Steps:
- Combine flour, baking powder, cardamom, and salt; set these dry ingredients aside.
- Combine milk and instant coffee in saucepan, and heat at a medium low setting. Stir until coffee dissolves, and remove from the heat.
- In a large bowl, cream the butter or margarine with the white sugar and 1 cup confectioners' sugar. Beat in the egg, and then beat in the coffee mixture. Gradually blend in the mixture of dry ingredients, and fold in the almonds.
- Spread dough evenly in a 9 x 13 inch baking pan. Bake for 18-20 minutes at 350 degrees F (175 degrees C), or until toothpick inserted in center comes out clean. Cool in pan on wire rack.
- To Make Frosting: Put 1 cup of the confectioners' sugar in a mixing bowl. Beat in the evaporated milk and vanilla extract. Gradually beat in remaining 2 cups of confectioners' sugar. Continue beating until of desired consistency. If consistency is too thick, add a little more milk; if it is too thin, add more powdered sugar.
- Frost the bars with the icing.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the butter, brown sugar, egg yolk and vanilla until smooth. Combine the flour and salt; stir into the creamed mixture. Spread evenly into the prepared pan.
- Bake for 15 minutes in the preheated oven. Remove from the oven and place chocolate bars over the top in a single layer. Let stand until chocolate is soft enough to spread. Spread the chocolate out smooth and sprinkle with walnuts and ground coffee. Allow the bars to cool completely before cutting into squares.

Steps:
- Arrange half the grahams in single layer on bottom of 13x9-inch pan, cutting grahams to fit if necessary.
- Beat cream cheese in large bowl with mixer until creamy. Gradually beat in 1 cup milk. Add dry pudding mixes, coffee granules, cinnamon and remaining milk; beat 1 to 2 min. or until blended. (Mixture will be thick.) Gently stir in 2 cups COOL WHIP.
- Spread half the pudding mixture over grahams in pan; cover with remaining grahams, pudding mixture and COOL WHIP. Sprinkle with grated chocolate. Freeze several hours or until firm.

- Preheat oven to 350° F and prepare a 8-inch square pan by greasing bottom and sides with vegetable oil or spray.
- For base, melt butter and stir in sugar. Sift cocoa powder into mixture and blend well. Whisk together egg and vanilla extract and add. Blend in chocolate cookie crumbs, coconut and chopped walnuts until evenly incorporated. Press into prepared pan and bake for 10 minutes. Allow to cool for 10 minutes then chill for 20 minutes.
- For cappuccino filling, beat butter by hand until smooth and beat in custard powder. Heat milk with coffee powder to dissolve and cool to room temperature. Add milk to butter mixture a stir in sifted icing sugar a cup at a time, combining well. Spread over base and chill while preparing topping.
- For topping, melt chocolate and butter over a pot of gently simmering water. Pour over vanilla filling and spread to cover evenly. Chill for 30 minutes.
- To serve, slice with a hot, dry knife into 1-inch squares.

I make these often it's a wonderful easy recipe and they are very moist! Serving size is only estimated depending on the size you cut the squares. You can even add in nuts in place of the chocolate chips or use about 6 ounces each!

- Set oven to 350 degrees.
- Grease a large cookie sheet.
- In a bowl combine oil, sugar and eggs, beat until well combined.
- In another bowl, combine dry ingredients, except chocolate chips, then add to the oil/sugar mixture; mix well.
- Add the vanilla and coffee; mix until combined.
- Stir in chocolate chips.
- Spread on a cookie sheet.

- 1. Sift the flour, baking powder, and cocoa into a bowl and add the butter, sugar, eggs, and coffee. Beat well, by hand or mixer until smooth. Then spoon into a greased and floured shallow 11x7 inch pan and smooth the top.
- 2. Bake in a 350 degree preheated oven for 35 to 40 minutes, or until risen and firm, then turn out onto a wire rack to cool completely. To make the frosting, place the chocolate, butter and mlk in a bowl and set over a pan of simmering water and stir until the chocolate has melted.
- 3. Remove the bowl from the pan and sift in the confectioners' sugar. Beat until smooth, then spread over the cake. Dust the top of the cake with sifted cocoa. Cut into 20 squares.
COFFEE SQUARES
Steps:
- Combine oil, sugar and eggs, mixing well. Combine dry ingredients and add to the first mixture, blending well. Add vanilla and coffee, mixing well. Stir in the chips, blending well. Spread on a large greased cookie sheet. Bake 15 minutes in a preheated 350℉ (180℃) F oven. Cool and cut.

- Prepare the Crust: Preheat oven to 325°F. Coat a 13- x 9-inch baking pan with baking spray with flour. Stir together cookie crumbs, melted butter, sugar, espresso granules, and egg white in a large bowl until combined. Firmly press mixture into bottom of prepared pan. Bake in preheated oven until Crust is set, about 14 minutes. Cool completely, about 30 minutes.
- Prepare the Filling: Beat cream cheese and sugar in a stand mixer fitted with a paddle attachment on medium-high speed until smooth and creamy, about 3 minutes. Reduce speed to low; beat in 3⁄4 cup of the heavy cream. Increase speed to high; beat until stiff peaks form, about 2 minutes. Transfer 2 cups of the cream cheese mixture to a medium bowl; set aside. Dollop remaining 3 cups cream cheese mixture over cooled Crust.
- Place remaining 1⁄4 cup heavy cream in a small microwavable bowl; microwave on HIGH until just warm, about 20 seconds. Stir in espresso granules and cocoa until dissolved. Place in freezer; cool 10 minutes. Beat cooled mixture into reserved cream cheese mixture in bowl on medium speed until smooth and thickened, about 1 minute. Dollop over cream cheese mixture in Crust. Using a spoon, swirl espresso-cream cheese and plain cream cheese mixtures together to edges of Crust.
- Cover and refrigerate until very cold, at least 4 hours. Slice into 32 bars. Garnish bars with chopped chocolate-covered espresso beans.
