- Drain and rinse the beans.
- Heat the butter or olive oil over medium-low heat in a small skillet. Add the beans and seasoning. Heat until just warm, about 2 minutes.

THE PERFECT CAPPUCCINO
Steps:
- Gather the ingredients.
- Place the water into the boiler of your espresso machine.
- Place the 2 tablespoons (2 shots) of ground coffee into the portafilter.
- Tamp (press) the coffee down using a tamper. Do this 2 to 3 times to make sure the grounds are packed tightly.
- Place the portafilter into your espresso machine's group head and lock it in place by turning it to the right.
- Place a demitasse cup or the glass carafe that came with your espresso machine under the group head and pull the shot for 23 to 30 seconds, or until 2 ounces of espresso is yielded. Typically, there is a lever, switch, or button to start this process.
- Once the shot is pulled, foam the milk.
- Place the milk into either a glass measuring cup or a small metal pitcher.
- Insert the steam wand into the container with the milk, just under the surface of the milk.
- Engage the steam wand on your espresso machine. (You may need to read your espresso machine's manual for this, as each espresso maker is a little different.)
- Make sure to keep the tip of the wand toward the side of the container. This will create a vortex with the milk.
- Move the container higher, lower, closer, then further so that the steam wand can incorporate the air into the milk, making the foam. The bubbles should get smaller and smaller as you do this.
- Once the milk has foamed to double its size, turn the steam wand off.
- Top the espresso with foamed milk right after foaming. When initially poured, cappuccino is only espresso and foam, but the liquid milk quickly settles out of the foam to create the (roughly) equal parts foam, steamed milk, and espresso for which cappuccino is known.

- 1. Preheat the oven to 350 degrees.
- 2. Cook the chopped bacon in a pot over medium heat until browned (about 10 minutes).
- 3. Remove the bacon with a slotted spoon, reserving the bacon grease in the pan. Drain the bacon on paper towels.
- 4. Add the chopped onions to the pot with the bacon grease and cook for 15 minutes over medium-low heat, or until caramelized.
- 5. Remove the pot from the heat. Add the bacon back to the pot as well as the remaining ingredients.
- 6. Stir it all together.
- 7. Pour the beans into a greased 8" baking dish and bake at 350 degrees for 2 hours.
- 8. Remove the beans from the oven and let sit for 5 minutes before serving.

- Preheat the oven to 190C/375°F Put the beans in a large bowl and mash lightly with a fork. Add the eggs and cheese and whisk with the fork until combined.
- Put 2 tablespoons of the oil in a small skillet over medium-high heat. When the oil is hot, stir in the onion and garlic and cook, stirring frequently until they are soft and golden. Stir in the rosemary and remove from the heat.
- Put the flour, baking powder, and a sprinkling of salt and pepper into the bowl with the beans. Add the onion mixture and stir with the fork until just combined. It should be like thick cookie dough - add more flour if necessary.
- Use the remaining oil to grease a baking sheet. Use a large spoon or your hands to form the bean mixture into 8 bean cakes and put them on the prepared pan. Bake until golden and crisp, about 30 minutes and serve hot.

- Cover the beans with cold water, add the onion, carrot and herbs. Bring to the boil and cook for 10 minutes, then reduce the heat and simmer for about 30 minutes until tender.
- Remove 3-4 tbsp of the nearly cooked beans and set aside for serving. Continue to cook the rest for another 10-20 minutes or so until very soft, topping up with more boiling water if necessary. Drain and discard the vegetables and herbs. Place the beans in a food processor and whizz to a purée until creamy. It may be easier to purée half at a time, ladling in some of the stock to slacken the mixture and get it going. Stop the machine after 2-3 minutes, scrape down with a spatula, correct the seasoning, add a bit more stock and buzz again. The longer you leave it puréeing, the smoother it will become; 4-5 minutes should do it. Return to the same pan. Stir in the stock and seasoning, bring to the boil then simmer for 5 minutes.
- Brush the mushrooms to remove any soil then slice down them for the best shape, but not too thinly or they will shrivel when cooking. Heat a non-stick pan until quite hot, add the oil, then the mushrooms, and sauté until they start to colour. Now add the 25g/1oz of butter and continue to sauté until just cooked. Keep the heat in the pan high, as you want to roast rather than boil them. Season and drain.
- Rub the soup through a fine sieve with the back of a ladle for a fine velvety texture. Return to the pan and stir in the cream. As the mixture almost comes to the boil, add the truffle oil, if using. (If you add the oil when the mixture is cold, it may split.)
- When ready to serve, divide the reserved beans (they don't need re-heating) and mushrooms between warmed soup cups. Add the knob of butter to the near-boiling soup then froth with a hand blender (do this for 4-5 minutes to get it really light) then slowly pour the soup into the cups from a ladle to three quarters full, wiping the ladle over the edge of the pan so the soup doesn't drip. Hold back the froth in the pan then scoop that on top of the cups to serve.

HARISSA AND WHITE BEAN CHILI
The key to achieving depth of flavor in this fresh, nontraditional, 30-minute chili recipe is layering ingredients with bold condiments that do most of the work for you. Here, soy sauce and harissa are used to provide umami, spice and heat. Finish the chili as you'd like, topping it with all of the suggestions below, or skipping the yogurt and feta to keep it vegan. The chili will thicken as it sits, so add a little water when reheating. If you don't like tomato skins or don't want to buy fresh tomatoes, substitute 2 tablespoons of tomato paste for the tomatoes, adding it with the harissa. - In a Dutch oven or large pot, heat the oil over medium-high until shimmering. Add the onion, bell pepper and diced jalapeño, and season with salt. Cook, stirring occasionally, until the onions just start to soften in color and texture, about 3 minutes. Add the tomatoes, season lightly with salt and cook, stirring occasionally, until most of the tomatoes have burst, 6 to 7 minutes, lowering the heat if the onions threaten to burn. Stir in the harissa, cumin, oregano and garlic, and cook until fragrant, about 1 minute. Stir in the soy sauce, scraping up anything on the bottom of the pot, until combined, about 1 minute.
- Add the white beans and broth, season with salt, and raise the heat to bring it to a gentle boil. Adjust the heat to maintain a simmer, then cook until the broth thickens and the beans become soft and creamy, stirring occasionally to make sure nothing is sticking to the bottom, about 12 to 15 minutes. Smash any remaining whole tomatoes against the side of the pot. Stir in the spinach in batches until wilted. Squeeze in the lime halves, and season to taste with salt and pepper.
- Divide among bowls and top each with a spoonful of yogurt, followed by the avocado, cilantro, feta and jalapeño rounds. Serve with the lime wedges.

For a cappuccino with a foamy head, hold back the foam with a spoon and gently pour the milk over the espresso. Spoon the foam over the top.
