3/4 cup Canola Oil
1 1/2 tsp Vanilla Extract
1.5 cups Ripe Bananas (mashed)
1 cup White Sugar
2 3/4 cups All Purpose Flour
2 tsp Baking Soda
2 tsp Baking Powder
1/4 tsp Salt
1 cup Roasted Walnuts (chopped)
1 cup White Sugar
1/4 cup Water
1/4 cup Butter
1/2 cup Whipping Cream
Pinch Salt
1 tsp Vanilla Extract
2 cups Unsalted Butter (softened)
450 g Cream Cheese (softened)
2 tsp Vanilla Extract
3 cups Powdered Sugar
4 Ripe Bananas (thinly sliced)
1/2 cup Roasted Walnuts (chopped)

Steps:

  • Preheat oven to 350 F. Line three, 8-inch round cake pans with parchment paper; or use two, 9-inch cake pans. Spray the sides with a baking spray.

This delicious Banoffee Cake is easy to make all in one bowl. A buttery soft banana sponge drenched with caramel and topped with whipped cream.

350 g (2 ¾ cups) flour (plain/ all purpose flour)
330 g (1 ⅔ cups) sugar
1 tbsp baking powder
½ tbsp bicarbonate of soda
200 g (7/8 cup) unsalted butter or margarine (softened )
3 large eggs
2 ripe bananas (mashed well or liquidised)
2 tbsp milk
1 tbsp Angostura Bitters
394 g (14oz) tin condensed milk
5 tbsp Dulce de Leche (or Caramel)
1 tsp Angostura Bitters
large pinch sea salt (to taste)
480 ml (2 cups) cold cream (double /heavy cream)
100 g (1 cup) icing sugar
2 tsp vanilla paste or extract
1 banana (sliced)
3 Biscoff cookies (powdered)

Steps:

  • Preheat the oven to 170C (340F). Spray a 23cm (9 in) springform cake tin with cake release or grease with softened butter and dust with flour shaking out any excess. Line the bottom of the tin with baking paper.
  • Put the flour and sugar in large bowl. Add the baking powder and bicarbonate of soda and mix together using a balloon whisk.
  • Add the softened butter, eggs, milk, Angostura Bitters and mashed bananas.
  • Start beating together on low speed setting using a hand mixer (or in a stand mixer using paddle attachment).
  • Increase the speed to maximum once the ingredients have been incorporated. Beat for a minute then stop and scrape the bottom and sides of the bowl with a spatula. Beat again until the batter is completely smooth.
  • Transfer the batter into the prepared cake tin and bake for 55 minutes to an hour. If the cake is colouring too rapidly then tent with foil after 25 minutes (but avoid keeping the oven door open for long). Do not place the foil directly onto the cake tin, make sure it is has a gap at the top to allow the cake space to rise properly.
  • Check the cake is done by inserting a skewer in the centre - it should come out clean, the cake should be well risen, golden and springy to the touch. Leave to cool in the tin.

175g unsalted butter, melted, plus extra for the tin
250g digestive biscuits, crushed to a fine powder
1/2 tsp ground cinnamon
2 tbsp icing sugar
1 tbsp cocoa
1/2 tsp cinnamon
3 medium bananas, chopped
750g full-fat soft cheese
200g mascarpone
175g light brown soft sugar
2 tsp vanilla bean extract
3 eggs
2 1/2 tbsp plain flour
100g caramel
300ml double cream
2 tbsp caster sugar
2 tbsp caramel
cocoa, for dusting
large handful baked banana chips (optional)

Steps:

  • Butter and line the base and sides of a 23cm square loose-bottomed cake tin. Put the biscuit crumbs in a bowl with the butter, cinnamon and a small pinch of salt, and mix until it resembles wet sand. Tip into the base of the tin, then level off and press the mixture down using the back of a spoon to compact it. Put in the fridge while you make the filling.
  • Heat the oven to 120C/100C fan/gas 1. Mix the icing sugar, cocoa and cinnamon in a bowl, then stir in the banana to coat. Set aside.
  • To make the creamy filling, put the soft cheese, mascarpone, sugar, vanilla extract, eggs and flour in a bowl. Beat using an electric whisk until smooth, about 3-4 mins. Gently fold in the banana mixture.
  • Take the base out of the fridge and pour over the filling. Level off the top using the back of a spoon, then drizzle the 100g caramel on top.
  • Bake in the oven for 1 hr with a tray placed underneath the tin to catch any drips of butter. Turn the oven off and leave the door ajar, using a spoon or spatula to prop it open. Leave inside until the oven is completely cool. Remove from the oven, then transfer to the fridge to chill overnight.
  • When ready to serve, make the sweet cream topping. Beat the cream and sugar in a bowl until it forms soft peaks. Remove the cheesecake from the tin and spread the cream over the top, drizzle with the 2 tbsp caramel, dust with cocoa and scatter with the banana chips, if using. Cut into nine pieces or 16 bite-sized squares to serve.

The cake is chocolate with a hint of banana and Caramel Bailey's Irish Cream. You could play with this and use whatever Bailey's flavor you like...the possibilities are endless.

1 cup chopped walnuts
1 (18 1/4 ounce) package milk chocolate cake mix
1 (3 1/2 ounce) package instant banana pudding mix
4 eggs
1/4 cup water
1/2 cup vegetable oil
3/4 cup Baileys caramel irish cream
1/2 cup butter
1/4 cup water
1 cup confectioners' sugar
1/4 cup Baileys caramel irish cream

Steps:

  • Preheat oven to 325°F (165°C). Grease and flour a 10 inch Bundt pan. Sprinkle chopped nuts evenly over bottom of pan.
  • In a large bowl, combine cake mix and pudding mix. Mix in eggs, 1/4 cup water, 1/2 cup oil and 3/4 cup Irish cream liqueur. Beat for 5 minutes at high speed. Pour batter over nuts in pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the cake comes out clean. Cool for 10 minutes in the pan, then invert onto the serving dish. Prick top and sides of cake. Spoon glaze over top and brush onto sides of cake. Allow to absorb glaze repeat until all glaze is used up.
  • To make the glaze: In a saucepan, combine butter, 1/4 cup water and 1 cup sugar. Bring to a boil and continue boiling for 5 minutes, stirring constantly. Remove from heat and stir in 1/4 cup Irish cream.
