CARAMEL PECAN APPLE PIE
This delicious pie is a hit at Thanksgiving, or anytime, really! It's a combination/adaptation of the Basic Flaky Pie Crust, Apple Pie by Grandma Ople, and Upside-Down Apple Pecan Pie.

Steps:
- Whisk 2 1/2 cups flour and salt together in a bowl. Cut in shortening with 2 knives or pastry blender until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened and dough comes together. Do not add more water than you need. Divide the dough in half and shape into 2 balls. Wrap in plastic wrap and refrigerate, at least 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch pie pan with wax paper.
- Melt 1/2 cup unsalted butter in a saucepan over medium heat. Stir in 3 tablespoons flour to form a paste. Stir in 1/4 cup white sugar, 1/2 cup brown sugar, 1/4 cup water, vanilla extract, cinnamon, and nutmeg; bring to a boil. Reduce heat and simmer until filling mixture is thickened slightly, about 3 minutes.
- Melt 1/3 cup butter in a separate saucepan over low heat. Add 1/2 cup brown sugar and whisk until smooth, about 2 minutes. Stir in pecans.
- Spread pecan mixture evenly onto lined pie pan. Roll out one ball of dough; line pie pan over pecan mixture. Toss apples with filling mixture; pour into pie plate. Roll out second ball of dough and place over apple filling. Crimp edges of bottom and top crusts together. Cut several small slits into top crust to vent. Place pie on foil-lined baking sheet.
- Bake pie in the preheated oven until crust is golden brown, about 1 hour.
- Remove pie from oven and allow to cool slightly, 5 to 10 minutes. Place a serving plate gently over pie and carefully flip to invert, being careful not to come in contact with molten sugar. Peel off waxed paper; cool for 1 hour.

- Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. CARAMEL CRUNCH APPLE PIE
This is the most wonderful apple pie, and one of my family's favorites!... of coarse, if you prefer, this pie may be made with your favorite homemade pie crust, or use my recipe#66929 for this. (note: this pie is best prepared with Granny Smith apples, as these apples seem to hold up better, and not become soft and soggy when baked). Hint: my advise to you is...better prepare two of these, as they will go fast, this pie is so delicious!

Steps:
- Set oven to 375 degrees.
- In a large bowl, combine the apples, and 2 Tbsp flour, tossing to coat the apples; spoon into the thawed (unbaked) pie shell.
- In a medium saucepan, combine the caramels and water over medium heat, stirring until the caramels melt, and the mixture is smooth.
- Spoon the caramel mixture evenly over the apples in the pie crust.
- In a medium bowl, combine the remaining 2/3 cup flour, the sugar, cinnamon and butter, stirring until crumbly.
- Add in the walnuts; mix well.
- Sprinkle over the pie and place the pie plate on a baking sheet.
- Bake for 40-45 minutes, or until the apples are tender.
- Serve warm, or allow to cool completely before serving.

Steps:
- Preheat oven to 350 degrees.
- Boil apple slices in enough water to cover them for 15 minute.
- Drain apple slices in a collander.
- Replace apple slices into pot without heat and add margarine, cinnamon, sugar, caramel, and pecans.
- Stir slowly until all margarine is melted and other ingredients are well blended.
- Take 2 pie baking dishes and spray with no-stick spray until well coated.
- Open and unroll pie shells and place inside the pie dish; trim off excess with a sharp knife.
- Divide caramel apple pecan mixture between the 2 pie shells evenly.
- Moisten the pie shell where it is to contact the upper shell with water or egg wash, which ever you prefer.
- Open and unroll other pie shells for the cover shell and press down around the pie to seal.
- Cut 2 or 3 slits in the tops for vents and trim excess crusts from around the dish again.
- Place in center of oven for 35 minutes at 350 degrees, check to see if tops are golden brown. If they are, they are done.
- Remove from oven and allow to cool for 45 minutes before slicing.

- Melt 1/4 cup butter and pour into the bottom of the pie crust; spread to cover bottom.
- Sprinkle brown sugar over butter and cover with chopped pecans.
- Place apple slices in pie crust over the nuts and sugar.
- In a small bowl, mix together the granulated sugar, flour, cinnamon, nutmeg, and salt.
- Sprinkle over the apple slices.
- Sprinkle with water and dot apple slices with additional butter.
- Place top crust over apples and flute edges.
- Bake at 425° for 15 minutes.
- Reduce heat to 350° and bake for an additional 35-40 minutes.
- If fluted edges start to get too dark, cover with foil.

- Directions for Crumb Topping: Stir together brown sugar,flour, rolled oats.
- Cut in 1/2 cup butter until topping is like course crumbs.
- Set aside.
- Directions: In a large mixing bowl, stir together the sugar, flour, cinnamon and salt.
- Add apple slices and gently toss until coated.
- Transfer apple mixture to the pie shell Sprinkle crumb topping over apple mixture.
- Place pie on a cookie sheet so the drippings don't drop into your oven.
- Cover edges of pie with aluminum foil.
- Bake in a preheated 375F oven for 25 minutes.
- Then remove foil and put back in for another 25 to 30 minutes without foil.

My family loves this! I have received a lot of compliments on this pie and it even placed at my county fair in 2010. Super yummy just the way it is or you can have it with a scoop of french vanilla ice cream while it is still warm.

- 1. Pie Crust: Place all ingredients in a 9 inch pie plate, mix well with hands. Spread out in pie plate.
- 2. Filling: peel and slice apples in to a large bowl Sprinkle 1 teaspoon cinnamon over apple slices and lightly toss. Pour in to your crust.
- 3. Topping: Mix all ingredients in a bowl until well blended. Heap over top of apples. Bake at 350 degrees for 35-45 minutes depending on your oven. Topping will be golden brown and apples will be soft but not mushy. Cool for 30 minutes.
- 4. Caramel Drizzle: After pie has cooled for 30 minutes, melt caramels and milk in microwave safe dish, microwave until smooth, keep a close eye on this so you do not over cook, I use 15 second increments, drizzle about half over top of pie, sprinkle with chopped pecans, lightly drizzle remaining caramel over nuts. You can garnish with whole pecans if you like.

- Roll out dough to a 12-inch round on a lightly floured work surface. Transfer to a 9-inch pie plate. Trim edges, leaving a 1/2-inch overhang. Fold edges of dough under itself until flush with edge of dish. Crimp edges with fingers, the tines of a fork, or a spoon. Refrigerate until firm, about 30 minutes. Meanwhile, make crumb topping.
- Crumb Topping: Combine flour, pecans, brown sugar, and salt in a medium bowl. Massage butter into flour mixture with your fingers until mixture clumps together and no dry flour remains. Press into bottom of bowl and refrigerate until firm, about 20 minutes.
- Filling: In a large bowl, toss apples and pecans with flour, sugar, cinnamon, and salt until evenly coated. Stir together lemon juice and vanilla, drizzle over apple mixture, and toss to evenly coat.
- Preheat oven to 375 degrees with racks in middle and lower third positions. Place a parchment-lined rimmed baking sheet on lower rack. Pour apple mixture into crust. Break up topping into large pieces and sprinkle evenly over filling. Bake on center rack until bubbly and crust is golden brown, 1 1/4 to 1 1/2 hours. To me, this is the purest and most intensely flavored apple pie recipe there is. The interesting thing about this recipe is the way the caramel sauce is poured over the apples and the lattice crust. You know how with a traditional apple pie some of the apple juices will caramelize as it bakes and bubble out of the pie and bake into and onto the flaky crust? That's how this whole pie is.

- Preheat oven to 425 degrees F (220 degrees C).
- Combine butter, white sugar, brown sugar, water, cinnamon, and salt in a saucepan over medium heat. Bring to a boil, remove from heat and set aside.
- Roll out half the pastry to fit a 9-inch pie plate. Place bottom crust in pie plate; pour in apple slices.
