The Easiest Tart EVER with a Thin Layer of a Caramelized Crisp over a Sweet Gooey Custard Filling and my Favorite Buttery Pie Crust!

Number Of Ingredients 14

1 1/2 cups (190 grams) all-purpose flour
1 teaspoon granulated sugar
1/4 teaspoon salt
1/2 cup (113 grams) unsalted cold butter, sliced or cut in 1 cm cubes
1 large egg yolk
4 to 5 tablespoons (60 to 75 ml) cold water
1/2 cup (113 grams) unsalted butter, softened
1 1/2 cups (330 grams) brown sugar
3 large eggs
1/4 cup (60 ml) buttermilk
1 tablespoon all-purpose flour
2 teaspoons (10 ml) pure vanilla extract
powdered sugar for dusting
whipped cream

Steps:

  • CRUST: In a medium bowl, whisk together flour, sugar and salt. Toss in butter and coat with flour mixture. Using a pastry blender or long-tined fork, cut in butter and egg yolk until the mixture becomes crumbly about the size of small peas. Add water 2 tablespoons at a time and continue to cut into the flour mixture until a dough forms and is able to leave the sides of the bowl becoming one cohesive mass of dough.
  • Shape the pastry dough into a flattened disk. Cover tightly with plastic wrap and allow to chill in the refrigerator for 30 minutes.
  • Heat oven to 450°F (230°C) and line a large baking sheet with parchment paper or a silicon baking mat; set aside.
  • Once the pastry dough has chilled, lightly flour a clean and dry surface. Roll pastry dough into a 10-inch circle, about 1/8 inch thick. Use remaining scraps to fill in any gaps or tears. With the aid of a large bench scraper, transfer the sheet of pastry dough onto a 9-inch (23 cm) tart pan with a removable bottom. Gently press into the bottom and up sides of the pan. Avoid stretching of the pastry dough.
  • BLIND BAKE: Lay above the unbaked pie crust a sheet of parchment paper and fill with ceramic baking beads or dried beans/rice. Bake for 7 minutes. Carefully remove beads and parchment paper. Bake again for 2 minutes. Remove pie crust from oven, set aside and reduce oven temperature to 350°F (175°C).
  • FILLING: In a medium bowl using an electric mixer, beat butter and brown sugar together until fluffy. Beat in 1 egg at a time. Stir in buttermilk, flour and vanilla. Pour filling into the partially baked crust.
  • Bake for 45 minutes or until almost set. Allow tart to cool completely on cooling rack. Sprinkle with powdered sugar and whipped cream. ENJOY!

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)box (14.1 oz), softened as directed on box
1/2 cup butter, softened
1 1/2 cups packed light brown sugar
3 eggs
1 tablespoon all-purpose flour
1/4 cup buttermilk
2 teaspoons vanilla
Powdered sugar, if desired
Sweetened whipped cream, if desired

Steps:

  • Heat oven to 450°F. Place pie crust in 10-inch tart pan with removable bottom as directed on box for One-Crust Filled Pie. Carefully line crust with a double thickness of foil, gently pressing foil to bottom and side of crust. Bake 7 minutes. Carefully remove foil; bake 2 minutes longer. Cool on cooling rack 10 minutes. Reduce oven temperature to 350°F.
  • In medium bowl, beat butter and brown sugar with electric mixer on medium speed until fluffy. Add eggs, one at a time, beating well after each addition. Stir in flour and buttermilk. Stir in vanilla. Pour filling into partially baked crust.
  • Bake 45 minutes or until almost set. Cool completely on cooling rack. Remove tart from pan; place on serving plate. Sprinkle with powdered sugar. Serve with whipped cream.

For pastry dough:
1 1/2 cups all-purpose flour
3 tablespoons granulated sugar
3/4 teaspoon salt
3 1/2 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons cold vegetable shortening (trans-fat-free)
4 to 5 tablespoons ice water
For pineapple salsa:
3 tablespoons peanut or vegetable oil, divided
1 pineapple (preferably labeled "extra sweet"), peeled and sliced crosswise into 1/2-inch-thick rounds
1 tablespoon grated lime zest
1/4 cup fresh lime juice
1 tablespoon dark rum
3 tablespoons packed light brown sugar
For caramel sauce:
1 cup granulated sugar
1/4 cup water
2 tablespoons unsalted butter, softened
1/2 cup heavy cream at room temperature
1 1/2 tablespoons plain Greek-style yogurt at room temperature
For filling:
4 whole large eggs
2 large egg yolks
1 1/2 cups granulated sugar
3 tablespoons unsalted butter, melted
2 1/2 tablespoons cornmeal
1/2 cup well-shaken buttermilk
1 /2 teaspoon kosher salt
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon grated nutmeg
Equipment: a 9-inch round tart pan (1 inch deep) with removable bottom; pie weights or dried beans

Steps:

  • Make dough:
  • Stir together flour, sugar, and salt in a large bowl (or pulse in a food processor). Add butter and shortening and blend with your fingertips or a pastry blender (or pulse) just until mixture resembles coarse meal with some roughly pea-size butter lumps. Drizzle 4 tablespoons ice water evenly over mixture and gently stir with a fork (or pulse) until incorporated.
  • Squeeze a small handful: If dough doesn't hold together, add more ice water, 1/2 tablespoon at a time, stirring (or pulsing) until incorporated. (Do not overwork dough or pastry will be tough.)
  • Turn out dough onto a work surface and form into a ball, then flatten into a 5-inch disk. Chill, wrapped in plastic wrap, until firm, at least 1 1/2 hours.
  • Make salsa while dough chills:
  • Heat 2 tablespoons oil in a 12-inch heavy skillet over high heat until it shimmers. Sear pineapple in 2 batches, turning once, until well blackened, about 6 minutes per batch, adding remaining tablespoon oil between batches. Transfer to paper towels to drain and cool briefly, then cut pineapple into 1/4-inch pieces, discarding core.
  • Whisk together lime zest, lime juice, rum, and brown sugar in a medium bowl. Stir in pineapple and chill until ready to use.
  • Make caramel sauce:
  • Bring sugar and water to a boil in a 10-inch heavy skillet, stirring until sugar has dissolved, then wash down any sugar crystals from side of skillet with a pastry brush dipped in cold water. Boil, without stirring, swirling pan occasionally, until dark amber, 7 to 8 minutes. Cool 2 minutes, then whisk in butter, cream, and yogurt. Transfer to a bowl and chill.
  • Make tart shell:
  • Preheat oven to 375°F with rack in middle.
  • Roll out dough on a lightly floured surface with a lightly floured rolling pin into an 11-inch round (about 1/8 inch thick), then fit into tart pan. Trim excess dough flush with rim, then press side to make dough come up slightly above rim. Lightly prick bottom all over with a fork, then chill 30 minutes.
  • Line tart shell with foil and fill with pie weights. Bake on a baking sheet until side is set and edge is pale golden, about 15 minutes. Carefully remove foil and weights and continue to bake until pale golden all over, about 25 minutes more, loosely covering edges with foil if they get too dark. Cool shell in tart pan 15 minutes.
  • Make filling and bake pie:
  • Reduce oven temperature to 350°F.
  • Whisk together eggs, yolks, and sugar in a large bowl, then whisk in remaining ingredients. Transfer filling to tart shell and bake until a light crust forms on top and filling is set 3 inches from edge but center is still wobbly, 45 to 50 minutes (filling will be slightly puffed and will continue to set as it cools).
  • Serve slightly warm or at room temperature, topped with pineapple salsa and drizzled with caramel sauce.

Vegetable oil cooking spray, for pan
1 1/4 cups ground Nilla Wafers (about 45)
5 tablespoons unsalted butter, melted and cooled slightly
2 tablespoons granulated sugar
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup packed light-brown sugar
1 tablespoon fine cornmeal
1/4 teaspoon salt
3 large eggs plus 1 large yolk
1/2 teaspoon pure vanilla extract
1 stick unsalted butter, melted and cooled slightly

Steps:

  • Preheat oven to 350 degrees. Make the tart shell: Coat a 9-inch fluted tart pan with a removable bottom with cooking spray. Mix together wafers, butter, granulated sugar, and salt. Press mixture into bottom and up sides of pan. Refrigerate until set, about 15 minutes.
  • Transfer pan to a rimmed baking sheet, and bake until tart shell is golden, about 12 minutes. Let cool slightly. Reduce oven to 325 degrees.
  • Make the filling: Mix together sugars, cornmeal, and salt, breaking up clumps. Whisk in eggs, yolk, and vanilla. Whisk in butter. Pour filling into tart shell. Bake until top is dark golden brown and edge is set but center is still a bit wobbly, 35 to 40 minutes.
  • Transfer pan to a wire rack, and let cool for 15 minutes. Refrigerate until cooled, at least 2 hours or overnight.
