CARAMEL FROSTING I
I have had this recipe for over 30 years. Cream may be substituted for the milk for added richness.

Steps:
- In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and brown sugar. Boil vigorously for 1 minute.
- Remove from heat, and beat in 1/2 cup confectioners' sugar. Cool slightly, and beat in the vanilla and remaining 1/2 cup confectioners' sugar. Add more milk if the mixture is too thick.

FUDGE FROSTING
Just like fudge candy - only for a cake. Use a palette knife to make pretty swirls after spreading and that is the only decoration needed!

- In 3-quart saucepan, mix granulated sugar and cocoa. Stir in milk, butter, corn syrup and salt. Heat to boiling, stirring frequently. Boil 3 minutes, stirring occasionally. Cool 45 minutes.
- Beat in vanilla and enough powdered sugar for spreading consistency.
- Frost 13x9-inch cake, or fill and frost 8- or 9-inch two-layer cake.

COOKED CARAMEL FROSTING
This fudgy caramel frosting is easy to make and wonderful on a spice cake. Simply made with brown sugar, corn syrup, vanilla, butter, and cream.

Steps:
- Gather the ingredients.
- In a large saucepan, combine ingredients and mix well to blend. Bring to a boil; cover and cook 3 minutes.
- Uncover and cook to 238 F on a candy thermometer or until soft ball forms when dropped in cold water. Cool for 3 minutes.
- Beat until thick and spreadable. It should begin to lose its glossiness.
- Spread on layers and over sides of cake.
- Enjoy.

Wonderfully rich and creamy caramel frosting. This doesn't make much, so to ice a 2-layer cake, you'll want to double the recipe. This recipe came from a dear friend in Lebanon, Virginia, in the foothills of Appalachia. She was close to 100 y/o and it had been in her family forever.

- Cook sugar with cream in saucepan until it forms a soft ball when dropped in cold water (approx 234-240 degrees on candy thermometer).
- Add butter and vanilla.

- In a large saucepan place the condensed milk, sugar, butter, golden syrup/corn syrup and salt. Heat gently on low heat, stirring until all the sugar has dissolved. Continue stirring the fudge constantly on low or low-medium heat until it’s simmering and has thickened and coats the back of a spatula/spoon – this will take about 3-5 minutes. Keep an eye on the stove at all times and adjust the heat, if necessary, so the mixture won’t burn.
- Once the fudge has thickened, remove it from the heat. From this point on, work as quickly as possible, because the mixture will harden pretty quickly. Add the white chocolate and whisk until all the chocolate has melted.
- Transfer the fudge mixture into prepared pan. Allow the fudge to cool slightly at room temperature, then cover the pan and leave it to set in the fridge for at least 4 hours. Once the fudge has set, cut it up in pieces (I recommend small pieces because the fudge is very rich) and serve.
