You will need a deep 8-inch round cake tin to bake the cake in. A fabulous caramel flavoured butter cake topped with a brown sugar fudge icing.

Number Of Ingredients 14

125g butter, softened (1/2 cup + 1 tsp)
1 tsp vanilla extract
220g soft dark brown sugar (1 cup packed)
2 large free range eggs
1 TBS golden syrup
150g plain flour (1 cup + 1 1/4 TBS)
1 tsp ground cinnamon
75g self raising flour (1/2 cup + 2 tsp)
125ml whole milk (1/2 cup)
220g soft light brown sugar (1 cup packed)
60g butter (1/4 cup)
2 TBS whole milk
120g icing sugar, sifted (scant cup)
2 tsp whole milk, extra

Steps:

  • Preheat the oven to 180*C/350*F/ gas mark 4. Butter an 8-inch round cake tin and line it with paper. Set aside.
  • Cream the butter together with the vanilla and brown sugar in a small bowl until light and fluffy using an electric mixer. Beat in the eggs, one at a time, and then beat in the golden syrup.
  • Whisk together both flours and the cinnamon. Add this to the creamed mixture along with the milk, stirring in until thoroughly combined. Spread batter in the prepared cake tin.
  • Bake for 50 minutes until well risen and the top springs back when lightly touched. A toothpick inserted in the centre should come out clean. Let cool in the pan for 5 minutes, then remove to a wire rack to cool completely.
  • Measure the brown sugar, butter and first amount of milk for the icing in a saucepan. Cook over medium heat stirring, until the sugar dissolves and the butter melts. Bring to the boil, then reduce and simmer (without stirring) for 3 minutes. Stir in the sifted icing sugar. Gradually add the extra milk until the icing is of spreadable consistency. Spread this icing on top of the cold cake.

2 sticks (1 cup) salted butter at room temperature
1 1/4 cups granulated sugar
1 tablespoon vanilla extract
3 large eggs at room temperature
2 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups buttermilk, at room temperature
1 1/2 cups semi sweet chocolate chips
1 cup sour cream
1 teaspoon espresso powder ((optional))
2 sticks salted butter, at room temperature
1 cup packed dark brown sugar
1/2 cup heavy cream
2-3 cups powdered sugar
1 tablespoon vanilla extract
flaky sea salt, for sprinkling

Steps:

  • 1. Preheat the oven to 350° F. Butter 2 (8-inch) round cake pans and line with parchment paper. 2. In a large mixing bowl, beat together the butter and sugar until light and fluffy. Add the vanilla, beating until smooth. Beat in the eggs, one at a time, until combined. Add the flour, baking powder, baking soda, and salt. Stream in the buttermilk, beating until just combined. Pour the batter among the 2 cake pans.3. Bake for 25 to 30 minutes, until the center is just set. Let cool 5-10 minutes. Run a knife around the edge of the cake and invert the cake onto a plate, flip it back over onto a serving plate. Let cool.4. To make the chocolate frosting. Microwave the chocolate chips and a pinch of salt, stirring every 45 seconds, until melted. Stir in the sour cream and espresso, a dollop at a time, until the mixture is smooth. Swirl the frosting onto the top of the cake. Place the second cake layer on top. Run a knife around the side of the cake to clean up any frosting. Chill while you make the brown sugar frosting.5. To make the brown sugar frosting. Melt together the butter, brown sugar, and cream in a medium saucepan. Bring to a boil and cook 2 minutes or until the sugar has dissolved. Add a pinch of salt. Remove from the heat and add to the bowl of a stand mixer. Sift in the powdered sugar, then add the vanilla. Beat until well combined. The frosting should be glossy and pourable. If it feels too runny, add powdered sugar to thicken it.6. Pour the frosting over the cake, spreading around the sides of the cake too. The frosting will set quickly on the cake. If desired top with chocolate curls and sea salt. Slice, eat, and enjoy!!

1 cup butter, softened
2 cups sugar
4 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
4 teaspoons baking powder
1-1/3 cups 2% milk
CARAMEL SAUCE:
1/2 cup packed brown sugar
2 cups sugar
3/4 cup evaporated milk
2 egg yolks
2 tablespoons butter, softened
1 teaspoon vanilla extract
Confectioners' sugar, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; add to creamed mixture alternately with milk, beating well after each addition. Pour into three greased and floured 9-in. round baking pans., Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from the pans to wire racks to cool completely. Cut each cake horizontally into two layers. , For caramel sauce, melt brown sugar in a heavy skillet over low heat for about 25 minutes. Remove from the heat; set aside., In a heavy saucepan, combine the sugar, milk and egg yolks. Bring to a boil over medium heat, stirring constantly. Add melted brown sugar. Cook and stir until a thermometer reads 238° (soft-ball stage). Remove from the heat; stir in the butter and vanilla until the mixture is smooth and spreadable., Place bottom layer on a serving plate, quickly top with 1/3 cup caramel sauce. Repeat layers 4 times. Top with the sixth cake layer. Dust cake with confectioners' sugar if desired. , ,

1 cup unsalted butter
3 eggs
1/4 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
1 cup buttermilk
2 cups packed brown sugar
1/2 cup butter
1/2 cup evaporated milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch bundt pan.
  • Cream together the white sugar and 1 cup of the butter.
  • Add the eggs one at time, beating mixture well after each.
  • Mix the baking soda with the buttermilk. Add to butter mixture and beat.
  • Sift flour three times before measuring. Add sifted flour and 1/4 teaspoon salt to the butter mixture.
  • Stir in the 2 teaspoons vanilla. Pour batter into prepared pan.
  • Bake at 325 degrees F (165 degrees C) for one hour. Let cake cool and top with Caramel Icing.
  • To Make Caramel Icing:
  • In a saucepan over medium heat cook the brown sugar, remaining 1/2 cup butter, and the evaporated milk.
  • Stirring frequently bring mixture to a boil and let boil for 3 minutes. Remove from heat and stir in the 1 teaspoon vanilla, beat until thick.
  • Pour over top of cooled bundt cake.
