smaller over-safe dish, such as a 6 inch skillet. If you don't mind a thinner dip, continue on with the skillet you cooked everything in thus far.)
  • Crumble the cooked bacon and add most of it to the cream cheese mixture, reserving a little for the topping.
  • Top with the remaining cup of cheese and reserved bacon.
  • Bake for 20 minutes, or until the cheese is hot and bubbly. Garnish with parsley before serving.
  • Serve warm with baguettes, pretzels, chips, crackers, or bagel crisps.

  • First you want to preheat your oven to 350 degrees. Then get out a skillet and heat it on the stove over medium-low (or medium heat depending on your stove).
  • Slice up your onions. Slice the onion in half first and then remove the top and bottom and skin. Slice the onion in 1/4 inch slices. If your onions are really big, also slice the half in half again so the slices are shorter.
  • Add the olive oil to your skillet and add the onions. Peel and mince your garlic and add that as well. Cook the onions till they are translucent, but you don't want them to caramelize. We find that this dip is too sweet tasting with caramelized onions. If you want though, go ahead and try it caramelized. Its your dip! Slide them into a bowl and let them cool slightly.
  • In the same pan, cook your prosciutto slices. They only need 30 seconds or so on each side. Take them out, let them cool slightly, then crumble them into the onions.

  • Heat the butter in a large skillet or pot over medium heat. Once melted, stir in the onions with a big pinch of salt and pepper. Cook for 5 minutes, just until the onions begin to soften. Turn the heat down to low (or medium-low, if low isn’t cooking them), and cook, stirring often, until the onions are dark brown and caramely, anywhere from 30 to 60 minutes, depending on how much you want to babysit them. This will take a while, but the onions are in smaller pieces, so are also more apt to burn. Keep an eye on them and stir often, reducing the heat when needed. Add a splash of water to the pan if it gets dry at any time.
  • Let the onions cool slightly before adding them to the dip. Alternately, you can also caramelize the onions a day or two ahead of time! I will caramelize them and store them in a container in the fridge. I do reheat them on low heat (either in a pan or microwave) just to warm the solids up a bit.
  • Whisk together the sour cream, mayo, garlic powder and a big pinch of salt and pepper. Once the onions are caramelized, stir them in. Continue to stir until everything is combined - it will come together. Taste the dip and if you need more salt, add it in.
  • This stays great in the fridge if you make it ahead of time - it will thicken up a bit. It is also great served immediately. Serve with chips, crackers, pretzels, veggies - anything!

  • Heat the oil and butter in a large cast iron skillet over medium heat. Add the onions and let sauté for 5 minutes, stirring as required. Add the thyme and sugar and continue to cook for 20-25 minutes on medium-low heat. Be sure to stir the onions every 5 minutes so they caramelize evenly. If at any point the onions are caramelizing too fast, turn down the heat to the low setting. Add the balsamic vinegar to deglaze the pan, allow the onions to soak it all in. Remove from heat.
  • Spray the inside of your slow cooker with cooking spray so the dip doesn't stick to the sides. Add the caramelized onions, cream cheese, sour cream, mayonnaise, milk, garlic, red pepper flakes, black pepper, and parmesan. Allow the dip to cook, covered for 2 - 2 ½ hours on the high heat setting. Check and stir as required.
  • When 20-25 minutes remaining, add the shredded gruyere on top. Keep in mind the gruyere will NOT brown and bubble in the slow cooker. It will however melt and become stringy. For a bubbly top, transfer the dip to a buttered baking dish, then top with gruyere and allow the cheese to melt under the broiler for a few minutes.

  • Peel the onions. I chop one of them. I halve the next, and thinly slice. I quarter the last one, and thinly slice. This gives me a nice variety of texture in the finished dip and avoids the 'stringly onion' syndrome that can happen with classic onion dip :)
  • Melt the butter and oil over medium heat in a large Dutch oven and add the onions. Cook them until they start to soften, stirring often. About 5 minutes.
  • Now you'll continue to cook the onions, uncovered, over medium heat, for as long as it takes to caramelize them: this will be about an hour. You'll want to stir every so often. The key here is that you don't want them to brown right away, you want them to soften and lose their moisture. The heat should be high enough to cook them, but not so high that they're browning on the bottom of the pan (this will happen at the very end of the caramelization process.) The onions will release moisture first, then SLOWLY turn from golden to brown. Your nose will tell you when it's close. (See tips in the post for more details.)

  • In a large non-stick skillet, cook the bacon over medium heat until crisp. Transfer the bacon to a paper towel lined plate to drain. Discard the bacon grease and lightly wipe out the skillet with clean paper towels.
  • Add the butter and vegetable oil to the skillet and heat over medium-high. When the foaming subsides, add the brown sugar and salt and stir until dissolved. Add the onions and stir to combine. Cook, stirring frequently, until the onions start to soften, about 5 minutes. Reduce the heat to medium / medium-low and continue cooking, stirring occasionally, until the onions are softened and dark brown in color, about 30 minutes. Set aside to cool slightly.
  • Reserve ¼ cup of the shredded Gruyére and set aside. In a medium mixing bowl combine the remaining cheese, mayonnaise, sour cream, pepper, crushed red pepper, and 1 tablespoon of the chives. Mix well until blended. Finely chop 3 slices of bacon and add to the cheese mixture. Reserve the remaining bacon for topping.
