Apple cake that is sealed in jars and can be given as gifts, or stored for emergencies.

⅔ cup shortening
2 ⅔ cups white sugar
4 eggs
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ teaspoons salt
2 teaspoons baking soda
3 cups all-purpose flour
⅔ cup water
3 cups grated apple
⅔ cup raisins
⅔ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease the insides of 8 straight-sided wide-mouth pint canning jars. Sift together flour, baking soda, salt, nutmeg and cinnamon. Set aside.
  • Cream shortening and sugar until fluffy. Add eggs and beat in well. Add flour alternately with water and mix until smooth. Fold in apples, raisins and nuts.
  • Fill jars 1/2 full of batter, being careful to keep the rims clean. Wipe off any batter that gets on the rims. Bake at 325 degrees F (165 degrees C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.
  • As soon as cake is done, remove from oven one at a time, wipe rims of jars and put on lid and ring. Jars will seal as cakes cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
  • Jars should be eaten or kept in refrigerator for up to a week.

2 cups packed brown sugar
⅔ cup white sugar
1 cup butter, softened
4 eggs
⅔ cup milk
1 tablespoon vanilla extract
3 ½ cups all-purpose flour
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup chopped walnuts

Steps:

  • Sterilize 6 (1 pint) straight sided wide mouth canning jars, lids and rings by boiling for 10 minutes. Keep the lids and rings in the hot water until needed. Preheat oven to 325 degrees F (165 degrees C). Dry jars and let them come to room temperature. Grease insides of jar well.
  • In a medium bowl, sift together the flour, baking powder, soda and salt. Set aside.
  • In a large bowl, cream sugars and butter with electric mixer. Add eggs and mix well. Add milk and vanilla and mix well.
  • Add flour mixture and blend with a large spoon. Gently fold in nuts.
  • Place 1 cup batter into each of the greased one pint wide mouth canning jars. Wipe any batter from rim. Place jars on baking sheet. Bake at 325 degrees F (165 degrees C) for 50 minutes or until toothpick inserted deep into center of cake comes out clean.
  • Make sure jar rims are clean. (If they're not, jars will not seal correctly). While jars are still hot, place lids on jars, and screw rings on tightly. Jars will seal as they cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.
  • Keep in refrigerator for prolonged storage.

Steps:

  • Preheat oven to 350 degrees. Grease twelve 1/2-pint wide-mouth canning jars with a paper towel dipped in shortening.
  • Sift flour, baking powder, salt, nutmeg, allspice, cinnamon, and baking soda into a large bowl. Using the electric mixer and a medium mixing bowl, cream together the shortening and sugar on low speed, then increase to medium speed to mix well. While the mixer is running, add the eggs, one at a time. Stop the mixer and scrape down the sides. Remove the bowl from the mixer and stir in the apple sauce. With a large spoon, stir in the sifted flour mixture and the walnuts. Pour the batter into a measuring cup with a spout; pour the batter neatly into the greased jars. Fill the jars halfway full. Place the filled jars on the sheet tray and bake on the center rack of the oven for 45 minutes. When done, the top of the cake will spring back when pressed with a finger, and the sides will have come away from the jar.
  • Remove from oven and let cool 10 to 15 minutes. Cake will still be warm, but not hot. Place a circle of waxed paper on top of the jar and seal with the jar lid. Pack carefully so as not to break the glass

1-1/2 cups sugar
1/2 cup packed brown sugar
3 eggs
3 cups all-purpose flour
2 teaspoons ground cinnamon

3-1/2 cups diced peeled apples
1 cup chopped walnuts
2 teaspoons vanilla extract
CARAMEL ICING:
1/2 cup packed brown sugar
1/3 cup half-and-half cream
1/4 cup butter, cubed
Dash salt
1 cup confectioners' sugar
Chopped walnuts, optional

Steps:

  • In a large bowl, combine the oil, sugars and eggs until well blended. Combine the flour, cinnamon, baking soda, salt and nutmeg; gradually add to creamed mixture until blended. Fold in the apples, walnuts and vanilla. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° for 1-1/2 hours or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely. , In a small heavy saucepan over medium-low heat, cook and stir the brown sugar, cream, butter and salt until sugar is dissolved. Transfer to a small bowl; cool to room temperature. Beat in confectioners' sugar until smooth; drizzle over cake. Sprinkle with walnuts if desired.

1/3 cup vegetable oil
3 eggs
1 Gala apple, peeled, cored and coarsely grated
1 teaspoon ground cinnamon
Filling
2 tablespoons unsalted butter
Pinch of salt
3 Gala apples, peeled, cored and diced into 1/4-inch pieces
1/8 teaspoon ground cinnamon
1 1/4 cups heavy cream
1 tablespoon sugar
12 Weck canning jars (9 oz each)
1 1/2 cups jarred caramel, plus more for drizzling

Steps:

  • Cake 1. Heat oven to 325 degrees . Coat 12 cups of a jumbo muffin tin with nonstick cooking spray. (Note: Cake can alternately be baked in a 15 x 10 x 1-inch jelly roll pan.) 2. Prepare cake mix as per package directions with oil, eggs and 1 cup water. Fold in grated apple and cinnamon. Divide evenly among prepared muffin cups. Bake at 325 degrees for 25 to 28 minutes, until crowned slightly and dry to the touch. 3. Cool in pans for 10 minutes, then run a thin knife or spatula around edge and remove cakes directly to a wire rack; cool completely. Filling 4. Melt butter in a large nonstick skillet over medium heat. Add salt, diced apples and cinnamon. Cook 7 to 8 minutes, until slightly tender. Set aside. 5. Whip heavy cream and sugar to medium-stiff peaks. 6. Once cakes have cooled, slice each in half horizontally. Fit 1 cake round into a jar, pressing with fingers until flush with bottom of jar. Top with 1 tbsp of the caramel, 1 tbsp of the apple mixture and 2 tbsp of the whipped cream. Repeat layers of cake, 1 tbsp of the caramel and 1 tbsp of the apple mixture. Repeat process in remaining jars. Refrigerate, then top with a dollop of whipped cream and drizzle with a little of the remaining caramel just before serving.
