Steps:
- Preheat oven to 350.
- Butter a 9x13" dish and set aside.
- Combine Sugar, cinnamon and nutmeg in a shallow dish and mix well. Set aside.
- Chop pie filling into small size pieces.
- Microwave tortillas for 20 seconds to soften.
- Spread tortilla with thin layer of caramel sauce down the middle.
- Cover caramel with diced apple filling.
- Roll tortilla and place in prepared dish.
- Brush with butter and sprinkle with sugar mixture.
- Repeat with remaining tortillas.
- Bake for 15 minutes of until golden and bubbling on ends.
CREAMY CARAMEL APPLE TAQUITOS
These Creamy Caramel Apple Taquitos are filled with cinnamon apples, caramel, and cream cheese, rolled in cinnamon sugar and drizzled with caramel.

- Preheat oven to 400 degrees and spray a baking sheet with cooking spray.
- In a skillet, add the apples, butter, sugar, and cinnamon. Cook for 5-7 minutes over medium heat until apples are soft. Remove from heat and set aside.
- In a small bowl mix the cream cheese and caramel syrup together until smooth.
- Spoon about 1 tablespoon of the cream cheese mixture on the bottom 1/3 of each tortilla and top with a spoonful of the apple mixture. Roll up tightly.
- On a plate combine the sugar and cinnamon. Brush each tortilla well with the butter and sprinkle with the cinnamon sugar mixture. Place seam side down on the prepared baking dish.
- Bake for 10-15 minutes or until tortillas are golden brown. Cool slightly and serve with additional caramel for dipping.

- Preheat the oven to 400 degrees F and line a baking sheet with foil.
- Set a medium skillet over medium heat. Add the butter and heat until melted, then remove half of the butter to a bowl and set aside. Add the apples to the skillet along with the salt, 1/4 cup sugar, 1 teaspoon cinnamon and 1 pinch ras el hanout. Cook, stirring every now and then, until the apples have softened, about 5 minutes.
- Turn the heat off and pull the skillet off the heat. Add the tequila, then set it on fire using a stick lighter. Shake the pan gently to distribute the tequila and wait for the flames to die down. Set back on low heat and cook for a few minutes to reduce further. Set aside.
- Mix the remaining 1/4 cup sugar, 1 teaspoon cinnamon and pinch ras el hanout together in a bowl.
- Warm the tortillas over an open flame. Spread a spoonful of apple filling in each tortilla. Roll the tortillas over the filling and keep rolling until you have a cigar. Place the taquito seam-side down on the lined baking sheet. Brush with the reserved melted butter, then sprinkle with the cinnamon-spice sugar. Repeat with the remaining tortillas.
- Bake until crispy, 10 to 15 minutes.

- Peel and core apples.
- Dice apples into small chunks into a saute pan and place over medium-high heat. Add water, cinnamon, nutmeg, and sugar, stir to combine. Cook apples until tender and sugar have caramelized. The amount of time this takes will completely vary on the temperature.
- Once completely cooked. Remove from heat. Divided apples among the tortillas, placing a strip of apples down the center of the tortilla, like you are making a taco. Tightly roll the tortilla. Set aside and repeat with remaining tortillas.
- Wash and dry pan.
- In a small mixing bowl add sugar and cinnamon, Pour onto a dinner-sized plate and set aside.
- Add 2-3 tablespoons of cooking oil in the pan, place over medium-high heat.
- Cooking 3-4 taquitos at a time, add to the pan. Turn every 5-10 seconds until every side of the taquitos is a light golden brown.
- Remove immediately from oil and roll in the cinnamon and sugar mixture. Repeat with remaining taquitos.
- Top taquitos with caramel sauce and serve with whipped cream.

- Preheat the oven to 400 degrees F. and line a baking sheet with foil or a silicone mat for easy clean up. Place the 2 chopped apples, 2 Tbsp. butter, 2 Tbsp. sugar, and 1/2 Tsp. cinnamon into a skillet and cook over a medium-high heat for 5-7 minutes. Set aside to cool. In a medium, beat together the 4 oz. cream cheese and 1/4 C. caramel sauce together until smooth and creamy. Mix together the 1/3 C. natural sweetener and 2 Tsp. cinnamon in a shallow bowl or plate; set aside. Lay out a tortilla and spoon about 1 Tbsp. of the cream cheese filling onto the tortilla and spread over about half of it. Scoop a spoonful of the apple pie filling over the cream cheese and roll it all up. Brush with some of the melted butter and then roll through the cinnamon sweetener mixture to coat. Set seam side down onto the prepared baking sheet and rinse and repeat for the remaining tortillas. Place the baking sheet into the oven to bake for 10-15 minutes or until the edges are browning. Once done, remove from the oven and serve right away to enjoy!

- 1. Dice up your apples with or without skin on and then saute in a pan with 1/4 stick of butter. Once cooked down & softened add your apple jelly & cinnamon.
- 2. Take your flour tortillas and place a few in a damp towel and microwave for about 10 seconds or so... just to soften them up and make easy to roll. Drizzle just a little caramel sauce down the center of tortilla and add about 1-2 tablespoons of apple mixture & then roll up.
- 3. Melt down the other 1/4 cup of butter in your pan that you are going to cook them in. Place your rolled apple taquitos in pan tightly up against one another. Once finished brush a little melted butter on to the tortillas and add your blended cinnamon/sugar mixture for the topping.
- 4. You want these to cook so they get a crispy on the outside and nicely heated throughout. About 20 minutes on 350 degrees.
