CAPPUCCINO CUPCAKES

Steps:
- Preheat the oven to 180°C and line a 12-hole (2 tablespoon capacity) flat-based cupcake or patty pan with paper cases.
- Dissolve the coffee in 1 tablespoon of hot water in a small jug and stir in the butter.
- Using an electric hand mixer, beat the egg and sugar in a medium-sized bowl until pale and thick; sift the flours together over the egg mixture and using a large metal spoon, gently fold in until just combined; gently stir in the coffee mixture and the grated chocolate.
- Half fill each paper case with the mixture and bake for 15-18 minutes or until a skewer inserted into the centre of one of the cupcakes comes out clean.
- Leave the cupcakes standing in the pan for 10 minutes, then transfer them to a wire rack to cool.
- Using an electric mixer, beat the cream until it is thick; sift the drinking chocolate and cocoa over the cream and fold it through the cream to create a marbled effect; spoon the cream mixture over the cupcakes, dust with extra cocoa and top each cupcake with a chocolate-coated coffee bean.

Steps:
- Heat oven to 350°F.
- Line 12 muffin cups (standard size).
- In bowl, mix together flour, baking powder, allspice, cinnamon and salt.
- Beat butter and sugar about 2 minutes until light colored and smooth.
- Add eggs one at a time, beating well after each egg.
- On low speed, add flour mixture, alternating with brewed coffee.
- Fill each muffin cup with 1/3 cup each.
- Bake at 350°F for 25 minutes, or firm to the touch.
- Let cupcakes cool in pan on wire rack for 5 minutes, and then remove from pan and let cool completely.
- While cooling cupcakes, in a small bowl combine instant coffee, vanilla and 1 tsp of warm water.
- Stir until coffee is dissolved.
- Stir in vanilla frosting until blended and no streaks remain.
- Frost cupcakes.

- Preheat oven to 350ºF.
- Mix flour, powder, and salt together and set aside.
- Cream butter and sugar till light and fluffy in mixer.
- Add eggs, one at a time, mixing well after each addition. Add coffee extract.
- Alternately add dry ingredients and half and half, beating till smooth.
- Pour into prepared tins and bake 25 minutes or till tester comes out clean.
- Cool completely. Frost with cream cheese-mascarpone frosting and dust with cinnamon.

- With an electric mixer, beat the butter and mascarpone cheese together until fluffy.
- Add the vanilla paste and the sugar incrementally, until fully incorporated.

ULTIMATE CAPPUCCINO CHEESECAKE

- Heat oven to 325°F.
- Wrap bottom and sides of 9-inch springform pan with wide heavy-duty foil.
- Place the crackers into a sealable plastic bag and use a rolling pin to crush them or use a food processor to do the crushing. Crush the crackers into evenly ground crumbs. In medium bowl, stir together crumbs, sugar, 1 tsp cinnamon and melted butter until crumbs are evenly moistened. Press evenly into bottom and 1 inch up sides of pan. Bake 8-10 minutes or until set; cool on wire rack.
- In large bowl, beat cream cheese, mascarpone cheese and sugar at low speed 2 minutes or until smooth. Beat in flour. Beat in 4 of the egg whites just until combined; repeat with remaining 4 egg whites. Scrape down sides of bowl. Beat in vanilla just until blended.
- Reserve 2 cups batter in another medium bowl. In small bowl, combine coffee in 3 tablespoons of the heavy cream; stir into reserved batter.
- Stir remaining 1 tablespoon heavy cream and 2 teaspoons cinnamon into batter in large bowl until completely blended; pour into crust. Place pan in large shallow roasting or broiler pan. Fill with enough hot tap water to come halfway up sides of springform pan.
- Bake 40 minutes. Carefully slide out oven rack several inches. Pour reserved coffee batter evenly over cheesecake. Bake additional 35 minutes or until edges are slightly puffed and top is dry to the touch. Center should move slightly when pan is tapped. Turn oven off and let cake sit in oven with door ajar and cool for 30 minutes. Remove cake from water bath; remove foil. Place on wire rack; continue to cool to room temperature, about 2 hours. Refrigerate at least 6 hours before serving.

- Tightly wrap the outside of a 9-inch diameter springform pan with 2 3/4-inch-high sides with 3 layers of heavy-duty foil. Finely grind the almonds, cracker crumbs, and sugar in a food processor. Add the butter and process until moist crumbs form. Press the almond mixture onto the bottom of the prepared pan (not on the sides of the pan). Bake the crust until it is set and beginning to brown, about 12 minutes. Cool. Decrease the oven temperature to 325 degrees F.
- For the filling: Using an electric mixer, beat the cream cheese, mascarpone cheese, and sugar in a large bowl until smooth, occasionally scraping down the sides of the bowl with a rubber spatula. Beat in the lemon juice and vanilla. Add the eggs, 1 at a time, beating just until blended after each addition.
- Pour the cheese mixture over the crust in the pan. Place the springform pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. Bake until the center of the cheesecake moves slightly when the pan is gently shaken, about 1 hour 5 minutes (the cake will become firm when it is cold). Transfer the cake to a rack; cool for 1 hour. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days.
- *Prep time does not include time for butter, cream cheese or eggs to come to room temperature.
