Steps:

  • Place milk in a 1-cup microwave-safe measuring cup. Microwave, uncovered, on high for 1 minute or until milk is hot and small bubbles form around edge of cup., Place a metal whisk in cup; whisk vigorously by holding whisk handle loosely between palms and quickly rubbing hands back and forth. Remove foam to a small measuring cup as it forms. Continue whisking until foam measures 1/3 cup; set aside., Pour Easy Espresso into a mug; pour in remaining hot milk. Spoon foam over top and serve immediately.

15 whole cinnamon graham crackers
2 packages (8 ounces each) cream cheese, softened
3 packages (3.9 ounces each ) instant chocolate pudding mix
2 tablespoons instant coffee granules
1 teaspoon ground cinnamon, divided
2-1/2 cups 2% milk
1 cup cold strong brewed coffee
8 cups sweetened whipped cream
3 tablespoons chocolate sprinkles

Steps:

  • Arrange half of the crackers in a greased 13x9-in. baking dish (breaking crackers to fit). In a large bowl, beat cream cheese, pudding mix, coffee granules and 1/4 teaspoon cinnamon until blended. Gradually beat in milk and coffee until smooth. Fold in 4 cups whipped cream., Spread half of the filling mixture over the crackers. Repeat layers. Top with remaining whipped cream. Refrigerate, covered, 8 hours or overnight. Just before serving, top with sprinkles and remaining cinnamon.

40 gr ( 2 1/2 tbsp) Caster Sugar ((see note 1))
4 Eggs
200 ml ( 3/4 cup + 2tbsp) Heavy Cream (Thickened Cream)
3 tbsp Instant Coffee Powder (or Espresso Powder)
1 tbsp Unsweetened Cacao Powder (optional (see note 3))
1 teasp. Gelatine Powder (with 3 teasp. of water)
1 tbsp Instant Coffee Powder & Cacao Powder, mixed (optional, to finish the mousse)

Steps:

  • Seperate the Egg Yolks and Whites. Place the Egg Yolks in a large bowl and the Whites in the bowl of you Mixer. Set aside.
  • Place the Gelatine Powder in a small bowl with the Cold water, mix and set aside to soak. (see note 2 if using Gelatine Sheet).
  • Add the Caster Sugar to the Egg Yolks and whisk until foamy and lighter in colour.
  • Place the Heavy Cream, Instant Coffee Powder and Cacao Powder in a small saucepan and heat it up on low heat until the powders have dissolved, occasionally stirring. Don't let the cream boil.
  • Pour the hot Heavy Cream over the Egg Yolk and Sugar while beating. Whisk well, then transfer back into the saucepan on low heat. Keep whisking until the cream starts to thicken, then directly remove from the heat and transfer back into a large, clean bowl.
  • Add the re-hydrated Gelatine to the cream and whisk well until completely integrated. Set aside to cool down fully.
  • While the cream is cooling down, start whipping the Egg Whites to get stiff peaks.
  • When the cream is cool, gently fold in the Whipped Egg Whites in 3 to 4 times. Try not to overwork the cream.
  • Pour the Coffee Mousse into individual cups or jars and place in the fridge to set for at least 2 hours.
  • Optional: when ready to serve, sprinkle some Instant Coffee Powder and Cacao Powder over the mousses to finish them.

3 sheets frozen phyllo dough, thawed
2 tablespoons unsalted butter, melted
2 tablespoons sugar
1 tablespoon instant espresso powder
1 cup cold heavy cream
2 tablespoons sweetened condensed milk
1/4 teaspoon ground cardamom or cinnamon
Coarse salt
1/2 teaspoon unsweetened cocoa powder

Steps:

  • Preheat oven to 325 degrees. Lay 1 sheet phyllo on a work surface (cover remaining sheets with a lightly damp towel). Brush phyllo with one-third the butter and sprinkle with one-third the sugar. Repeat layering twice more with remaining phyllo, butter, and sugar. Cut stacked phyllo into 6 equal pieces and gently press each square into a cup of a standard muffin pan, crimping edges as needed so phyllo sits flat in bottom of cup.
  • Bake until phyllo is golden brown, about 20 minutes, rotating pan halfway through. Let cool completely in pan on a wire rack.
  • Meanwhile, in a medium bowl, combine espresso powder with a small amount cream and stir until powder dissolves. Stir in remaining cream, condensed milk, cardamom, and pinch of salt. Whisk until firm but not dry peaks form. Refrigerate until ready to serve (up to 2 days). Fill phyllo cups with cappuccino cream and sprinkle with cocoa powder. Serve immediately.

Cappuccino is equal parts espresso, steamed and foamed milk, and is a favorite drink for many coffee lovers. This recipe shows you how it's done.

2 shots espresso (a double shot)
4 ounces milk

Steps:

  • Gather the ingredients.
  • Place the water into the boiler of your espresso machine.
  • Place the 2 tablespoons (2 shots) of ground coffee into the portafilter.
  • Tamp (press) the coffee down using a tamper. Do this 2 to 3 times to make sure the grounds are packed tightly.
  • Place the portafilter into your espresso machine's group head and lock it in place by turning it to the right.
  • Place a demitasse cup or the glass carafe that came with your espresso machine under the group head and pull the shot for 23 to 30 seconds, or until 2 ounces of espresso is yielded. Typically, there is a lever, switch, or button to start this process.
  • Once the shot is pulled, foam the milk.
  • Place the milk into either a glass measuring cup or a small metal pitcher.
  • Insert the steam wand into the container with the milk, just under the surface of the milk.
  • Engage the steam wand on your espresso machine. (You may need to read your espresso machine's manual for this, as each espresso maker is a little different.)
  • Make sure to keep the tip of the wand toward the side of the container. This will create a vortex with the milk.
  • Move the container higher, lower, closer, then further so that the steam wand can incorporate the air into the milk, making the foam. The bubbles should get smaller and smaller as you do this.
  • Once the milk has foamed to double its size, turn the steam wand off.
  • Top the espresso with foamed milk right after foaming. When initially poured, cappuccino is only espresso and foam, but the liquid milk quickly settles out of the foam to create the (roughly) equal parts foam, steamed milk, and espresso for which cappuccino is known.

1 pound non-tempering chocolate, coarsely chopped
20 chocolate pastilles (small, chocolate disks in candy-making shops)
Cognac Caramel Ganache, recipe follows
Coffee Ganache, recipe follows
White Chocolate Ganache, recipe follows
Cocoa powder, for garnish

Steps:

  • Place the non-tempering chocolate in the top of a double boiler over hot, but not quite simmering, water. Melt the chocolate, stirring until it is smooth. Remove the boiler from the heat. Pour the chocolate into 1/2-inch circular molds and prepare the molds as directed on the chocolate packaging (reserve some melted chocolate for making the handle as directed below). Once hardened, pop the cups out of the mold.
  • To make the handle of the coffee cup, put some melted chocolate in a pastry bag. Using a fine-point tip, pipe out a "C" for each mug on a piece of waxed paper. Allow the chocolate to harden.
  • Using a fine point tip, pipe out a dollop of melted chocolate onto each pastille and place a cup on each to glue them together, making a coffee cup shape. Do the same for each handle and allow to harden.
  • Place the 3 ganaches in 3 different pasty bags. Using a circular motion, pipe 1/3 of the Cognac Caramel Ganache in the bottom of each mug. Next, pipe the Coffee Ganache up to the top of the mug. Then, pipe the White Chocolate Ganache on top. Dust each cup lightly with cocoa powder and serve.
  • 1/4 cup water
  • 1 1/2 tablespoons corn syrup
  • 2/3 cup sugar
  • 1/2 cup heavy cream
  • 2 tablespoons Cognac
  • Heat a medium saucepan over high heat. Add the water, corn syrup, and sugar and bring the mixture to a boil. Do not stir the mixture once the sugar begins to boil. When the sugar begins to caramelize on the sides, remove the pan from the heat and slowly stir until the color is a medium brown. Carefully add the heavy cream and stir; then add the cognac and stir until well blended. Store the ganache at room temperature until ready to use.
  • 1/2 cup heavy cream
  • 1 tablespoon instant coffee
  • 1 cup chopped white chocolate
  • 1 tablespoon coffee liqueur
  • 1/2 teaspoon coffee extract
  • Heat a medium saucepan over medium-high heat. Add the heavy cream and instant coffee and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate and stir. Add the coffee liqueur and stir well; then add the coffee extract and stir until it is blended. If you need to melt the chocolate more, use a double boiler (as described above).
  • 1/2 cup heavy cream
  • 3/4 cup chopped white chocolate
  • Heat a medium saucepan over medium-high heat. Add the heavy cream and slowly bring to a simmer. Put the white chocolate in a bowl and pour the hot cream over the chocolate, stirring until it is melted.

18g ground espresso (or 1 espresso pod)
150ml milk
cocoa powder (optional)
the right cup , 200-250ml capacity

Steps:

  • Make around 35ml espresso using a coffee machine and pour it into the base of your cup.
  • Steam the milk with the steamer attachment so that it has around 4-6cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming to pour into the centre. Once the milk jug is almost touching the surface of the coffee, tilt the jug to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top. Dust the surface with a little cocoa powder if you like.

1/3 cup instant coffee
2 tablespoons hot water
1 (18.25-ounce) box yellow cake mix
1 1/4 cups milk
1/3 cup vegetable oil
3 eggs
1 tablespoon cocoa powder
1 teaspoon vanilla extract
1 (12-ounce) tub whipped topping
Ground cinnamon, for dusting
8 cinnamon sticks

Steps:

  • Preheat oven to 350 degrees F. Grease 10 coffee mugs with nonstick spray.
  • In a small bowl combine instant coffee and 2 tablespoons hot water. Mix and set aside.
  • In a large bowl combine cake mix, milk, oil, eggs and half the coffee. Mix until blended. Reserve 1/2 cup of the cake batter. Fill coffee mugs 2/3 of the way with cake batter. In small bowl combine remaining coffee, cocoa powder and reserved cake mix and mix well. Add 1 tablespoon of the mixture to each mug and swirl into batter with a toothpick or skewer.
  • Place mugs on a baking sheet. Bake for 20 to 25 minutes or until a toothpick inserted into the center of the cakes come out clean. Allow to cool.
  • Mix vanilla extract together with whipped topping. Place a dollop of the topping onto each cake. Dust topping with ground cinnamon and insert the cinnamon sticks into the cakes.

12 chocolate wafers (i think we used graham wafers)
1 1/2 cups half-and-half or 1 1/2 cups milk
1/4 cup strong brewed coffee
1 (3 1/2 ounce) package instant vanilla pudding
1/4 teaspoon ground cinnamon
2 (170 g) envelopes Dream Whip
150 g semisweet chocolate, melted (or use equivelent amt of choc chips, melted)

Steps:

  • Place 1 wafer in bottome of each paper-lined muffin cup.
  • Combine cream, coffee, pudding and cinnamon.
  • Beat with whisk a/b 2 minutes Let stand 5 mins or until slightly thickened.
  • Fold in 3 1/2c prepared dream whip (according to pkg directions).
  • Spoon into muffin cups.
  • Freeze until firm, a/b 6hrs.
  • To serve: remove desserts from paper cups.
  • Place on individual dessert plates.
  • Drizzle with melted chocolate and top each with remaining dream whip.
  • It can be made up to a month ahead and stored in the freezer.
  • Cook time is time in the freezer.
