CARAMELISED ONION & FETA PIZZAS
This quick, vegetarian pizza has a tomato-free topping but plenty of cheese and contrasting sweet onion

- Peel, then slice the onions into thin wedges. Thinly slice the garlic. Heat the butter and oil in a large wok or frying pan, tip in the onions and garlic and cook over a medium-high heat for 15 minutes, stirring every now and then until golden. Stir in the sugar and cook a minute or two longer. Season with salt and pepper. Preheat the oven to fan 200C/conventional 220C/gas 7.
- Put the pizza bases on two oiled baking sheets. Spoon the onion mixture over the pizza bases. Now crumble over the feta and scatter with rosemary. Grind over some black pepper and drizzle with a little oil. Bake for 10 minutes and serve with a green salad.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Lay puff pastry dough on the prepared baking sheet. Fold edges over to make a crust. Poke dough using a fork.
- Bake in the preheated oven for 15 minutes.
- Meanwhile, heat oil in a skillet and cook onions until golden, about 15 minutes.
- Remove pastry from the oven, and leave oven on. Scatter spinach on top in an even layer. Top with mushrooms and sprinkle with salt. Scatter red peppers on top, then Fontina cheese, Parmesan cheese, and feta cheese. Finish with cooked onions.
- Bake in the hot oven until cheese is bubbly and crust is golden brown, about 20 minutes.

- Heat oil in a large skilet over medium heat.
- Add onions and stir- cook until transparent.
- Stir in brown sugar, balsamic vinegar, garlic, oregano & basil.
- Continue to stir- cook until liquid has evaporated (about 10 minutes) and onions are caramelized.
- Remove from heat and let cool.
- Preheat oven at 400°F.
- Spread onions over pizza crust.
- Cut chicken into bite size pieces and spread over onions.

- To caramelize the onions, heat the olive oil in a large skillet over medium heat.
- Add the onions and garlic and cook over medium-low heat for about 20 minutes, stirring frequently, until the onions are very soft and lightly browned.
- Add the balsamic vinegar and cook a few more minutes, then remove from heat.
- Preheat the grill to low-medium heat (or preheat your oven to 400 degrees).
- Spread the caramelized onions evenly over the pizza crust.

- In a frying pan or sauté pan, stir together the sliced onions, dried cranberries, 3 tablespoons balsamic vinegar, water and brown sugar. Bring to a boil, then cover pan and lower heat to a simmer. Cook the onions for about 10 to 15 minutes, stirring periodically, until the onions are caramelized.
- Whisk together the remaining tablespoon of balsamic vinegar and agave nectar/honey. Set aside.

- Heat a tablespoon of olive oil in a medium skillet over medium heat. Add the baby spinach and saute until just wilted. Transfer the spinach to a strainer and using the bottom of a glass, press out some of the excess liquid from the spinach, set aside.
