BONNIE'S GREEN BEANS WITH PINE NUTS AND BACON
I have been making this recipe more years than I can remember. It is an old standby company worthy recipe, and a perfect substitution for that green bean casserole for the holidays. It is a beautiful dish, so fresh and tasty, and once you try it, you will be hooked! Enjoy!

- PREPARE I use the 12 ounce package of Birds Eye frozen tiny green beans which are just perfect for this recipe. Cook them in boiling water until crisp tender and drain. Don't overcook. You may use fresh green beans. If you do use fresh, blanch them about 3 minutes in boiling water, remove and plunge into ice water. Drain. Set aside. Toast the pine nuts in a a large dry skillet over medium heat about 3 minutes or until a light golden brown. Remove and set aside. Wash a lemon for 1 Tbs of zest and 1 Tbs lemon juice, and mince the garlic. Set aside. Fry 5 pieces of bacon crisp and drain on paper towels, then crumble and set aside. Leave one tablespoon of bacon grease in the skillet.
- YOU ARE ALMOST THERE once the prep is done. Over medium heat, add the minced garlic to the hot skillet in the bacon grease. Stir it around for a minute until it releases its flavor, then add the green beans and just toss the beans a couple of minutes to warm them through. (don't overcook) Remove beans from heat. Add lemon juice and zest and 1/4 cup toasted pine nuts . Season with salt and pepper, and add the crumbled bacon. Toss again and serve immediately. Enjoy!

- Saute 1 sliced red onion in a skillet with olive oil, 5 minutes. Add 1 tablespoon olive oil and 1 pound green beans; cook 5 minutes. Add 1/4 cup water and salt and pepper to taste; cook until the beans are tender, 7 minutes. Stir in 3 tablespoons toasted pine nuts; season with salt and pepper.
GREEN BEANS WITH GARLIC AND PINE NUTS
I found this in the New York Daily News and made it for Thanksgiving dinner. It was the only thing I didn't have any leftovers of. I made it with frozen french cut green beans.

Steps:
- Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 3 to 5 minutes.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring for 1 minute. Add the pine nuts and cook until golden brown, about 3 minutes.
- Drain the green beans and transfer to the skillet add ½ teaspoon salt and ¼ teaspoon pepper and toss to coat. Transfer to a serving bowl.
- Make-ahead note: This dish can be prepared up to 2 days in advance. Blanch the green beans by boiling until tender. Plunge them into an ice bath to stop the cooking. Drain and refrigerate, covered until ready to sauté with the garlic and pine nuts. Cook the green beans until heated through.

Steps:
- cut steam end off of 1 lb fresh green beans. (use fresh frozen when out of season).
- in medium sauce pan bring water to a boil. place green beans in mesh strainer and steam them. (should be hot all the way through while retaining garden fresh snap).
- while beans are steaming, melt butter in med saute pan. when butter is lightly caramelized (just turning a light brown color) add pine nuts.
- saute nuts till butter reaches preferred amount of caramelized color. (I like it to be well caramelized, some people don't though.).
- if you want sauce a little thicker just stir in a pinch of arrow root. Be careful with this as it doesn't take much.
- slice cherry tomatoes in fourths.
- plate green beans all in one direction, spoon a little sauce over middle of beans, place a piece of sliced cherry tomato on top.
- makes an attractive addition to any meal.

- Set an oven rack in the middle position and preheat the oven to 450°F. Line a rimmed baking sheet with heavy-duty aluminum foil.
- In a small dry skillet over medium heat, toast the pine nuts until golden. Watch carefully and stir frequently as they can burn quickly! Immediately transfer to small bowl (don't leave them in hot pan as they will continue to cook). Set aside.
- Put the green beans in a large bowl. Add the sliced garlic, olive oil, 1 tablespoon of the lemon zest, kosher salt, pepper and sugar and toss well.
