This is a sweet party snack mix recipe.

8 cups popped popcorn
4 cups crispy rice cereal squares
2 cups small pretzel twists
1 cup pecan halves
1 cup packed brown sugar
½ cup butter
¼ cup light corn syrup
1 teaspoon vanilla extract
½ teaspoon baking soda

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large bowl, combine the popcorn, cereal, pretzels and pecans.
  • In a saucepan over medium heat, combine the brown sugar, butter and corn syrup. Cook and stir until mixture comes to a boil. Reduce heat to medium low; cook without stirring for 5 minutes.
  • Remove saucepan from heat and stir in vanilla and baking soda. Pour over popcorn mixture and toss until evenly coated.
  • Bake at 300 degrees F (150 degrees F) for 30 minutes, stirring after 15 minutes. Transfer to large piece of parchment paper and cool completely. Break into chunks once cool.

6 cups Rice Chex
6 cups Corn Chex
6 cups Crispix
1 cup butter, cubed
1 cup packed brown sugar
1/2 cup corn syrup
1 teaspoon vanilla extract

Steps:

  • Grease three 15x10x1-in. baking pans; set aside. In a large heat-proof bowl, combine the cereals; set aside., In a heavy saucepan over medium heat, bring the butter, brown sugar and corn syrup to a boil, stirring constantly. Reduce heat. Simmer, uncovered, for 5 minutes, stirring occasionally. Remove from the heat; stir in vanilla. Pour over cereal and stir until well coated., Transfer to prepared pans. Bake, uncovered, at 200° for 1 hour, stirring every 15 minutes. Cool completely. Break apart and store in airtight containers.

½ cup butter
¾ cup white corn syrup
1 cup packed brown sugar
1 cup chopped pecans
1 cup almonds
1 (12 ounce) package crispy corn and rice cereal

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spray a large roasting pan with non-stick cooking spray.
  • In a medium-size microwave safe bowl, mix butter, white corn syrup and brown sugar. Place the mixture in the microwave and cook 2 minutes, or until butter melts.
  • Place the cereal, pecans and almonds into the prepared roasting pan. Pour the melted butter mixture over the cereal and nuts and mix gently until the cereal and nuts are coated.
  • Bake for 1 hour, stirring every 15 minutes.
  • As the snack mix is cooling, be sure to continue to stir so that the mix will not harden in one big lump.

1 cup dry roasted peanuts
1/2 cup butter or 1/2 cup margarine
1 cup granulated sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon baking soda

Steps:

  • Preheat oven to 250*.
  • Combine crackers and nuts in a greased, large shallow baking pan.
  • In a saucepan, bring butter, sugar, and corn syrup to a boil and cook for 5 minutes.
  • Remove from heat and add vanilla and soda.
  • Pour caramel mixture over crackers and nuts; stir well.
  • Bake for 1 hour, stirring every 15 minutes.
  • Pour onto waxed paper and break apart; allow to cool.
  • Store in airtight container.

4 cups Apple Jacks cereal
2 cups salted peanuts
1 cup packed brown sugar

  • In a large greased roasting pan, combine the popcorn, cereals and peanuts; set aside. In a large saucepan, combine the brown sugar, butter and corn syrup; bring to a rolling boil over medium-low heat, stirring constantly. Cook, without stirring, until mixture turns a medium amber color, about 8 minutes. , Remove from the heat; quickly stir in vanilla and baking soda until mixture is light and foamy. Immediately pour over cereal mixture; stir until evenly coated. , Bake at 250° for 45 minutes, stirring every 15 minutes. Spread mixture onto waxed paper-lined baking sheets. Cool completely. I have a house full of picky kids, so I end up with lots of open boxes of cereal. This works with pretty much any cereal you'd want to eat. I've used Kix, Apple Jacks, Rice Krispies, Cheerios, Cocoa Puffs, even Life! I like the stick or mini pretzels the best. I'd bet the big sourdough ones, crushed a bit of course, would be really good too. Please please please be very careful with the boiling syrup. Keep an ice bath nearby in case you spill on yourself. Any seasoned candy maker knows how horrible candy burns are.

2 tablespoons light Karo syrup
1 cup Rice Chex
1 cup Cheerios toasted oat cereal
1 cup pretzel

  • Combine 4 cups of any combination of ingredients you want in large bowl.

18 oz Crispix cereal (Rice chex also work)
1 lb peanuts ( salted or lightly salted)
1 lb M&M candies (or chocolate coated candy pieces)
1 cup butter
2 cups brown sugar
1/2 cup light corn syrup (I used Karo Syrup)
1/2 tsp salt
1 tsp baking soda
2 brown paper bags (grocery bag size)

Steps:

  • Place one paper bag inside the other and pour cereal, peanuts, and M&M candies into it.
  • Add brown sugar, butter, Karo syrup and salt to a large saucepan. Boil for 1-1/2 minutes. Remove from heat and stir in the baking soda. Be careful because the mixture will foam up and be very hot. Pour into the paper bag over the cereal mixture.
  • Roll the top of the bag down and shake to distribute the sugar mixture throughout the cereal mixture. Heat bag in the microwave on high for 1 minute. Remove and reshake. Return to the microwave for a total of 3 times.
  • Spread out on rimmed cookie sheets to dry for a couple hours or overnight. Occasionally break up the mix. Store dried mix in an airtight container.

1 cup (2 sticks) unsalted butter
2 cups brown sugar (packed)
1/2 cup light corn syrup
1 teaspoon vanilla
16 ounces or 1 large box Crispix
1/2 teaspoon baking soda
sea salt (for sprinkling)

Steps:

  • Place the Crispix in a large microwave safe mixing bowl or large paper bag. Line two large baking sheets with parchment paper or a silpat mat and set aside.
  • Combine the butter, brown sugar, corn syrup and vanilla in a large saucepan. Bring to a boil over medium-high heat and allow to boil for 1 1/2 - 2 minutes, stirring frequently. Be careful not to boil too long or caramel will be too crunchy. Remove mixture from the stove and add the baking soda. The mixture will foam a bit then settle.
  • Add the caramel mixture to the prepared Crispix and stir gently with a rubber or wooden spatula. Place the bowl of caramel Crispix in the microwave and heat on high for 1 minutes. Remove from microwave and stir gently. Repeat 3 more times to reach a total of 4 minutes. Spread mixture evenly onto prepared baking sheets and sprinkle generously with sea salt. Allow to cool completely, breaking pieces or chunks apart with your hands or spatula as it cools. Store in an air tight container for up to 5 days.
