5 Minute Perfect Caramelized Nuts image

Number Of Ingredients 3

1 cup whole nuts (despite the pics)
1/4 cup sugar
1 tablespoon butter

Steps:

  • Add nuts, sugar, and butter to a large nonstick skillet and heat over medium heat. Stir constantly with a rubber heat-proof spatula until the sugar melts into the butter and completely coats the nuts, turning the heat down as needed, approximately 5-7 minutes.
  • Immediately transfer nuts to parchment paper and immediately separate using 2 forks OR let the nuts harden together and break them apart with your fingers once cooled. The nuts and coating will harden in 5-7 minutes. Chop the nuts if desired.

1 egg white
3 cups unsalted raw cashews
⅓ cup white sugar
2 teaspoons ground cumin
2 teaspoons salt
1 ½ teaspoons cayenne pepper

Steps:

  • Whisk egg white in a medium bowl until frothy. Mix in cashews until coated. Let soak for 30 minutes.
  • Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
  • Combine sugar, cumin, salt, and cayenne pepper in a small bowl. Pour over cashews and toss to coat. Spread cashews on the prepared baking sheet.
  • Bake in the preheated oven, stirring halfway through, until fragrant, about 40 minutes. Reduce oven temperature to 200 degrees F (93 degrees C). Continue baking, stirring every 20 minutes, until cashews look dry, 30 to 40 minutes.
  • Transfer cashews to a container and let cool, shaking or stirring occasionally to prevent them from sticking together.

1/2 cup hazelnuts (2 ounces)
1/2 cup blanched almonds (2 ounces)
1/2 cup unsalted roasted cashews (2 ounces)
1/2 cup whole pecans (2 ounces)
1/2 cup whole walnuts (2 ounces)
Vegetable oil for greasing foil
1/4 cup sugar
1/4 cup water
1 1/2 tablespoons honey

Steps:

  • Preheat oven to 350°F.
  • Toast hazelnuts in a shallow baking pan until fragrant and a shade darker, about 8 minutes.
  • When hazelnuts are cool enough to handle, wrap in a kitchen towel and rub to remove skins. (Not all skins will come off.) Transfer hazelnuts to a large bowl with almonds, cashews, pecans, and walnuts. Line baking pan with foil and lightly oil.
  • Bring sugar, water, and honey to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved. Pour over nuts and stir until nuts are well coated. Transfer nuts with a slotted spoon to baking pan (discarding syrup) and roast in 1 layer in middle of oven, stirring and redistributing nuts occasionally, until golden brown, 10 to 12 minutes.
  • Lightly oil another sheet of foil and put on a work surface. Spread nuts in 1 layer on foil and cool completely. Break apart any nuts that are stuck together.

1/4 cup pure maple syrup (preferably Grade B)
1 1/2 teaspoons cumin seeds
1 teaspoon fine sea salt
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350°F Spray sheet of foil with nonstick spray; set aside.
  • Lightly spray rimmed baking sheet with nonstick spray.
  • Toss cashews and all remaining ingredients in medium bowl.
  • Spread cashew mixture evenly in single layer on prepared sheet.
  • Bake nuts until golden brown and coated with maple syrup mixture, stirring occasionally, about 20 minutes.
  • Immediately pour nut mixture out onto foil, spreading evenly.
  • Cool 10 minutes, then separate and break apart any nut clusters.
  • Cool completely.
  • DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.
