This is a great fast shortcut and the potatoes are excellent. I do this recipe to serve with roast pork, goose or chicken.

1 (16 ounce) can small potatoes
2 tablespoons butter
1/2 cup brown sugar or 1/2 cup brown sugar substitute

Steps:

  • Drain your potatoes well.
  • Melt butter in a skillet.
  • Stir in the brown sugar and heat, stirring until it bubbles. Wait until it turns brown and starts to caramelize.
  • Add potatoes and cook 3-5 minutes (until heated through), stirring constantly.
  • Serve.

I love potatoes in all forms, but this is my all time favorite. I have been making it since I was a teenager, and everyone in the family always requests it when I make dinner. I have shortened the prep time using canned, whole, white potatoes, instead of boiling my own. The results are just as delicious. If you are opposed to canned potatoes, use fresh, boiled potatoes. These potatoes make fantastic leftovers too! This is the first time I have ever given out the recipe. I hope you all enjoy it as much as we do!

3 tablespoons canola oil
2 large Vidalia or other sweet onions, roughly chopped
4 (15 ounce) cans whole new potatoes, drained
3 tablespoons extra-virgin olive oil
¾ teaspoon garlic salt
¼ teaspoon garlic powder
¼ teaspoon dried minced garlic
2 tablespoons paprika
¼ teaspoon black pepper
½ cup butter, at room temperature

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
  • Heat the canola oil in a large skillet over medium heat, then stir in the Vidalia onion. Cook and stir until the onion has softened and turned deep brown, 10 to 15 minutes. While the onions are caramelizing, toss the drained potatoes with the olive oil in a large bowl. Season with garlic salt, garlic powder, dried minced garlic, and black pepper; toss until well coated, then pour into the prepared baking dish, and spread into a single layer.
  • Sprinkle the caramelized onions on top of the potatoes, then dot the top of the dish with the room temperature butter, and sprinkle with paprika. Bake uncovered in the preheated oven until the outsides of the potatoes are crisp, 45 to 55 minutes.

Caramelized potatoes: a surprising and straightforward Icelandic recipe, a perfect side dish for roasted lamb or other roasted pieces of meat.

2.2 lbs waxy potatoes (1 kg, Note)
4 tablespoons granulated sugar
3 tablespoons butter

Steps:

  • Cut potatoes: Clean and peel the potatoes. Cut them into large chunks or leave them whole if using small potatoes.
  • Boil potatoes: Bring a pot of water to a boil. Add the potatoes and cook for about 15-20 minutes, the potatoes should be tender, but not become mushy. Drain the potatoes very well and let stand in a colander for about 10 minutes, to make sure that they are dry.
  • Caramelize sugar: Place the sugar into a nonstick pan and let melt slowly, it should start to get slightly brown. At this point, add the butter and let melt slowly as well. Stir thoroughly.
  • Caramelize potatoes: Add the potatoes and stir carefully, taking care not to break the potatoes. Lower the heat to a minimum and continue turning the potatoes into the caramel until they are coated all over and golden. Do not let the caramel turn too dark, if you think it might happen, immediately remove the pan from the heat.
  • Serve immediately as suggested above.

1/2 cup margarine (I like Land-O-Lakes)
1 (2 ounce) packet Lipton Onion Soup Mix
7 potatoes, peeled and cut into chunks
1 onion, peeled and cut into chunks or thick rings
3 -5 stalks celery (optional)
3 -5 carrots (optional)

Steps:

  • Preheat oven to 375°F.
  • In a large stone baking dish (or of your preference as long as it is at least 9x13 and deep enough to accommodate the ingredients); melt the stick of margarine in the oven.
  • When the margarine is melted, or extrememly soft, toss in the rest of the ingredients.
  • Cover with aluminum foil.
  • Bake in the pre-heated oven for 30 minutes.
  • Take the dish out, carefully remove the foil (be mindful of the steam,) and stir the vegetables.
  • Place in the oven (without the foil, this time) and bake for an additional 30 minutes or until the potatoes are fork tender.
  • Enjoy!

  • Cover potatoes with salted cold water by 1 inch in a 3-quart heavy saucepan and bring to a simmer. Simmer, uncovered, until just tender, about 15 minutes.
