1/2 cup hot water
6 tablespoons instant espresso coffee powder or granules
1 cup plus 2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup sugar
1/4 cup butter or margarine, softened
2 eggs
2 tablespoons coffee-flavored liqueur
1/4 cup buttermilk
2 containers (12 oz each) Betty Crocker™ Whipped milk chocolate frosting
50 paper lollipop sticks
2 blocks white plastic foam
1/2 cup Betty Crocker™ Whipped fluffy white frosting (from 12-oz container)
50 chocolate-covered coffee beans (about 1 cup)
2 tablespoons unsweetened baking cocoa

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 8-inch square pan with shortening; lightly flour.
  • In small bowl, stir hot water and coffee powder until coffee is dissolved; set aside. In medium bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat sugar and butter with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time, just until blended. Beat in liqueur and coffee mixture. On low speed, alternately add flour mixture and buttermilk, beating just until blended after each addition. Pour into pan.
  • Bake 28 to 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 45 minutes.
  • Line cookie sheet with waxed paper. With fingers, crumble cake into large bowl. Add 1/2 cup of the chocolate frosting; mix well with spoon. Roll cake mixture into 1-inch balls; place on cookie sheet. Freeze about 30 minutes or until firm; when firm, transfer to refrigerator.
  • In medium microwavable bowl, microwave remaining chocolate frosting uncovered on Medium (50%) 30 seconds or until melted; stir until smooth. Remove several cake balls from refrigerator at a time. For each pop, dip tip of 1 lollipop stick about 1/2 inch into melted frosting and insert stick into 1 cake ball no more than halfway. Dip cake ball into melted frosting to cover; tap off any excess. Poke opposite end of stick into foam block. Let stand until set.
  • In small microwavable bowl, microwave white frosting uncovered on Medium (50%) 10 to 20 seconds or until melted; stir until smooth. Spoon 1/2 teaspoon frosting on top of each cake pop, letting it drip down side slightly. Immediately top with coffee bean. Let stand until set. Sprinkle lightly with cocoa. Store loosely covered in refrigerator.

These fun cake pops are easy to make and great for parties. Kids and adults will love these colourful chocolate-covered bites

100g butter
100g caster sugar
½ tsp vanilla extract
2 eggs
100g self-raising flour
75g butter
150g icing sugar
½ tsp vanilla extract
1 tbsp milk
200g white chocolate, melted, to dip
sprinkles, to dip

Steps:

  • First make the cake. Heat oven to 190C/170C fan/gas 5. Grease and line the base of a 20cm sandwich tin. Place the butter, sugar and vanilla extract into a bowl and beat well to a creamy consistency. Slowly beat in the eggs, one by one, then fold in the flour and mix well. Tip into the cake tin and bake for about 20 mins until risen and golden brown. Set aside to cool completely.
  • While the cakes are cooling, make the buttercream. In a large bowl or the bowl of stand mixer, beat the butter and icing sugar together until smooth, add the vanilla extract and milk and beat again. Once the cake is cooled, crumble into large crumbs. Add the butter cream and stir together. Take chunks of the cake mixture and roll into balls, transferring each ball to a lined tray or plate, push a lollypop stick into each, then put into the fridge for an hour to set.
  • Melt the white chocolate in the microwave, blasting it and stirring at 10 seconds intervals until smooth. Tip the sprinkles into another bowl. Take each of the chilled cake pops and dip into the white chocolate, allowing it to drip off a little over the bowl. Dip into the sprinkles, then stand upright in a mug to dry at room temperature for an hour, or in the fridge for 30 mins.

1 (18.25 ounce) package white cake mix
¼ cup instant cappuccino coffee powder
1 tablespoon vegetable oil
3 egg whites
1 ¼ cups water
1 cup shortening
1 ½ teaspoons vanilla extract
4 ½ cups confectioners' sugar
4 tablespoons milk
¾ cup unsweetened cocoa powder
1 tablespoon instant coffee powder
1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch cake pans.
  • In a large bowl, combine cake mix and 1/4 cup cappuccino. Pour in 1 1/4 cups water, 3 egg whites and 1 tablespoon oil. Mix well, then pour batter into prepared pans.
  • Bake in preheated oven according to package directions until a toothpick inserted into center of cake comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks and cool completely.
  • To make the Mocha Frosting: In a large bowl, combine shortening with vanilla. Blend in half of the confectioners' sugar. Blend in 2 tablespoons milk. Repeat with remaining confectioners' sugar and 2 tablespoons milk. Mix in approximately half of the cocoa.
  • Dissolve the 1 tablespoon instant coffee into 1 cup of hot water. While still warm, pour two tablespoons of the coffee into the frosting mixture. Mix in remaining cocoa. Add coffee mixture, a tablespoon at a time, until desired consistency is achieved. Fill and frost cake.

1 box Betty Crocker™ Super Moist™ triple chocolate fudge cake mix

1 bag (14 oz) red candy melts or coating wafers
1 bag (14 oz) white candy melts or coating wafers
1 teaspoon shortening
40 paper lollipop sticks
Betty Crocker™ Decorating Decors candy sprinkles
Betty Crocker™ red sugar
1 large block white plastic foam

Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan with shortening or cooking spray. In small bowl, mix coffee powder and water until dissolved. Make and bake cake mix as directed on box, using oil and eggs and substituting coffee mixture for water. Cool completely in pan on cooling rack.
  • Line cookie sheet with waxed paper. With fingers, crumble cake into large bowl. Add frosting; mix well with hands until dough forms. Roll tablespoonfuls of dough into firm balls; place on cookie sheet. Freeze about 15 minutes.
  • In microwavable bowl, microwave red candy melts as directed on bag. Stir in 1/2 teaspoon of the shortening until smooth and mixture slightly runs off spoon. Repeat with white candy melts and remaining 1/2 teaspoon shortening.
  • Remove cake balls from freezer. For each pop, dip tip of 1 lollipop stick halfway into melted candy and insert stick halfway into 1 cake ball. Place on lined cookie sheet until all sticks are attached. Dip balls in red or white melted candy until well coated; tap off any excess. Decorate with sprinkles, red sugar or opposite color of coating, as desired. Poke ends of sticks into foam block. Let stand until set. Store at room temperature.

250g pack butter , softened
250g light soft brown sugar plus 2-3 tbsp
300g self-raising flour
4 eggs , beaten
50g walnuts , toasted and finely chopped (a food processor is easiest), optional
200ml very strong coffee (made fresh or with instant), cooled
500g tub mascarpone
2 tbsp light soft brown sugar
cocoa powder or drinking chocolate to decorate

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter 2 x 20cm sandwich tins and line the bottoms with greaseproof paper. Beat butter and sugar together with electric beaters until pale and creamy. Add the fl our and eggs in one go and keep beating until evenly mixed. Fold in the walnuts (if using) and half of the coffee. Spoon the mix into the prepared tins and bake for 25-30 mins or until golden and well risen.
  • Leave the cakes in their tins for 5 mins before turning onto a wire rack. Sweeten the remaining coffee with the extra sugar and sprinkle 4 tbsp over the sponges. Leave to cool completely.
  • While the cakes cool, make the frosting. Tip the mascarpone into a large bowl and beat in the sugar and remaining coffee until smooth and creamy. Use about half of the frosting to sandwich the sponges together then, using a palette or cutlery knife, spread the rest of the frosting over the top of the cake. Decorate with a dusting of cocoa powder or drinking chocolate. If you're making this cake to eat at home, it will keep covered in the fridge for 2-3 days.

4 eggs
1 cup sugar
1 cup all-purpose flour
1 tsp baking powder
1 tbsp strongly brewed coffee (cooled)
1 tbsp cocoa powder
1 tbsp cappuccino powder (or any flavored hot cocoa mix)
2 cups heavy whipping cream
2 tbsp whipped cream cheese
1/3 cup condensed milk
1/3 cup sour cream
2 tbsp strongly brewed coffee (cooled)
1 tbsp cappuccino powder
1 packet of unflavored gelatin
1/4 cup warm water
1/4 cup raisins (optional)
chocolate ganache (topping)
1/4 cup apple juice (for soaking)
1/4 cup water (for soaking)

Steps:

  • TO MAKE CAKE LAYERS: Preheat oven 350 degrees F. Grease and flour two (or 4) 8-inch cake pans and set aside.
  • Beat four eggs and 1 cup of sugar in the bowl a stand mixer over high speed for 20 minutes until pale and doubled in volume.
  • Meanwhile sift together the flour and baking powder and fold into the beaten eggs.
  • Divide the batter into four equal portions. (Batter makes 4 cups; so divide each part by 1 cup of batter.) Add 1 tbsp of cocoa to one portion, 1 tbsp of cappuccino powder to another portion, strong coffee to a third portion and leave one portion plain as is.
  • Fold in the mixtures and spread each mixture evenly into an 8-inch cake pan. Bake each layer in a preheated oven for 22 minutes or until done. Cool completely before frosting.
  • TO MAKE FROSTING: In a large bowl, beat the whipping cream until soft peaks form.
  • Add the condensed milk and whipped cream cheese and continue to beat until thick and creamy.
  • Next, add in the sour cream, coffee, and cappuccino powder and beat until well combined.
  • In a separate small bowl, stir together the gelatin and warm water and quickly whisk together to dissolve most of the granules. Immediately add the gelatin mixture to the frosting with the mixer running and beat until combined. (Frosting will slightly thin out after the addition of the gelatin but no worries it will stiffen up nicely creating an incredible mousse.)
  • TO ASSEMBLE CAKE: Dilute the apple juice with water and soak each layer with a few tbsp of the apple juice mixture.
  • Invert one layer onto a serving plate. Frost and sprinkle with raisins and repeat likewise with remaining layers. Frost the sides and top.
  • Drizzle top of the cake with cool ganache and keep refrigerated.
