We baked Betty Crocker™ Supreme original brownie mix in mini muffin cups and frosted them with a caramel and salt-infused buttercream frosting for a delicious bite-size dessert.

1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
8 caramels, unwrapped
1 tablespoon half-and-half
6 tablespoons unsalted butter, softened
1 cup powdered sugar
1/8 teaspoon kosher (coarse) salt
Coarse sea salt, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Place mini paper baking cup in each of 32 mini muffin cups.
  • Make brownie batter as directed on box for cakelike brownies. Fill each muffin cup about three-fourths full.
  • Bake 18 to 21 minutes or until toothpick inserted in center of brownie bites comes out almost clean. Cool in pan 5 minutes. Remove from pans to cooling rack. Cool completely, about 20 minutes.
  • In small microwavable bowl, microwave caramels and half-and-half uncovered on High 1 minute, stirring every 30 seconds, until caramels are melted and mixture is smooth. Let stand about 15 minutes or until no longer warm to touch.
  • In another small bowl, beat softened butter with electric mixer on medium speed until fluffy. Add melted caramel mixture; beat until well blended. On low speed, beat in 1/2 cup of the powdered sugar until smooth, scraping down side of bowl occasionally. Add remaining 1/2 cup powdered sugar; beat until smooth and frosting is fluffy. Beat in 1/8 teaspoon kosher salt.
  • Pipe or spread frosting onto each brownie bite. Sprinkle with a small amount of coarse sea salt.

2/3 cup sugar
2 tablespoons water
1 cup semisweet chocolate chips
2 large eggs, room temperature
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
CANDY BAR TOPPING:
1 cup sugar
1/4 cup butter, cubed
1/4 cup 2% milk
1 cup marshmallow creme
1/2 cup creamy peanut butter, divided
1/2 teaspoon vanilla extract
2-1/2 cups dry roasted peanuts, divided
40 caramels
2 tablespoons water
1-1/4 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; coat foil with cooking spray., Microwave butter, sugar and water on high just until mixture comes to a boil, 3-4 minutes; stir until blended. Stir in chocolate chips until melted. Whisk in eggs, 1 at a time, stirring well after each addition. Whisk in vanilla. Stir in flour and baking powder., Spread into prepared pan. Bake until a toothpick inserted in center comes out clean, 18-20 minutes. Cool 30 minutes., For topping, combine sugar, butter and milk in a large saucepan; bring to a boil, stirring constantly, over medium heat. Boil 5 minutes, stirring frequently. Stir in marshmallow creme, 1/4 cup peanut butter and vanilla; pour over brownies. Sprinkle with 2 cups peanuts., In a small saucepan, combine caramels and water; cook, stirring, over medium-high heat until blended. Pour over peanuts., Microwave chocolate chips on high until softened, about 1 minute. Stir in remaining peanut butter until smooth; pour over caramel layer. Chop remaining peanuts; sprinkle on top. Refrigerate at least 1 hour., Lifting with foil, remove brownies from pan. Cut into bars. Store in an airtight container in the refrigerator.

An EASY, no mixer recipe for homemade brownie bites stuffed with CARAMEL and topped with whipped cream and sprinkles!! Rich, FUDGY, decadent, and DELISH!!

1/2 cup unsalted butter (1 stick)
6 ounces dark or bittersweet chocolate, chopped (I used Trader Joe's 72% Pound Plus Bar)
2 large eggs
3/4 cup granulated sugar
1 tablespoon vanilla extract
1 tablespoon brewed coffee (leftover or cold coffee is okay), optional but recommended
1 teaspoon instant espresso granules, optional but recommended
3/4 cup all-purpose flour
1/2 teaspoon salt, or to taste
24 unwrapped Rolo candies
whipped topping such as RediWhip, optional for garnishing
chocolate sprinkles, optional for garnishing

Steps:

  • Preheat oven to 350F and ppray two 12-count mini muffin pans extremely well with cooking spray, or grease and flour the pans; set aside.
  • To a large microwave-safe bowl, add the butter, chocolate, and heat on high power to melt, about 2 minutes. Stop to check and stir after 1 minute. Heat in 15-second increments until chocolate has melted and mixture can be stirred smooth. Allow mixture to cool momentarily before adding the eggs so they don't scramble.
  • Add the eggs, sugar, vanilla, optional coffee, optional espresso granules (neither make brownies taste like coffee and both enhance and round out the chocolate flavor), and whisk vigorously to combine.
  • Add the flour, salt, and stir until smooth and combined without overmixing.
  • Turn batter out into the prepared pans, filling each cavity to about 3/4 full.
  • Add 1 Rolo to the center of each cavity, pressing it down flush with the batter. It's okay if the cavities are nearly full or actually full because while the brownies do rise a small amount during baking (nothing like muffins), it's unlikely there will be any overflow.
  • Bake for about 11 to 14 minutes, or until brownie are set and a toothpick inserted comes out clean or with a few moist crumbs. Because all ovens, pan sizes, climates, etc. vary, it's very important to watch your brownies and not the clock. Mini desserts such as this tend to cook very quickly and can go from under to over done in 1 to 2 minutes so keep a close eye on them; err on the side of underdone so they will be more fudgy if you're in doubt.
  • Allow brownies to cool in pans on a wire rack for about 10 to 15 minutes or until they are cool enough to handle and release.
  • Allow brownies to cool completely before optionally adding the whipped topping to the tops of each and then optionally adding chocolate sprinkles.

1/4 cup 2% milk

1 package (14 ounces) caramels
1 can (14 ounces) sweetened condensed milk

Steps:

  • In a large bowl, beat the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; gradually add to egg mixture until well blended. Fold in chocolate chips and 1/2 cup walnuts. , Spoon two-thirds of the batter into a greased 13x9-in. baking pan. Bake at 350° for 12 minutes., Meanwhile, in a large saucepan, heat the caramels and condensed milk over low heat until caramels are melted. Pour over baked brownie layer. Sprinkle with remaining walnuts., Drop remaining batter by teaspoonfuls over caramel layer; carefully swirl brownie batter with a knife. , Bake for 35-40 minutes or until a toothpick inserted in center comes out with moist crumbs (do not overbake). Cool on a wire rack.

3 tbsps. water
1 large egg
1/3 cup Smucker's® Sugar Free Caramel Spoonable Ice Cream Topping, plus additional for drizzling if desired
2 cups sugar free frozen whipped topping, thawed
2 tsps. mini semi-sweet chocolate chips

Steps:

  • HEAT oven to 350 degrees F. Coat an 8 x 8-inch baking pan lightly with no-stick cooking spray.
  • COMBINE brownie mix, oil, water and egg in medium bowl. Stir 50 strokes with spoon. Spread evenly in prepared pan.
  • BAKE 30 to 32 minutes. Cool completely. Cut into cubes. Place half of cubes in 1 1/2-quart serving dish.
  • STIR caramel topping in bowl until smooth. Whisk in whipped topping until blended. Spread half on top of brownie cubes in dish. Make another layer of remaining brownie cubes and topping. Sprinkle with mini chocolate chips. Drizzle with additional caramel topping, if desired.
