- In a large saucepan, combine sauce ingredients; bring to a boil, stirring constantly. , For the dumplings, combine flour, sugar and baking powder in a large bowl. Add milk, butter and vanilla; stir just until moistened. Gently fold in apples. Drop by heaping teaspoonfuls into the boiling sauce. Cover and cook over low heat until a knife inserted in the center comes out clean, about 8-10 minutes. Serve warm with whipped cream or ice cream if desired.

- Heat oven to 375ºF.
- Microwave caramels and 1 Tbsp. milk in small microwaveable bowl on HIGH 40 sec.; stir. Cube half the cream cheese. Add to caramel sauce along with the flour; stir. Microwave until caramels and cream cheese are completely melted and sauce is well blended, stirring every 10 sec.
- Unroll crescent dough; separate into 8 triangles. Place on parchment-covered baking sheet; spread with caramel sauce. Top with apples, placing 1 apple wedge at shortest side of each triangle. Roll up, starting at apple-topped sides. Rearrange, if necessary, until roll-ups are point sides down on baking sheet.
- Bake 12 to 14 min. or until golden brown. Meanwhile, mix sugar with remaining cream cheese and milk until blended.
- Cool roll-ups 5 min. Drizzle with cream cheese glaze. Serve warm.

- Cut the apples in half lengthwise. Using a melon baller, scoop out the inside of the apples, taking care to create a shell of even thickness. Set apple halves into cups of a muffin pan and squeeze or brush lemon juice onto cut apples to reduce browning. Place in fridge until filling is ready. To a medium saucepan, add water and caramels and heat until caramels are melted. Fill each apple cup with caramel mixture. Refrigerate a few hours or overnight. To serve, place apples flesh-down (caramel down) on cutting board. Cut lengthwise in half, then in half again. Trim off any brown parts with a paring knife. Serve immediately. (The lemon juice can only prevent the browning for so long).

- Dough: Add flour, sugar, baking powder and salt to food processor and pulse until combined. Scatter chilled butter and shortening over flour and pulse until it resembles coarse crumbs. Transfer to a bowl and stir in half and half until dough forms. Turn out onto lightly floured counter and knead briefly until dough comes together. Press dough into a rough 10x5 rectangle and cut in half. Wrap each half in plastic wrap, and refrigerate until firm, about 1 hour or until you are ready to use.
- Peanut Butter Filling: Preheat oven to 425F degrees. Line baking sheet with parchment paper and set aside.
- Combine sugar and cinnamon in a small bowl. In a second bowl, combine peanut butter and 1/3 cup sugar mixture, and stir until completely combined. Using a melon baller, scoop out core/seeds of apples without piercing the bottom. Divide peanut butter mixture evenly among apple halves.
- Lightly flour counter and remove only one dough rectangle from the fridge. Sprinkle dough with flour and working quickly, roll dough into a 12 inch square and cut int half and half again to form 4 6-inch squares. Place apple, cut side up, in center of each square. Lift dough corners, to meet on top of apple half and crimp edges to seal. Repeat with other refrigerated dough ball and remaining apples.
- Line dumplings on prepared baking sheet and cut a vent hole in the top of each dumpling. Brush dumplings all over with egg whites and sprinkle with remaining sugar mixture. Bake until golden, 20-25 minutes. Let dumplings cool on sheet for 10 minutes.
- Meanwhile, prepare Caramel Sauce. When ready to serve, drizzle desired amount of caramel over dumplings and serve with vanilla ice cream if desired.

Yes, yet another apple dumpling recipe! Taste it, is really good and you will like it. My mother used to make these for dinner parties when I was young. Found this on Diana's Desserts, 2003 Diana Baker Woodall posted in February of that year. The sauce can be made up to 3 weeks ahead, chill in airtight container and the dumplings can be made up to 1 day ahead - chill sauce, dumpling and egg mixture separately in airtight container. Just bake chilled dumplings as directed.

- Make Caramel Sauce.
- Peel apples, core each, creating a 1" wide hollow from top to bottom.
- Place apples in a bowl and coat with lemon juice.
- On a lightly floured board, roll pastry into a 12" square.
- Cut into four equal squares and center an apple upright on each.
- Pour Caramel Sauce equally into apple hollows.
- Add chopped nuts at this time, if using.
- Brush egg/water mixture over 1/2" wide border around each pastry.
- To wrap each dumpling, with floured finger bring two opposite pastry corners up over apple and pinch tips together. Repeat with remaining two corners.
- Firmly pinch all tips together; pinch each seam, then fold over about 1/8" along the seam and pinch again, leaving no holes.
- Space evenly on a buttered 12x15" baking sheet.
- Bake at 375F for 20 minutes.
- Bake until pastry is deep golden, 10-15 minutes longer.
- With a wide spatula, transfer the dumplings to plates.
- Accompany with remaining caramel sauce and ice cream, if desired.
- Caramel Sauce:.
- In a 2-3 quart pan over medium heat, tilt and swirl sugar often until melted and amber-colored. About 5-7 minutes.
- Stir in whipping cream; mixture will bubble and sugar will harden.
- Stir until sugar melts again and sauce boils, 6-8 minutes.
- At once, pour sauce into a bowl.
- Stir in vanilla.
- Let sauce cool for 10 minutes, then stir in the rum.
- Serve warm or cool.

- Combine first 3 ingredients in a small saucepan.
- Place over low heat, and cook until smooth, stirring constantly.

I was thinking about this when making caramel apples the other day and thought I would share with everyone here. :) NOTE: You can also substitute the caramel for peanut butter instead for a healthier version for the kidlets.

- 1. Cut your apples in half. Remove stems.
- 2. Hollow out each half by coring and shaving away some of the inner apple. (I use a muffin tin to help balance.)
- 3. Fill with warmed caramel. (You can use homemade or you can use store-bought and microwave it in 15 second intervals until warmed.)
- 4. Let the caramel cool and harden. Once completely cooled, cut apples into slice and serve.

- Arrange a workstation with a small bowl of water, wonton wrappers, caramel sauce, and bowl of apples. Working one at a time, add about 1 TBS of apples to the center of the wonton, add a drizzle of caramel (about 1/4 tsp) then using your finger, wipe water across all sides of the wonton. Bring one corner up to the other in the center, and press together to seal. Then bring up the other 2 corners, and run your finger along to seal all edges. Set aside and repeat for all wontons/apple mixture.
- In a large stockpot, add about 1 inch of oil. Heat over medium high heat, and when you see ripples the oil is ready. Carefully drop the wontons bottom side down into the oil and cook for about 1-2 minutes on the first side. When they start browning, use a spatula and flip over. Cook another 1-2 minutes or until crispy. Remove from oil and set on a paper towel lined plate. Repeat until all wontons are fried.
- Arrange Caramel Apple Dumplings on a serving dish, drizzle with caramel sauce, then sprinkle powdered sugar over the top.
