We have a great chef in Sydney named Bill Granger. This is his recipe for a hot flavourful pudding. Delicious.

1 cup plain flour
1 pinch salt
1/2 cup caster sugar
3 teaspoons baking powder
1 banana, mashed
1 cup milk
85 g unsalted butter, melted
1 egg, lightly beaten
1 teaspoon vanilla extract
3/4 cup soft brown sugar
1/4 cup syrup or 1/4 cup treacle
1 cup boiling water

Steps:

  • Preheat oven to 180 degrees celcius.
  • Sift flour, salt, sugar, baking powder into bowl.
  • Add banana, milk, butter, egg, vanilla extract.
  • Whisk until well combined.
  • Pour into 2.5 litre baking dish.
  • To make the topping, place brown sugar, suryp, water in small pot.
  • Bring to the boil.
  • Pour mixture careflly over the pudding.
  • Bake 35 minutes.
  • Serve with vanilla ice cream.

3/4 cup brown sugar
1/3 cup unsalted butter, softened (80g)
1 teaspoon vanilla extract
1 egg
1 1/2 cups plain all-purpose flour, sifted
1 1/2 teaspoons baking powder
3/4 cup whole milk
1 cup boiling water
2/3 cup brown sugar
2 tablespoons blackstrap molasses
2 tablespoons pure maple syrup
1 1/2 teaspoons plain all-purpose flour

Steps:

  • Preheat oven to 350°F (180°C).
  • To make the pudding, beat the sugar, butter and vanilla in a bowl until light and fluffy.
  • Add the eggs and beat until combined.
  • Add the flour, baking powder and milk and beat until combined.
  • Spoon the mixture into a square oven proof dish and place on a baking tray.
  • To make the sauce, whisk together the water, brown sugar, molasses, maple syrup and flour until combined.
  • Spoon the sauce over the pudding batter and bake for 35 minutes or until golden brown and set.

Pour the sauce over the batter, keeping a tight grip on the edges of the dish, so none of the sauce sloshes over. Don't be nervous – it's going to look hideous and weird, and the pudding mixture will float and rivers will run through the batter and you'll think it's ruined, but I promise it's not.

(*If using individual dishes, you may want to place dishes on a baking sheet, for easy transport to the oven, and to catch any splatters.) Arrange a layer of apple slices on top of batter.
  • Prepare the sauce: In a medium bowl or a 4 cup measuring cup, mix together the brown sugar and flour. Add the boiling water, the butter,vanilla and salt. Stir to combine and until butter melts. Gently pour over batter, being sure to leave 3/4-1 inch of room at the top of the baking dish.
  • Bake in pre-heated 350° oven for 35-40 minutes or until toothpick in centre comes out clean when inserted in the top cake part. Pudding will have formed a cake-like top with lots of sauce underneath. Allow to cool for 5 minutes, then enjoy warm. Lovely as is, or top with a scoop of vanilla ice cream.
