CARAMELIZED PINEAPPLE
This easy dessert is perfect in the winter, when pineapples are plentiful.

Steps:
- Core and peel pineapple. Slice it lengthwise into eighths.
- Heat butter in a large nonstick skillet over high heat. Coat pineapple wedges with sugar; place in hot pan. Cook, turning once and shaking pan often, until golden brown, 8 to 10 minutes. Remove pineapple.
- Stir 3 tablespoons water into pan, and heat briefly; drizzle over pineapple. Serve with frozen yogurt, if desired.

- Preheat oven to 450°F. Line a large rimmed baking sheet with parchment paper. Stir first 3 ingredients in a large bowl until sugar dissolves. Add pineapple; toss to coat. Let marinate, tossing occasionally, for 10 minutes. Place pineapple, one flat side down, on prepared sheet; reserve marinade.
- Roast pineapple for 15 minutes. Turn, brush with marinade, and roast until tender and caramelized, 10-15 minutes. Drizzle remaining marinade over; let cool slightly.
- Divide pineapple among plates. Spoon crème fraîche alongside. Garnish with nuts and mint.

- Cut your pineapple into spears. You can cut as little or as much of the pineapple as you'd like - 1/2 of the pineapple should be more than enough for 2 people, but the whole pineapple is a better choice for a family.

- Using a sharp knife, cut the bottom and the top of the pineapple. Slice off the sides, working your way around the pineapple. Cut out the eyes (the black spots). Set aside in a baking dish.
- Split the vanilla pod in half and scrape the seeds out using the back of a knife. Add the pod to the baking dish with the pineapple and set the seeds aside.
- Add honey and water to a small saucepan. Melt over low heat and stir to combine. When honey is melted, bring to a boil and cook for 30 seconds, stirring constantly (it's gonna be very bubbly). Bring the heat back to the lowest setting and add butter, salt and vanilla seeds. Bring to a boil again, stir and pour over pineapple.
