Bread pudding with a little more style. Pear brandy lends a special touch. The bread pudding is poached in a water bath to seal in moisture.

¼ cup brown sugar
¼ cup white sugar
1 ¼ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon salt
½ cup butter, softened
1 tablespoon vanilla extract
8 eggs
1 cup white sugar
1 cup half-and-half cream
1 teaspoon vanilla extract
¼ cup pear brandy
½ teaspoon salt
2 (1 pound) loaves sliced artisan bread, cut into 3/4 inch strips with crusts removed
4 pears - peeled, cored and sliced
2 cups heavy cream
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a medium bowl, stir together the brown sugar, 1/4 cup white sugar, flour, cinnamon and salt. Mix in the butter and 1 tablespoon of vanilla just until the mixture resembles coarse crumbs. Set aside.
  • In a separate bowl, whisk together the eggs, 1 cup white sugar, half-and-half, 1 teaspoon of vanilla, pear brandy and salt.
  • Line the bottom of a 9x13 inch baking dish with a layer of bread. Top with a layer of pear. Pour about 1/4 of the custard over the layers followed by about 1/3 of the heavy cream. Sprinkle with some of the crumb topping. Repeat layers until you are out of ingredients, ending with the crumb topping on top. Press down on the layers as needed to help them absorb the liquid. Cover the pan with parchment paper then seal with aluminum foil. Place another baking pan on top or two dinner plates to keep it from puffing while it bakes.
  • Place the pudding onto a larger pan or cookie sheet with sides. Pour boiling water into the bottom pan until it is half way full.
  • Bake for 10 minutes in the preheated oven, then reduce the oven temperature to 350 degrees F (175 degrees C) and continue baking for 25 minutes. Pudding is done when a knife inserted into the center comes out clean.

1 tablespoon grated orange peel
Water
3/4 cup packed brown sugar
1/4 cup butter or margarine, softened
1 quart vanilla ice cream

Steps:

  • Heat oven to 375°F. In medium bowl, mix flour, granulated sugar, baking powder and cinnamon. Stir in milk and melted butter until mixture is smooth. Stir in pears and orange peel. Spread evenly in ungreased 12x8-inch (2-quart) glass baking dish.
  • Add enough water to reserved pear liquid to measure 1 cup; heat to boiling in 1-quart saucepan. Stir in brown sugar and softened butter until melted. Pour hot sugar mixture evenly over batter.
  • Bake 40 to 45 minutes or until top is deep golden brown. Cut into 8 squares; using spatula, place each square upside down on individual dessert plate. Serve warm with ice cream.

¼ cup water, or as needed
¼ cup white sugar
½ small pear, diced
2 teaspoons chopped walnuts
1 pinch ground ginger
1 pinch ground nutmeg
1 pinch ground black pepper
1 pinch ground cinnamon
1 pinch dried lemon peel
½ cup milk
1 tablespoon butter
1 egg
2 tablespoons white sugar
½ teaspoon spiced rum
½ teaspoon dried lemon peel
⅛ teaspoon ground nutmeg
1 cup cubed fresh bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine water and 1/4 cup sugar in a saucepan over medium heat. Cook, stirring constantly, until dissolved and light brown in color, about 6 minutes. Pour into the bottoms of 2 custard cups; rotate cups to spread caramel across the bottoms.
  • Arrange pear pieces over the caramel; top with walnuts. Sprinkle ginger, 1 pinch nutmeg, black pepper, cinnamon, and 1 pinch lemon peel on top.
  • Heat milk and butter in a small saucepan over medium heat until butter is melted, about 1 minute. Remove from heat.
  • Whisk egg, 2 tablespoons sugar, rum, 1/2 teaspoon lemon peel, and 1/8 teaspoon nutmeg in a bowl until well beaten. Stir in the milk mixture slowly; mix well. Stir in bread cubes; let soak for 5 minutes. Divide mixture between the prepared cups. Place cups in a baking pan; add hot tap water to come halfway up the sides of the cups.
  • Bake in the preheated oven until set, 35 to 45 minutes. Let cool until safe to handle, about 20 minutes.
  • Run a sharp knife around the inside edge of the cooled puddings and invert onto small dessert plates.

2/3 cup white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon

4 medium pears, cut into 1/2 inch pieces (about 2 cups) or 1 (16 ounce) can pears, drained and chopped (fresh pears are better to use!)
1/2 cup chopped pecans
3/4 cup packed brown sugar
1/4 cup butter
3/4 cup boiling water

Steps:

  • Set oven to 375 degrees.
  • Lightly spray a 2-quart casserole dish with cooking spray.
  • In a large mixing bowl, mix together flour, white sugar, baking powder, cinnamon and salt.
  • Add in the milk; beat until smooth (add a little more milk or cream if the mixture is too thick).
  • Stir in the chopped pears and pecans.
  • Transfer to the prepared casserole dish.
  • In a bowl, combine the brown sugar, butter and boiling water; (this mixture will be thin, but will incorporate into the cake while baking) mix well, pour evenly over the batter.
  • Bake for 35-40 minutes.
  • Serve hot with ice cream or Cool Whip topping (I prefer it with vanilla ice cream!).

1 package Raisin English Muffins
2 pears - peeled and diced
3 tbsp. melted butter
3 1/2 cups milk
1 tsp. cinnamon
1/2 cup sugar
8 egg yolks
2 whole eggs
1 jar Caramel Sauce (we buy at Trader Joe's or Harry & David)
Powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Prepare a 9x9 baking pan with cooking spray; set aside.
  • Cut English Muffins into 1-inch cubes and lightly toast. Set aside.
  • In a large mixing bowl combine milk, egg yolks, whole eggs, cinnamon and sugar. Mix ingredients well; fold in diced pears.
  • Add cubed muffin pieces to soak up the mixture.
  • Pour melted butter into a 9×9 inch pan, coating the bottom. Spoon muffin pear mixture into the pan.
  • Bake for 45 minutes or until set and browned.
  • Dust with powdered sugar!
  • Heat up the caramel sauce. Drizzle over the top; serve!

  • 1. You will need a shallow 2 litre (3½ pint) ovenproof dish, measuring about 30 x 20 x 6cm (12 x 8 x 2½in). Preheat the oven to 180°/160° fan/Gas 4 and lightly grease the dish with butter. 2. Slice one pear half into thin horseshoe shapes and set these aside for decoration. Cut the remaining pears into 1cm (½ in) pieces. 3. To make the pudding, measure the butter and sugar into a mixing bowl. Using an electric hand whisk, beat until light and creamy. Add the remaining ingredients and whisk again to make a smooth, thick batter. Stir in the chopped pears. 4. Pour into the prepared dish. Bake in the oven for about 40 minutes until the pudding is well risen, coming away from the sides of the dish and springy to the touch. 5.
