1 box Spice cake mix
1/2 cup (1-stick) butter, softened (I used salted)
1 egg
2 medium Granny Smith apples
2 tablespoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup coarsely broken pecans
1 (14-ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350°F. Line a 13x9-inch baking pan with parchment paper. In a medium bowl, Combine the cake mix, butter, and egg. Pour into the baking pan and smooth it out. Peel and chop the apples. Add the sugar, cinnamon, and nutmeg, tossing to combine. Distribute apples over the cake batter. Sprinkle pecans on top of apples. Drizzle the can of condensed milk over the top of everything. Bake for 30 to 35 minutes, or until center is set. Use the parchment paper to remove it from the pan to a wire rack to cool. To serve, cut into squares and drizzle with caramel sauce, if desired. Maybe, even a scoop of vanilla ice cream!

1 cup butter, cubed
2-1/4 cups packed brown sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons baking powder
2 cups chopped pecans
Confectioners' sugar, optional

Steps:

  • In a large saucepan, combine butter and brown sugar over medium heat until sugar is dissolved. In a small bowl, beat eggs and vanilla. Gradually add hot sugar mixture, stirring constantly. Combine flour and baking powder; gradually add to the butter mixture and mix well. Stir in pecans. , Spread into a greased 13x9-in. baking pan. 4-1/2 cups coarsely chopped peeled tart apples
3 tablespoons all-purpose flour
1 package (11 ounces) caramels
3 tablespoons butter

Steps:

  • In a large bowl, cream butter, shortening and brown sugar until light and fluffy, 5-7 minutes. Add flour, oats, salt and baking soda; mix well. If desired, stir in pecans. Set aside 2 cups. Press remaining oat mixture into an ungreased 13x9-in. baking pan. , For filling, toss apples with flour; spoon over the crust.
