I have used this recipe for almost 41 years, and have yet to have any bad batches. My grandson loves 'em!

2 cups white sugar
1 cup packed brown sugar
1 cup corn syrup
1 cup evaporated milk
1 pint heavy whipping cream
1 cup butter
1 ¼ teaspoons vanilla extract

Steps:

  • Grease a 12x15 inch pan.
  • In a medium-size pot, combine sugar, brown sugar, corn syrup, evaporated milk, whipping cream, and butter. Monitor the heat of the mixture with a candy thermometer while stirring. When the thermometer reaches 250 degrees F (120 degrees C) remove the pot from the heat.
  • Stir in vanilla. Transfer mixture to the prepared pan and let the mixture cool completely. When cooled cut the Carmel into small squares and wrap them in wax paper for storage.

I love salted caramel, and of course I love dark chocolate, so I layered these two flavors with my favorite shortbread crust. 2 cups butter, softened
1-1/2 cups confectioners' sugar
1 cup sugar
6 teaspoons vanilla extract
4 cups all-purpose flour
1 package (14 ounces) caramels
1/3 cup heavy whipping cream
1 teaspoon kosher salt
1 package (12 ounces) dark chocolate chips

Steps:

  • Preheat oven to 325°. Beat butter, sugars and vanilla until light and fluffy, 5-7 minutes. Gradually beat in flour, mixing well. Press 3 cups of dough onto bottom of a greased 13x9-in. pan. Bake until set, 20-22 minutes. , Cool 10 minutes on a wire rack. Meanwhile, in a small saucepan, melt caramels with cream over low heat until smooth. Pour over crust. Sprinkle with salt, then chocolate chips. Drop remaining dough by teaspoonfuls over top. Bake until light golden brown, 30-35 minutes longer. Cool on a wire rack.

⅔ cup butter, softened
¼ cup white sugar
1 ¼ cups all-purpose flour
½ cup butter
½ cup packed light brown sugar
2 tablespoons light corn syrup
½ cup sweetened condensed milk
1 ¼ cups milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 C).
  • In a medium bowl, mix together 2/3 cup butter, white sugar, and flour until evenly crumbly. Press into a 9 inch square baking pan. Bake for 20 minutes.
  • In a 2 quart saucepan, combine 1/2 cup butter, brown sugar, corn syrup, and sweetened condensed milk. Bring to a boil. Continue to boil for 5 minutes. Remove from heat and beat vigorously with a wooden spoon for about 3 minutes. Pour over baked crust (warm or cool). Cool until it begins to firm.
  • Place chocolate in a microwave-safe bowl. Heat for 1 minute, then stir and continue to heat and stir at 20 second intervals until chocolate is melted and smooth. Pour chocolate over the caramel layer and spread evenly to cover completely. Chill. Cut into 1 inch squares. These need to be small because they are so rich.

1 cup all-purpose flour
½ teaspoon baking soda
1 cup quick cooking oats
¾ cup packed brown sugar
¾ cup melted butter
¼ teaspoon salt
6 ounces semisweet chocolate chips
½ cup chopped walnuts
¾ cup caramel ice cream topping
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x9 inch square pan.
  • Combine the 1 cup flour, baking soda, oats, brown sugar, salt and melted butter. Mix to combine, mixture will be very crumbly. Press half of the mixture into the bottom of the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 10 minutes.
  • Let cool slightly then sprinkle over the crust the chocolate chips and chopped nuts. Mix the caramel ice cream topping with the 3 tablespoons of flour and drizzle over the chocolate chips. Top with the remaining oatmeal mixture. You will need to break it into small pieces to cover.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes. Let bars cool before cutting.

2 ¼ cups brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 pound milk chocolate
1 tablespoon butter

Steps:

  • Grease an 8 x 8 inch square pan.
  • In a heavy 4 quart saucepan melt butter over medium heat; add brown sugar, corn syrup and milk. Stirring constantly, heat to 242 to 248 degrees F (116 to 120 degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball. Remove from heat and stir in vanilla extract. Pour into prepared pan.
  • When caramel has cooled and set, cut into 1 inch squares. Chill in refrigerator until firm.
  • Melt chocolate with 1 tablespoon butter in the top of a double boiler or in a bowl in the microwave. Stir until smooth.
  • Dip caramel squares in chocolate and place on wax paper to cool.

Steps:

  • Layer One: Melt the margarine and marshmallows.
  • Stir in Rice Krispies cereal.
  • Pat in a buttered 9 x 13 baking pan.
  • Layer Two: Melt the caramels, margarine and milk and bring to a boil.
  • Pour over layer one.
  • Refrigerate 35-40 minutes, until set.

Steps:

  • Preheat oven to 350°. In a large bowl, combine 2 cups flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. Set half aside for topping. , Press the remaining crumb mixture into a greased 13x9-in. baking pan. Bake for 15 minutes. 1 cup Crisco® Butter Flavor All-Vegetable Shortening
or 1 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
1 cup granulated sugar
1/2 cup firmly packed light brown sugar
2 large eggs, lightly beaten
2 tsps. vanilla extract
2 cups Pillsbury BEST® All Purpose Flour
1 tsp. baking soda
1 tsp. salt
2 cups (12 oz. pkg.) semi-sweet chocolate chips
1 (14 oz.) bag caramels, unwrapped
2 tbsps. cold water

Steps:

  • HEAT oven to 350 degrees F. Spray an 8 x 8-inch pan with flour no-stick cooking spray.
  • COMBINE shortening, granulated sugar, brown sugar, eggs and vanilla in medium bowl; beat at medium speed until blended.
  • COMBINE flour, baking soda and salt in small bowl. Add gradually to shortening mixture at low speed. Beat until well blended. Stir in chocolate chips with spoon. Divide dough in half. Spread half in bottom of prepared pan.
  • COMBINE caramels and water in small saucepan; heat over very low heat. Stir until caramels melt. Spread over dough in pan to within 1/2 inch of edge. Spoon remaining dough over caramel mixture. Spread carefully.
  • BAKE 30 to 35 minutes or until golden brown. Loosen from sides of pan with knife. Remove pan to cooling rack to cool completely. Cut into 1 1/2 x 1 1/2-inch bars.

32 individually wrapped caramels, unwrapped
5 tablespoons heavy cream
1 cup all-purpose flour
1 cup rolled oats
¾ cup brown sugar
½ teaspoon baking soda
¼ teaspoon salt
¾ cup butter, melted
½ cup semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium saucepan over low heat, melt together the caramels and heavy cream, stirring occasionally until smooth.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking soda and salt. Stir in the melted butter until well blended. Press Half of the mixture into the bottom of a 9x13 inch baking pan. Reserve the rest.
  • Bake the crust for 8 minutes in the preheated oven. Remove and sprinkle with chocolate chips and walnuts. Pour the caramel mixture over the top and then crumble the remaining crust mixture over everything.
  • Return to the oven and bake for an additional 12 minutes, or until the top is lightly toasted. Cut into squares while it is still warm.

1 teaspoon vanilla extract

Steps:

  • Butter a 9x13 inch dish.
  • In a heavy saucepan, combine sugar, corn syrup, 1 cup cream and butter. Bring to a boil, stirring often, then stir in remaining 1 cup cream. 1/3 cup milk or cream
1/2 teaspoon vanilla
optional - 1 tablespoon coarse sea salt

Steps:

  • Preheat oven to 325°. Coat a 9×13 baking dish with nonstick spray. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment, mix the butter, granulated sugar, and powdered sugar together on medium speed for 2 minutes. Add the vanilla and mix until combined. Turn the mixer to low and add in the flour, mixing until a soft dough forms.
  • Press one-third of the dough evenly into the bottom of the prepared pan. Wrap the remaining dough in plastic wrap and chill in refrigerator.
  • Bake for 20 minutes, or until the edges are a pale golden brown. Transfer the pan to a wire rack and let cool about 15 minutes.

Caramel bars that are soft, chewy, and crunchy at the same time! Inspired by Max's restaurant, it's like having the same thing but with almond flakes instead of ground peanuts. Great for dessert, snack or pack it for kids to enjoy at school.

Number Of Ingredients 11

6 egg yolks
¾ cup brown sugar (or white granulated sugar)
1 cup vegetable oil (or softened butter unsalted or salted)
1 tsp vanilla extract
1 397 grams can condense milk
1 cup milk powder
2 cups all-purpose flour
½ tsp baking Powder
¼ tsp salt (remove if using salted butter )
Toppings
½ cup almond flakes - add more if needed (cashew nuts, ground peanuts, chopped walnuts)

Steps:

  • Pre heat oven at 180°C / 356° F. Line 14in. x 10in. baking pan with parchment paper and set aside.
  • In a mixing bowl beat the egg yolks using a hand mixer or wire whisk until light and pale in color. Then add sugar beat until well incorporated.
  • Add the vegetable oil and vanilla extract then mix again. Pour condense milk then give it a quick mix until all the ingredient are well combined. Tip in milk powder then mix until no traces of milk is left.
  • In a separate bowl sift the flour and baking powder using a strainer.
  • Fold-in the dry ingredient in 2 batches using a spatula until there is no trace of flour. Use a hand mixer then give it a quick beat until smooth. (NOTE: don't over beat or the caramel bars will be tough/hard)
  • Pour the caramel batter into prepared pan then top with almonds flakes. Bake for 40-45 mins or until inserted toothpick comes out clean. Bon appetit!

The best caramel bars ever!! I got this recipe from my husband's Grandma Emma years ago and I had forgotten I even had it. Myself and other family members have been trying to come up with a recipe that would come close to Grandma's and as much as we tried, could never quite match up to her recipe. As I was looking through my recipe card box recently I discovered the recipe, hand written by Grandma Emma. My daughters and I had to make them when they were home visiting this summer and they are the best!!

2 cups flour
1 teaspoon baking soda
1/4 cup whipping cream
1 cup margarine or 1 cup butter, melted
1 cup brown sugar
2 cups quick oatmeal
12 ounces caramels
3/4 cup whipping cream

Steps:

  • Pre heat oven to 350 degrees.
  • Mix the 1st 6 ingredients together in mixer until crumbly -- Grandma says mix like pie crust.
  • Pat all but approximately 1 1/2 cups of batter into a 9 X 13 cake pan.
  • Bake for 10 minutes.
  • While this is baking, melt the caramels with the 3/4 cup whipping cream. A double boiler is recommended, but you could use the microwave if you stop and stir often to make sure the caramels do not burn.
  • Spread caramel mix over the 1st layer when it has baked.
  • Use the remaining 1 1/2 cups of batter and pat down in small sections over the caramel mix.
  • Return to oven and bake for about 15 minutes or longer -- til they are done.
  • Remove from oven and cool.
  • Enjoy!
  • *Pointer-Can use Caramel bites that are now available in the baking aisle at the grocery store rather than having to unwrap all the caramels. Also, Grandma says that 1/2 and 1/2 could be used rather than cream if you would like.
