CARAMELIZED APPLE-BLUE CHEESE SPREAD



Caramelized Apple-Blue Cheese Spread image

This delicious spread made using apple and cheese is a perfect appetizer when served with bread or crackers.

1 tablespoon butter
1 teaspoon sugar
2 large firm apples (preferably Fuji or Braeburn), finely chopped (about 2 cups)
1 shallot, finely chopped
1 package (8 oz) cream cheese, softened
4 oz (1 cup) crumbled blue cheese (preferably Maytag or Roquefort)
3/4 cup mayonnaise
3/4 cup sour cream
1/2 teaspoon salt
1/2 cup chopped pecans
40 slices French bread or crackers

Steps:

  • In 1-quart saucepan, melt butter over low heat. Stir in sugar until it dissolves, about 20 seconds. Add apples and shallot. Cook 20 to 30 minutes, stirring occasionally, until mixture turns golden brown and aroma is reminiscent of apple cider. (Do not rush process; color takes a while to form, but the flavor is worth it.) Set aside to cool completely.
  • Meanwhile, in small bowl, mix cream cheese, cheese, mayonnaise, sour cream and salt until well blended. Gently stir in cooled caramelized apple mixture and the pecans. Refrigerate 30 minutes before serving. Garnish with additional chopped pecans if desired. Serve with bread or crackers.

Crust
2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk
1/4 cup olive oil
2 tablespoons (1/4 stick) unsalted butter, melted
Topping
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons olive oil
3 large onions (about 2 pounds), halved, thinly sliced
1 tablespoon finely chopped fresh rosemary
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 cups (about 6 ounces) crumbled blue cheese

Steps:

  • For crust:
  • Preheat oven to 425°F. Mix flour, baking powder, and salt in medium bowl to blend. Make well in center of dry ingredients. Whisk milk, olive oil, and melted butter in liquid measuring cup to blend. Slowly pour milk mixture into well in dry ingredients, stirring until just blended and smooth. Roll out dough on lightly floured surface to 10x13-inch rectangle. Transfer dough to rimmed baking sheet. Re-form dough into 10x13-inch rectangle (dough will shrink when moved). Pierce dough all over with fork. Let dough rest while preparing topping.
  • For topping:
  • Melt butter with oil in large skillet over high heat. Add onions. Cook until onions are soft and beginning to brown, stirring frequently, about 10 minutes. Add rosemary, sugar, and salt. Season onions to taste with pepper. Reduce heat to medium. Continue to cook until onions are soft and dark brown, stirring frequently, about 20 minutes; cool.
  • Spread onion mixture evenly over dough. Sprinkle with cheese. Bake until crust is golden and cheese is bubbling, about 20 minutes. Let cool. Cut into squares and serve.

A delicious fall and wintertime soup recipe featuring fresh apples and onions.

"3 tbsp butter", "2 large white onions, peeled, halved lengthwise and cut into 1/4-inch thick slices (about 1 1/2 pounds)", "3 cloves of garlic, minced (about 1 1/2 tsp)", "4 cups 100% fresh-pressed, pasteurized apple cider", "2 - 10 1/2-oz cans double strength beef broth", "1 1/2 tsp Worcestershire sauce", "1 1/2 cup unpeeled, tart, green or red apples, cut into cubes", "Blue Cheese Croutons"

Steps:

  • Melt butter in large heavy saucepan.
  • Add onions and cook over medium heat for 20 to 25 minutes or until caramelized, stirring and scraping bottom of pan often.
  • Add garlic and cook for 1 minute more.
  • Slowly and carefully pour apple cider into saucepan with onion mixture. Bring to boil.
  • Reduce heat and gently boil over medium-high heat about 15 minutes or until reduced by about half.
  • Stir beef broth and Worcestershire sauce into apple mixture. Bring to a simmer.
  • Add apple; gently simmer for 1 to 2 minutes or until apples are nearly tender. Remove from heat.
  • To serve, ladle soup into bowls; top with blue cheese toasts or serve toasts alongside the soup.
  • **Blue Cheese Croutons:
  • Lightly stir together 2 ounces finely crumbled blue cheese (about 1/4 cup) and 1 tablespoon softened butter.
  • Spread mixture evenly on 12 lightly toasted baguette slices.
  • Broil under oven broiler or toast in toaster oven about 1 minute or until cheese is bubbly. Makes 12 toasts.
