These Caramelized Apples are a simple & easy way to make the perfect topping or filling for any dessert. Spoon it over pancakes, waffles or ice cream.

1 tablespoon butter
⅓ cup brown sugar (lightly packed) ((60 grams))
1 tablespoon water
2 large apples (peel, cored and small cubed)
½-1 teaspoon ground cinnamon

Steps:

  • In a medium size pot melt the butter, then add the water, sugar and chopped peeled apples.
  • Stir and cook for about 3 minutes over medium/high heat just until the sugar has melted, then lower the heat to medium/low and continue cooking and stirring often for about 8-10 minutes, add the cinnamon in the last couple of minutes. The apples should be tender and the sauce a golden brown colour.
  • Move to a clean glass jar, let cool or use warm. Once it is cool it should be refrigerated, the longer it sits the thicker the sauce will become. Enjoy!

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

A deep, rich caramel makes for a classic shiny caramel apple.

2 cups sugar
1/4 cup light corn syrup
1/2 cup heavy cream
2 tablespoons unsalted butter
1/2 teaspoon pure vanilla extract
Kosher salt
6 medium very crisp apples (such as Honeycrisp, Red Delicious, Pink Lady or Granny Smith), well washed and dried
Nonstick cooking spray, for the parchment

Steps:

  • Add the sugar, corn syrup and 1/2 cup water to a small saucepan over medium-high heat. Stir a few times before the sugar begins to boil to combine the ingredients. Attach a candy thermometer to the inside of the pan and bring the syrup to a boil. Cook until the syrup begins to turn an amber color, then swirl the syrup to even out the color. Continue to cook until the syrup is a deep amber and the thermometer reads between 375 and 380 degrees F, then remove from the heat. Carefully pour in the cream and gently whisk to combine. Stir in the butter, vanilla and a pinch of salt until smooth. Keep off the heat but keep the thermometer attached to the pan.
  • Pierce the apples through the stem ends about halfway through with candy apple sticks. Line a baking sheet with parchment and lightly spray with nonstick cooking spray.
  • When the temperature of the caramel reads around 190 degrees F, dip an apple, using the stick as a handle and swirling to coat completely. Allow excess caramel to drip off the bottom and use a spatula to help remove any large amount of caramel, as it will pool around the apple when you set it down to cool on the lined baking sheet. Repeat with the remaining apples, gently heating the caramel on the stovetop over low heat, stirring, if it gets too thick for dipping. Allow the caramel to set and cool completely before serving or wrapping apples, about 1 hour. (See Cook's Note.)

1 stick cold unsalted butter
1/3 cup dark brown sugar
1 cup chopped pecans
1 teaspoon smoked paprika
2 ounces grated Cheddar cheese
1 cup sugar
1/4 cup water
4 Granny Smith apples, peeled, quartered, and cores removed
1 ounce whisky
2 ounces unsalted butter
1/2 cup heavy cream, whipped to soft peaks
1/2 cup creme fraiche

Steps:

  • For the streusel: Preheat the oven to 325 degrees F.
  • In a bowl, combine flour, butter, brown sugar, pecans, and smoked paprika. Using a pastry cutter, work the ingredients until a rough dough forms; it should resemble large grains. Place streusel on a nonstick baking sheet in an even layer. Sprinkle cheese on top. Bake until toasty, 15 to 20 minutes.
  • For the apples: In a medium saute pan over medium-high heat, add sugar and water. Bring to a low boil, occasionally swirling the pan. Cook for about 5 minutes until the sugar begins to caramelize and turn light brown to amber; this is a little tricky and needs to be watched continuously. When light brown, turn off the heat, add the apples and whisky, and light on fire to flambe (this will cook out some of the alcohol). Then, add the butter and turn heat to low. Cook the apples, flipping to coat in the caramel, about 2 to 4 minutes. In the meantime, combine the whipped cream and creme fraiche.
  • To assemble: Divide the apples into 8 individual serving dishes or one large one. Top with a dollop of the creme fraiche mixture and some streusel.

TOPPING:
1/4 cup coarse sugar

Steps:

  • In a large skillet, heat butter over medium heat. Add apples; cook and stir 5 minutes. Mix brown sugar, cornstarch and cinnamon; add to apples. 10 medium-large firm apples, such as Cortland, Rome or Ida Red
Zest of 1 small lemon, grated
1 1/2 cups fresh apple cider
1 tablespoon vegetable oil
2 cups sugar
1 1/2 cups heavy cream
3 tablespoons crystalized ginger, cut into fine dice

Steps:

  • Preheat the oven to 375 degrees.
  • Wash and core to a half-inch of the bottoms of each apple. With a vegetable peeler, peel the tops and bottoms of each apple, leaving a band of skin approximately two inches wide. Place the apples one to two inches apart in a large baking dish. Sprinkle a little of the zest into the well of each apple. Add the cider to the dish and bake for 25 to 30 minutes or until tender but not mushy. Place the apples on a lightly oiled baking pan and allow to cool thoroughly.
  • When the apples have cooled, place one cup of sugar and a half cup cold water in a medium-size heavy saucepan over medium-high heat. Stir with a wooden spoon until the sugar has dissolved. When the sugar begins to turn golden, rotate the pan to even the color. When the caramel is light amber, using a wooden spoon, carefully coat each apple with the hot caramel. (Caramel burns quickly and must be watched carefully. It will continue to cook and become a darker amber as you are working with it.) Repeat the method with the remaining sugar, using a clean, cool, medium-size heavy saucepan.
  • Meanwhile, whip the cream into soft peaks and fold in the ginger and refrigerate until ready to serve the apples.
  • When ready to serve, pry the apples from the baking pans with a metal spatula and arrange them on a serving platter or serve on individual dessert plates, accompanied with the ginger cream.

4 to 5 pounds crisp, not-too-sweet apples, like Granny Smith, peeled, cored and sliced

Steps:

  • Heat oven to 400 degrees. Combine 4 tablespoons butter with a cup of sugar and a tablespoon of water in a 10- or 12-inch nonstick ovenproof skillet. Place on stove on medium heat. Cook, shaking pan occasionally (do not stir), until sugar melts into butter and mixture bubbles.
  • Turn off heat, add apples in layers. About halfway through, dot with some of the remaining butter and sugar. Use rest of butter and sugar on top, along with cinnamon if you like. Put in oven.
  • Bake, undisturbed, until apples give up their liquid, and it evaporates and sides are dark brown and sticky-looking. This will take around 45 minutes, but it could be considerably longer or shorter depending on water content of apples. Remove, and let cool. Serve straight from pan or -- for a more attractive presentation -- invert onto a plate.
