I love caprese salad and I'm always trying to find new ways to make chicken dishes and eat a bit healthier. Plus the basil in my garden is growing out of control! Everyone who's made it raves about it and makes it again and again!

4 (6 ounce) skinless, boneless chicken breast halves
1 cup Italian salad dressing
1 tablespoon Italian herb seasoning
1 tablespoon chicken seasoning (such as Grill Mates® Montreal Chicken Seasoning)
2 tablespoons canola oil
4 (1/2 inch thick) slices fresh mozzarella cheese
4 (1/2 inch thick) slices tomato
4 large fresh basil leaves
1 tablespoon balsamic vinegar

Steps:

  • Place chicken breasts, Italian salad dressing, Italian herb seasoning, and chicken seasoning into a resealable plastic bag, knead bag several times to coat chicken with marinade, and squeeze air from the bag. Seal and refrigerate 4 to 6 hours.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Pour canola oil into a large cast-iron or ovenproof skillet over medium-high heat. Heat the oil until a small droplet of water pops in the oil. Remove chicken breasts from marinade and discard used marinade. Place chicken breasts into hot oil, fry for 2 minutes, and flip chicken.
  • Place skillet into the preheated oven and bake until chicken is no longer pink inside and the juices run clear, about 12 minutes. Top each chicken breast with a slice of mozzarella cheese and a tomato slice.
  • Return to oven and bake until cheese has melted, 3 to 5 minutes. Transfer chicken breasts to a serving platter and top each with a basil leaf and a drizzle of balsamic vinegar.

An elegant and easy take on a classic caprese skewer dish. Great for an appetizer at a dinner party. Serve with a small bowl of balsamic vinegar and good quality olive oil for dipping.

1 (8 ounce) container small fresh mozzarella balls
1 (4 ounce) package fresh basil leaves
1 (10.5 ounce) container cherry tomatoes, halved
24 small skewers, or as needed
salt and ground black pepper to taste

Steps:

  • Wrap each mozzarella ball with a basil leaf.
  • Thread a tomato half, a basil-wrapped mozzarella ball, and another tomato half onto a skewer. Repeat until all tomatoes are on skewers. Sprinkle with salt and pepper.

This makes a delicious appetizer, with tomato, olive,and mozzarella. Dressed with balsamic vinegar and olive oil, you're in for a treat!

2 beefsteak tomatoes
4 1/2 ounces mozzarella cheese (about 1 cup)
12 black olives, pitted and sliced
8 fresh basil leaves
1 tablespoon balsamic vinegar
1 tablespoon extra virgin olive oil
salt and pepper
fresh basil leaf, to garnish

Steps:

  • Using a sharp knife, cut the tomatoes into thin slices.
  • Drain the mozzarella, if necessary, and cut into slices.
  • Layer the tomatoes, mozzarella, olives, and basil leaves alternately in a stack, finishing with a layer of cheese on top.
  • Place each stack under a preheated hot broiler for 2-3 minutes or just long enough to melt the mozzarella.
  • Drizzle over the balsamic vinegar and olive oil, and season to taste with a little salt and pepper.
  • Transfer to individual serving plates and garnish with fresh basil leaves.
  • Serve immediately.
  • Enjoy!

  • Bring a large pot of water to a boil, generously season with salt. Add the pasta and cook until just tender but still firm to the bite, stirring occasionally. Drain the pasta and reserve 1/2 cup of the water.
  • Thaw out the frozen calamari by running cold water over the rings. Once they are thawed remove excess moisture by blotting with paper towels. This step can be omitted if using fresh calamari.
  • Meanwhile heat reserved oil from anchovies and the olive oil in large skillet over medium-high heat. Add garlic, crushed red pepper, anchovies, capers, lemon juice and stir 1 or 2 minutes. The anchovies will melt and disappear as they cook. Add the calamari and toss until opaque, about 1 more minute.With a slotted spoon remove the calamari from the pan. This prevents the seafood from overcooking and having the texture of rubber bands.
  • Add the dry white wine; boil until sauce is slightly reduced, about 2 minutes. Add the tomatoes and continue to simmer for an additional 1 or 2 minutes.
