PUMPKIN TIRAMISU

This is a twist on the traditional tiramisu, made with pumpkin puree and spices and served in a trifle bowl. Place a light dusting of cinnamon on top just before serving/presenting.

1 pint heavy whipping cream
⅛ teaspoon cream of tartar
2 (8 ounce) containers mascarpone cheese
3 cups confectioners' sugar
1 (29 ounce) can pumpkin puree
1 tablespoon ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground nutmeg
1 teaspoon ground cloves
1 cup brewed coffee, cooled
1 tablespoon rum, or more to taste
36 ladyfingers

Steps:

  • Beat cream and cream of tartar in a bowl with an electric mixer until soft peaks form.
  • Beat mascarpone cheese in a separate bowl using an electric mixer on low speed; slowly beat in confectioners' sugar until fully incorporated. Add pumpkin puree, cinnamon, ginger, nutmeg, and cloves; beat until well combined. Fold whipped cream into pumpkin mixture.
  • Mix coffee and rum together in a bowl. Briefly dip each ladyfinger into coffee mixture. Arrange a layer of dipped ladyfingers in the bottom of a trifle bowl or serving dish. Cover layer with about 1/3 of the pumpkin mixture. Continue layering ladyfingers and pumpkin mixture.
  • Cover dish with plastic wrap and refrigerate until set, 3 hours to overnight.

1/2 cup toasted pumpkin seeds or sunflower seeds
1 cup maple syrup
3/4 cup light brown sugar
1/2 cup heavy cream
1/4 cup dark corn syrup
1 teaspoon pumpkin or apple pie spice
1 teaspoon fresh lemon juice
1/2 teaspoon fine salt
2/3 cup canned pumpkin puree, room temperature
1 tablespoon unsalted butter, room temperature
1 teaspoon pure vanilla extract

Steps:

  • Line an 8 by 4-inch loaf pan with waxed paper or aluminum foil. Brush the sides, but not the bottom lightly with butter and sprinkle the pumpkin seeds in the bottom.
  • Whisk the maple syrup, brown sugar, cream, corn syrup, pie spice, lemon juice, and salt together in a heavy-bottomed medium saucepan. Brush down the sides on the saucepan with water to remove every grain of sugar. Set the candy thermometer into the sugar. Cook the mixture over medium heat, without stirring, until the mixture reaches the firm ball stage, 248 degrees F, about 18 to 20 minutes.
  • Carefully stir in the pumpkin puree. Return to the heat and cook, stirring occasionally, until the caramel reaches the soft ball stage, 240 degrees F, about 15 minutes more. Remove from the heat and stir in butter and vanilla.
  • Pour the caramel over the pumpkin seeds in the prepared pan. Smooth to an even layer. Cool to room temperature.
  • When fully cooled peel from the waxed paper or foil and cut into 24 (1-inch) squares. Wrap individually in parchment or waxed paper and store in an airtight container for up to a week.

18 crisp ladyfinger cookies
1/4 cup maple syrup
2 tablespoons bourbon
1 cup heavy whipping cream, divided
1/4 cup sugar
3/4 cup canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
4 ounces cream cheese, softened
3 tablespoons confectioners' sugar
SAUCE:
3/4 cup caramel ice cream topping
2 teaspoons bourbon

Steps:

  • Using a serrated knife, cut 6 ladyfingers in half widthwise. In a shallow bowl, combine maple syrup and bourbon. Dip 6 whole ladyfingers and 6 halves into mixture; arrange in a single layer in an 8-in. square dish., In a small bowl, beat 1/2 cup cream until it begins to thicken. Gradually add sugar; beat until soft peaks form. In a large bowl, combine the pumpkin, cinnamon, ginger and salt; fold in whipped cream. In another bowl, beat the cream cheese, confectioners' sugar and remaining cream until thickened., Spread half of pumpkin mixture over ladyfingers in the dish. Dip remaining ladyfingers; arrange over the top. Top with remaining pumpkin mixture and the cream cheese mixture. Cover and refrigerate for 8 hours or overnight., In a microwave, heat caramel sauce; stir in bourbon. Serve warm with tiramisu.

Steps:

  • Beat cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; beat 1 min. Gently stir in 2 cups COOL WHIP.
  • Mix coffee and caramel topping until blended. Place half the cake cubes in 10 parfait glasses; drizzle with half the coffee mixture. Cover with half the cream cheese mixture, then 1/3 of the grated chocolate. Repeat.
  • Top with remaining COOL WHIP and chocolate. Refrigerate 4 hours.

  • Prepare the custard first. Pour the milk into a medium-sized sauce pan and whisk in the 1 tbsp flour. Heat the milk over medium heat until it’s steaming hot but not boiling. Meanwhile, combine the egg yolks and sugar in a large mixing bowl. Whisk the yolks and sugar together for a few minutes, until the mixture is pale and ribbons off the whisk (If the mixture is too thick, add 1 tsp water).
  • Begin tempering the hot milk into the egg yolk mixture, about 1/3 cup at a time, whisking well after each addition. Once the two mixtures are combined, pour the custard back into the sauce pan. In a small ramekin, combine the cornstarch and water to create a slurry. Whisk this cornstarch slurry into the custard.
  • Cook the custard over medium heat, stirring constantly with a flat spatula, for 4 to 5 minutes, until the custard as thickened and holds its shape on the back of spoon. The thickness should be similar to pudding. If any clumps form, whisk the custard until it’s smooth.
  • Remove the thickened custard from heat and add in the softened butter and cream cheese/mascarpone; let stand for a few minutes to melt. Next, add in the vanilla and the custard for a few minutes, until it’s completely smooth and the butter and cheese are completely incorporated. Cover the custard with a lid and let it cool in the refrigerator for about 1 hour, until it’s completely cooled.
