After one bite of this rich caramel-drizzles dessert, you'll move it to the top of your recipe file. A buttery crust of crushed pecan cookies complements the cheesecake-like filling. "It's a glorious treat," promises Judy Atwell of Aptos, California.

1 package (16 ounces) pecan shortbread cookies
1/2 cup butter, melted
2 packages (8 ounces each) cream cheese, softened
1 jar (12 ounces) caramel ice cream topping, divided
1-1/2 cups cold milk
1 package (5.1 ounces) instant vanilla pudding mix
3/4 cup chopped pecans

Steps:

  • In a large bowl, combine cookie crumbs and butter until crumbly. Press into a greased 13-in. x 9-in. baking dish. Bake at 375° for 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and 1/2 cup caramel topping until smooth. In a small bowl, whisk milk and dry pudding mix for 2 minutes. Let set for 2 minutes or until soft set; fold into cream cheese mixture. Spread over the cooled crust. Sprinkle with pecans. , Cover and refrigerate for at least 6 hours or until set. Cut into squares; drizzle with remaining caramel topping.

This is a great summer pie to have. And, because you make 2, you will have one in the freezer to save for later!

Number Of Ingredients 10

2 c 2 cups rough chopped pecans
2 c flaked coconut (optional)
1 stick butter
8 oz cream cheese, softened
1 can(s) 14 oz sweetened condensed milk
16 oz cool whip
1 jar(s) caramel ice cream topping
1/4 c brown sugar
1/4 tsp cinnamon
2 graham cracker or vanilla pie crusts

Steps:

  • 1. In a skillet, combine pecans, coconut, butter, brown sugar and cinnamon. Cook until the pecans and coconut are toasted or browned. Put aside and allow to cool completely.
  • 2. In a large mixing bowl, combine the cream cheese, and condensed milk. Next mix in the cool whip. Divide this mixture into the 2 pie shells.
  • 3. Place the pies in the freezer about 30 minutes. Remove from freezer and cover each pie with the pecan/coconut mixture equally.
  • 4. Drizzle each pie with 1/2 the jar of caramel ice cream topping. Can drop some extra chopped pecans on top for garnish. Return pies to the freezer for about an hour before slicing and serving.

2 cups Pecans Roughly chopped
2 cups Flaked coconut
1 stick Butter
8 ounces Cream cheese Softened
14 ounces Condensed milk
16 ounces Cool Whip Thawed
1 Jar Caramel Ice Cream topping
2 Graham cracker crusts

Steps:

  • In a skillet, lightly brown nuts and coconut in butter. Set aside to cool. With an electric mixer, blend the cream cheese, condensed milk and Cool Whip. Divide evenly between the two pie crusts. Top each with pecan and coconut mixture. Drizzle the caramel over pecans using half of the Jared on each pie using all caramel. Refrigerate or freeze for a minimum of 3-4 hours. The pies cut better when frozen. Top with extra cool whip if desired.

3 egg whites
1 cup white sugar
½ teaspoon vanilla extract
½ teaspoon baking powder
20 buttery round crackers, crushed fine
1 cup chopped pecans
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Beat egg whites until slightly stiff. Add sugar, vanilla, baking powder, Ritz crackers and pecans. Mix well, and pour into greased 9 inch pie plate.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes exactly.
  • Allow pie to cool to room temperature, and then cover with nondairy whipped topping. Refrigerate for 2 hours before serving.

1 cup pecan halves

  • Melt caramels with water & margarine in a saucepan over low heat.
  • Stir occasionally until smooth.Combine sugar,salt & eggs.
  • Gradually add caramel sauce;Mix well.

Steps:

3 -4 egg whites
1 pinch salt
1 teaspoon cream of tartar
1 teaspoon vanilla
1/2 cup granulated sugar
1/2 cup brown sugar
25 -30 crushed soda crackers
1 1/2 cups pecan pieces

Steps:

  • Beat egg whites to foam.
  • Add salt and cream of tartar.
  • Beat to stiff peaks.
  • Add vanilla extract and both sugars.
  • Beat until consistency of 7 minute frosting.
  • Fold in crackers and nuts.
  • Grease bottom and sides of pyrex dish and add mixture to dish.
  • Bake at 350 degrees for 15-20 minutes.
  • Top with Cool Whip or whipped cream when pie is completely cool, or slice and add topping on individual slices when serving.
