Steps:
- Spread butter on one side of each slice of bread.
- Add 4 slices, butter side down, to a griddle or large skillet on medium heat.
- Add 2 slices of cheddar cheese.
- Add the remaining bread slices, butter side up (away from the rest of the sandwich).
- Cook for 2 additional minutes, then flip and cook the second side for 4 minutes, pressing down gently.

- In a 10-inch nonstick skillet over mediun-low heat, melt the butter.
- Meanwhile, lightly beat the egg in a small bowl. Scatter the Parmesan on a plate.
- Place all 4 slices bread on your work surface. Lightly brush the top of each slice with the egg and then press each eggy side of the bread into the Parmesan.
- Place 2 slices of bread in the skillet, eggy cheesy side down. Cook until the cheese begins to brown. Then sprinkle the melting cheese on the bread slices in the skillet, divvying the cheese up evenly among the bread. Top with the remaining bread, eggy-cheese side up.
- Continue to cook, flipping each sandwich as necessary to keep it from overbrowning, until the cheese on the outside is crisp and melted and the cheese on the inside is gooey and melted, 2 to 3 minutes. Devour immediately. Originally published April 18, 2018.

CARAMELIZED PEACH, MASCARPONE AND DARK CHOCOLATE GRILLED CHEESE
Steps:
- Heat a large skillet over medium heat and add the butter. Once it melts, add the peach slices and flip once to cover them in butter. Cook for 3 minutes, until the peaches begin to soften, then sprinkle on the brown sugar. Flip the peaches once more so both sides can be covered in sugar. Cook for another 5 to 6 minutes, flipping once or twice more until the peaches are golden and caramely.
- Butter the outsides of the bread slices. Spread the mascarpone on the inside of the bread slices. Assemble the sandwiches by adding the peaches o top of the mascarpone and then the chopped chocolate. Cover with another slice of bread and add to the same skillet over medium heat. Cook until the bread is golden and the mascarpone is melting. Very gently flip the sandwich so the peaches don't fall out.
- note: you can add a little brie cheese on top of the mascarpone if you'd like! I've tried it and it's RIDIC.
GROWN-UP GRILLED CHEESE SANDWICH

- Heat the vegetable oil in a medium saucepan over medium-low heat. Add the sliced onions, salt and pepper and cook, stirring occasionally, until the onions are very soft, about 10 minutes.
- Add the sugar and continue cooking the onions for 5 more minutes.
- Add the balsamic vinegar and reduce the heat to low. Continue cooking the onions, stirring occasionally, for about 15 minutes until they are very soft and dry.
- Slather one side of all four slices of bread with the butter and set them aside.
- Assemble one of the grilled cheese sandwiches by stacking one slice of cheese atop one slice of bread (the non-buttered side) and topping it with half the caramelized onions, half the kale leaves and a second slice of cheese. Top it with another buttered slice of bread (buttered side on top). Repeat the assembly process for the second grilled cheese sandwich.
- Heat a large skillet or sauté pan over medium heat. Place each sandwich on the skillet and cook until the bread is toasted and golden and the cheese begins to melt. Flip each sandwich once and continue cooking until the opposite side of bread is toasted. Slice and serve immediately.

FRENCH TOAST GRILLED CHEESE
Steps:
- Gather the ingredients.
- In a medium-sized bowl, whisk together the eggs, milk, salt, dijon, onion powder, sugar, and pepper until completely combined and cohesive.
- Place one piece of the Swiss cheese on top of a slice of the bread, top with a few slices of ham, and then another slice of Swiss cheese. Top with the second slice of bread. Then repeat with the remaining bread until you have four sandwiches.
- Heat a large griddle or skillet on medium-high heat.
- Dip each sandwich into the egg mixture so that both sides are coated.
- Turn the griddle down to low and add the butter. Coat the griddle with the butter. Place the sandwiches on the griddle and cover each one with a small lid.
- Once that side is browned and the cheese is slightly melted, flip the sandwich and cover with the lid again.
- Once the other side is brown and the cheese is completely melted remove it from the griddle, cut in half, and serve with the raspberry jam or honey mustard.
- Serve with homemade fries or a fresh green salad to make a complete meal. Enjoy!
